Never had a complaint. The broth comes out like soup and here it is an old remedy for what ever ails you.

1 quart chicken stock
3 small ham hocks
1 large onion, chopped
4 cloves garlic, minced
1 tablespoon crushed red pepper flakes
3 tablespoons cider vinegar
¼ teaspoon black pepper
water
1 bunch collard greens - rinsed, trimmed and chopped
salt to taste
hot pepper sauce to taste

Steps:

  • Pour chicken stock into a large pot, and add ham hocks onion, garlic, red pepper flakes, vinegar, black pepper, and enough water to cover ham hocks. Bring to a boil; reduce heat, and simmer for 1 to 2 hours to create the broth.
  • Remove ham hocks from broth. Pull meat from hocks. Add meat and collard greens to the broth. Simmer for 1 to 5 hours, depending on the texture you prefer. Salt to taste, and serve with hot sauce.

QUICK COLLARD GREENS



Quick Collard Greens image

These collard greens are quickly cooked in olive oil and finished with a squeeze of lemon juice. You're going to love these healthy, vegetarian collards! Recipe yields 2 side servings. To make multiples, simply repeat the ingredients and instructions below (cook each batch separately for best results).

1 large bunch (about 10 ounces) collard greens
1 1/2 tablespoons extra-virgin olive oil
1/4 teaspoon fine sea salt
2 medium cloves garlic, pressed or minced
Pinch of red pepper flakes (optional, scale back or omit if sensitive to spice)
A couple lemon wedges, for serving

Steps:

  • To prepare the collards: Cut out the thick center rib out of each collard green. Stack the rib-less greens and roll them up into a cigar-like shape. Slice over the "cigar" as thinly as possible (⅛″ to ¼″) to make long strands. Shake up the greens and give them a few chops so the strands aren't so long.
  • Heat a large, heavy-bottomed skillet over medium-high heat, then add the olive oil. Once the oil is shimmering, add all of the collard greens and the salt.
  • Stir until all of the greens are lightly coated in oil, then let them cook for about 30 seconds before stirring again. Continue stirring in 30-second intervals until the greens are wilted, dark green, and some are starting to turn browns on the edges (this is delicious). This will take between 3 to 6 minutes.
  • Once the collards are just about done, add the garlic and red pepper flakes (if using). Stir to break up the garlic and cook until it's fragrant, about 30 seconds. Remove the pan from the heat.
  • Immediately divide the cooked collards onto plates, and serve with a lemon wedge each.

The hubbie makes these and they are sooooo good. You can substitute olive oil for the butter and they'll be vegan.

1 bunch collard greens (big bunch)
3 tablespoons butter
2 garlic cloves, minced
1 teaspoon italian seasoning
1 tablespoon sugar
1/4 teaspoon vinegar
1/2 teaspoon red pepper flakes
1 (14 ounce) can stewed tomatoes
1/4 teaspoon fresh ground pepper

Steps:

  • Chop the collard greens, stems and all, into bite sized pieces.
  • Bring a big pot of salted water to a boil. Pour in the collards and boil for 18 to 20 minutes.
  • Meanwhile prepare the sauce.
  • Melt butter in a saucepan over medium heat.
  • Add the garlic and saute for 2 minutes.
  • Add the rest of the ingredients and bring to a simmer.
  • Once the greens are done drain them and return them to the pot.
  • Pour the sauce over them and keep warm until you're ready to serve.

1 gallon chicken stock
3 cups apple juice
1 cup small diced yellow onion
1 tablespoon Cajun seasoning
6 slices hickory smoked bacon, diced
4 heads collard greens, rinsed
3 pounds peeled potatoes, medium dice
1/2 cup all-purpose flour
4 ounces unsalted butter
1 tablespoon salt
1 teaspoon white pepper
1/4 cup grapeseed or vegetable oil

Steps:

  • For the collards: Add the stock, apple juice, onions, Cajun seasoning, bacon and collard greens in a large pot. Bring to a boil over high heat, then reduce the heat to medium and simmer for 1 hour. Then remove from the heat and drain the liquid from the pot, and allow the collards to cool.
  • For the potatoes: In a large pot bring 1 gallon of water to a boil, then add the potatoes and cook until softened, 15 to 18 minutes. Then drain. Press the potatoes, half of the flour and the butter through a food mill or ricer into a bowl. Next add the salt and white pepper, then blend with a whisk. Taste and add additional seasoning if needed.
  • To create the cakes, blend the potatoes with the collards in a bowl. Portion into 6-ounce cakes, about 4-inch rounds. To cook, heat a pan over medium-high heat, then add the oil. Dust the cakes with some of the remaining flour. Place the cakes in the pan and cook until browned, 3 minutes. Then flip and repeat process on second side, 2 to 3 minutes. Remove from the pan and serve.

2 bunches collard or kale greens, about 2 pounds
3 tablespoons olive oil
4 garlic cloves, whole
2 quarts chicken broth
1 tablespoon vinegar
Kosher salt and freshly ground black pepper

Steps:

  • To prepare the greens: cut away the tough stalks and stems from the collards and discard any leaves that are bruised or yellow. Fill the sink with water and salt, the salt helps to remove any impurities. Wash the collards thoroughly to remove the grit, 2 or 3 times, until the water runs clear. Dry thoroughly. Stack up several leaves and roll up lengthwise in a bundle, cut them into 1-inch ribbons. Repeat until all the leaves are shredded.
  • Heat a large deep skillet over medium flame and coat with the oil. Add the garlic and saute for 2 minutes to soften. Add the greens and toss well with the oil and garlic. Pour in the chicken broth and cook for 45 minutes to 1 hour until the greens are wilted and tender; take care not to overcook. Season with salt and pepper and serve.

2 pounds fresh ham hocks
½ pound salt pork
3 quarts chicken stock
1 cup chopped onion
2 bay leaves
¼ teaspoon red pepper flakes

salt and freshly ground black pepper to taste
2 teaspoons red wine vinegar

Steps:

  • Place ham hocks, salt pork, onion, bay leaves, red pepper flakes, and sugar in a large pot with the chicken stock. Bring to a boil, reduce heat to simmer, and cook for 30 minutes.
  • Stir collard greens into the pot, and bring to a boil. Reduce heat to simmer, and cook for 30 minutes, or until greens are tender. Season with red wine vinegar and salt and pepper to taste.

This is my own recipe for collard greens. Once I made them this way my husband won't let me cook them any other way. People who don't typically like greens like these. It is also good with turnips and mustards. I add some of the turnip root if I use turnips.

2 bay leaves
1 diced onion
2 smoked ham hocks (or shanks)
4 -6 bunches collard greens (or other greens)

Steps:

  • Heat broth.
  • Add remaining ingredients.
  • If there is not enough broth to cover greens, add more.
  • Bring to a boil, then reduce heat& simmer for about 3 hours.
  • Remove bay leaves.
