FRIED CRISPY OKRA FRIES(LADIES FINGER, VEGETARIAN, VEGAN)

Ladies fingers are also known as okra. For this vegetarian recipe, the fresh okra are split in the middle and mixed with a simple seasoning of three ingredients and then deep-fried until they are crispy. Serve this easy fried okra recipe as a vegetarian, vegan side-dish.

250g of fresh okra split in the middle.
1/4 cup semolina
1/8 teaspoon turmeric(a pinch)
1/2 teaspoon of red chilies powder(use as needed but not more than 1/2 teaspoon)

Steps:

  • In a bowl, mix semolina(1/4 cup), turmeric(1/8 teaspoon or a pinch), red chilli powder(1/2 teaspoon), salt. Combine well. Wash the ladies fingers and pat them dry. Slit them in two and place them in a large tray. You can also do this on your cutting board but be aware that wooden cutting boards may stain because of the turmeric powder. Add the seasoning mixture to the okra, toss until well combined. As you do this you can also stuff the mixture into the cavity of the okra. Don't overthink the process of stuffing the okra with the seasoning mixture, just use your fingers to add any leftover mixture into it. Once the ladies fingers are prepared and ready to fry. Place a deep frying pan over the stove and pour in the oil. Gently bring the oil to low medium heat. Add a little seasoning to check if the semolina pieces sizzle and float, if so, the oil is ready to fry. Maintain this heat by regulating the stove temp. Fry the okra chips in small batches. This should take about 3-5 minutes. You need to fry the okra until they are crispy. Once done, place them on some kitchen towels to drain excess oil. Serve with some lime wedges.

This recipe is like any other okra recipe, except that the roasted cumin and fennel seeds give it an aromatic burst that puts it in a class apart.

250 gm okra ((washed, wiped dry, chopped - double the quantity for 4 pax))
1 onion ((chopped))
1 tomato ((chopped))
1 green chilli ((chopped))
2 cloves garlic ((finely chopped))
½ tsp cumin seeds ((roasted))
½ tsp cumin powder ((roasted))
¾ tsp fennel seeds
¼ tsp red chilli powder
¼ tsp turmeric powder
¼ tsp black pepper powder ((freshly ground))
A pinch garam masala powder
4 curry leaves ((removed from stem))
A pinch sugar
2-3 tbsp cooking oil
Salt ((to taste))

Steps:

  • Ensure that you select slender okra, around 4 inches in length. Wash them well, pat them dry before snipping the heads and tails. Then chop them into half-inch lengths.
  • Heat the oil in a non-stick pan, add the chopped onions and green chillies when the oil is sufficiently hot. Sauté them until the onions turn translucent before adding the chopped okra and fry till partially crisp. Remove the fried okra and set aside in a bowl.
  • Separately season the curry leaves, tearing the leaves into bits, to emit a stronger flavour. Add the roasted cumin seeds, chopped garlic and turmeric powder. Give it a slight stir before adding the chopped tomatoes and sautéing till they are mushy. Follow this by adding spice powders and a pinch of sugar. Again sauté, under a minute, to allow the spices to engage with the tempering.
  • Now add the chopped okra and stir, on medium-high heat. When it appears done, stir in some salt and check the taste.

24 Ritz crackers
1/4 cup all-purpose flour
1 large egg
2 ounces chilled pepper Jack cheese
12 medium okra
2 cups corn oil or other vegetable oil for frying
Accompaniment: prepared salsa

Steps:

  • In a food processor finely grind crackers. In a shallow bowl whisk together cracker crumbs, flour, and salt to taste. In another shallow bowl beat egg. Cut pepper Jack into twelve 1 1/2- by 1/2- by 1/4-inch pieces.
  • With a sharp knife cut a 2-inch slit lengthwise on side of each okra. With fingers gently pull slit slightly open and insert a slice of cheese. Transfer okra to a plate and chill 5 minutes.
  • Working in batches of 4, dip stuffed okra in egg to coat, letting excess drip off, and roll in cracker crumb mixture, shaking off excess. Arrange okra in one layer on plate as coated and chill 5 minutes.
  • In a deep 10-inch heavy skillet heat oil over moderate heat until hot but not smoking and fry okra, 4 at a time, turning them, until golden brown, 1 to 2 minutes. With a slotted spoon transfer okra as fried to paper towels to drain. Season okra with salt and serve immediately with salsa.
