1 tablespoon Grape seed oil
2 9 oz. Premium Choice Chateaubriand Cut Filet Mignon
1 tablespoon steak seasoning (divided)
2 5 oz. Lobster Tails
1 Lemon (sliced in wedges for serving)
1/4 cup butter (melted)
1 lb. asparagus (ends trimmed)
1 tablespoon olive oil
salt & pepper to taste
Cooking Spray
1 lb. prepared Yukon Gold Whipped Mashed Potatoes
1/4 cup shredded cheddar cheese
2 strips cooked bacon (diced)
1 green onion (thinly sliced)
8 oz. sliced baby bella mushrooms
1 clove garlic (minced)
1/2 cup red wine
1 green onion (thinly sliced)

Steps:

  • Preheat the oven to 425 degrees Fahrenheit. In an oven safe cast iron skillet preheat on medium heat. Pour in the grape seed oil. Season the Premium Choice Chateaubriand Cut Filet Mignon evenly with steak seasoning. Place in the hot skillet.
  • Sear on each side, rotating all sides every few minutes (about 10 minutes total). Once all sides have been seared place the steak in the oven and cook for 8-12 minutes or until your internal temperature likeness. For a medium-rare steak I cooked it for 8 minutes. Use a meat thermometer to check the temperature.
  • Remove the steaks from the oven and set the steaks on a plate to rest. While steaks rest cook mushroom wine sauce.
  • Rinse, pat dry, and trim the ends of the asparagus. Place the asparagus on a baking sheet. Drizzle with olive oil, salt and pepper. Mix well and place in the oven. Bake for 12-15 minutes. Remove from oven once done.
  • While steaks and asparagus cook, spray a small oven safe baking dish with cooking spray. Empty the 1 lb. prepared Yukon Gold Whipped Mashed Potatoes into the baking dish. Top with shredded cheddar cheese, chopped bacon, and green onions. Bake for 12-15 minutes or until potatoes are warm and cheese is melted and bubbly.
  • In a medium-size pot boil water. Place lobster tails in water before cooking the mushrooms. Set a timer for 6 minutes and boil until tails are red in color. Remove from the heat, drain water, and remove tails. Using a large sanduko knife crack the tops of the shell vertically so that you can expose the lobster meat.
  • Garnish with lemon and drawn butter if desired.
  • Once the steaks are done. Place the cast iron skillet on the stove top. Place the sliced mushrooms and garlic in the skillet. Cook on medium heat for 2 minutes, stirring continuously. Carefully pour in the red wine and mix with a soft spatula breaking up all the steaks bits in the pan (about 2 minutes). Wine will be bubbling and that is normal. Add in the green onions and butter. Stir in until butter is melted. Remove from the heat and pour on top of steak.
  • Place steak and lobster on plate. Top steak with mushroom wine sauce. Divided mashed potatoes and asparagus between two plates. Pour a glass of your favorite wine and enjoy!

3 tablespoons grapeseed oil
1 tablespoon (1 to 2 cloves) chopped fresh garlic
2 finely diced shallots, or 1 white onion finely diced
Any meat trimmings you may have from the beef (see beef ingredient below)
1/2 (750-ml) bottle Merlot wine
1/2 pint (1 cup) strong beef stock or demi-glace
1 tablespoon fresh chopped thyme leaves
1 tablespoon fresh chopped rosemary leaves
1 stick (1/2 cup) unsalted butter
4 medium to large potatoes, peeled and cut into chunks
2 bay leaves
1 pound lobster meat
2 tablespoons grapeseed oil
1 tablespoon unsalted butter (to saute lobster) plus 1/2 cup butter (1 stick), for the potatoes
Salt and freshly ground white pepper
3 ounces soft herbed cheese (recommended: Boursin)
1/4 cup chopped fresh chives
6 (4-ounce) beef tenderloins (filet mignon)
Salt and freshly ground black pepper
1/8 cup grapeseed oil

Steps:

  • Heat the 3 tablespoons of oil in a large saucepan, and saute the garlic and shallots over a gentle heat until translucent. (If you have any trimmings of meat, you would add them at this time). Deglaze the pan with the wine, and add the beef stock and the thyme and rosemary. Allow this mixture to reduce. It could take 20 to 30 minutes (sometimes longer) at a rolling boil, uncovered. You want the liquid to evaporate to about 1/3 of what you started with (in order to intensify the flavor). Once you have reduced the liquid to the required volume, remove from the heat, strain through a chinois (a conical strainer) or some cheesecloth (so you can remove all the vegetables and herbs), return the sauce to the pan and stir in the butter to finish the sauce.
  • For the potatoes:
  • Boil the potatoes with the bay leaves until the potatoes are tender. While the potatoes are cooking, saute lobster meat in oil and butter until it is no longer translucent, and set aside. Drain the potatoes well and discard the bay leaves, then mash the potatoes. Using a beater, add in 1 stick of butter and salt and white pepper. Fold the lobster meat into the potatoes and set aside in a warm place.;
  • Preheat oven to 375 degrees F.
  • Season beef with salt and pepper. In a heavy bottomed, oven-safe saute pan, add just enough oil to cover the bottom of the pan and heat on medium high heat on the stovetop. When the saute pan is hot, cook each side of the filets for approximately 2 to 3 minutes, leaving undisturbed for the first 2 minutes or so. Turn the filets and continue the searing process on the other side of the filets for another 2 to 3 minutes. Place the pan of steaks into the preheated oven. Allow the filets to cook a further 6 to 8 minutes in the oven (depending on the thickness of the steaks and the heat of your oven).
  • While the steaks are in the oven finish the potatoes by crumbling the Boursin cheese into the lobster mashed potatoes which you have been keeping warm and gently stirring it in to allow cheese to melt.
  • Remove the pan of steaks from oven and allow them to rest. (Remember to use an oven mitt; the handle of the pan will be hot!)
  • If necessary, briefly re-heat the Merlot sauce, then remove the pot from the heat and whisk in the whole stick of butter.
  • Plate a portion of mashed potatoes in the center of serving plate. Top with the filet mignon, spoon the Merlot sauce over and around and garnish with chopped chives.

Two 1-inch-thick filet mignon steaks
Kosher salt and freshly ground black pepper

3 tablespoons unsalted butter
1 shallot, minced
4 ounces sliced mixed mushrooms
1 cup red wine

Steps:

  • Generously season each side of the steaks with salt and pepper. Let stand at room temperature about 20 minutes before cooking.
  • In a cast-iron (or other heavy-duty) skillet, heat 1 tablespoon of the butter over medium heat. Add half of the shallots and saute until tender for a couple of minutes. Stir in the mushrooms and cook until the water has evaporated, about 5 minutes. Season with salt and pepper. Transfer the cooked mushrooms to a dish and set aside. Wipe the skillet clean.
  • Heat another tablespoon of butter over high heat in the skillet. It will bubble and foam, and after it stops, add the steaks. Sear on each side for about 4 minutes. Transfer to a plate and tent with foil.
  • Reduce the heat to medium high. Add the remaining shallots and saute for 1 to 2 minutes. Turn the flame off and add the wine. Turn the flame back on to high, bring to boil and let reduce by half. Whisk in the remaining tablespoon of butter. Stir in the reserved mushrooms.
  • Spoon the sauce over the steaks and serve.

2 filet mignon steaks
2 tablespoons butter, divided
3 tablespoons shallots, minced
1/4 cup fresh shiitake mushroom
3/4 cup cabernet sauvignon wine, divided
5 fluid ounces beef consomme
1/2 tablespoon soy sauce
1 teaspoon cornstarch
1 teaspoon dried thyme

Steps:

  • In a nonstick frying pan, saute shallots and mushrooms in 1 tbsp butter for about 4 mins, til tender.
  • Add 1/2 cup of red wine and 3 fl. oz consomme. Simmer for about 5 minutes, stirring frequently.
  • Remove the mushrooms from sauce, set aside.
  • Boil sauce over high heat until reduced to 1/4 cup.
  • Combine sauce with mushrooms in bowl. Set aside.
  • Sprinkle filets with pepper to taste. Saute steaks in remaining 1 tbsp butter over medium heat, about 3 minutes per side for a 1-inch thick steak.
  • Reduce fire to medium-low heat; cook steaks until desired level of doneness, about 10-15 minutes for medium rare. Remove from pan, keep warm.
  • Add the rest of the red wine and beef consommé to the skillet. Bring to a boil. Boil for one minute.
  • Add mushroom/sauce mixture, add cornstarch & soy sauce, and the thyme. Boil one minute, stirring constantly, until thickened.
  • Place steaks on plate and pour sauce over. Garnish with fresh thyme.

4 (10 ounce) lobster tails
4 tablespoons butter
4 cloves garlic, finely chopped

Steps:

  • Place tails in a pot of boiling water and pre-cook for 2 minutes.
  • Remove from pot and ice down to stop the cooking process.

Steps:

  • Melt butter in large nonstick skillet over medium heat. Add chopped garlic and marjoram; sauté 30 seconds. Add mushrooms; toss to coat with butter. Sprinkle with salt. Cover and cook until mushrooms have released their juices, about 13 minutes. Add chicken broth, wine, and whipping cream and bring to boil. 4 slices filet mignon, each about 1 to 1 1/2 inches thick and weighing 1/2 pound
Salt to taste if desired
Freshly ground pepper to taste
1/2 pound fresh mushrooms
1 tablespoon corn, peanut or vegetable oil
2 tablespoons butter
2 tablespoons finely chopped shallots
1/4 cup Madeira wine
1/2 cup beef broth
1 teaspoon tomato paste

Steps:

  • Sprinkle the meat on both sides with salt and pepper. Set aside.
  • Cut mushrooms into thin slices. There should be about 3 cups.
  • Heat the oil in a heavy skillet large enough to hold the slices of meat comfortably without crowding. Add the filets and cook until well browned on one side, about 5 minutes. Turn and continue cooking about 15 minutes or slightly longer. Turn the slices every 5 minutes as they cook.
  • Remove the filets to a warm serving platter. Add 1 tablespoon of the butter to the skillet and when it melts add the mushrooms. Cook, stirring, until mushrooms are wilted. Add the shallots and stir.
  • Cook briefly, stirring and pour in the wine.
  • Blend the beef broth with the tomato paste and add the mixture to the skillet. Add any liquid that has accumulated around the pieces of meat.
  • Cook over moderately high heat about 5 minutes or until the mixture has acquired a saucelike consistency. There should be about 1 cup of sauce or slightly more. Add salt and pepper to taste.
  • Swirl in the remaining butter and serve the sauce with the meat.
