1 1/3 cups turkey drippings
1 cup celery
2/3 cup onion
2 tablespoons salt
1 1/4 teaspoons pepper
1 1/4 teaspoons thyme
2 1/2 tablespoons poultry seasoning
2 quarts turkey broth
13 lbs cooked turkey
2 1/2 cups margarine
1 quart flour
1/2 cup flour
2 tablespoons salt
1 1/2 gallons turkey broth

Steps:

  • Combine bread, drippings, and seasonings; toss to mix.
  • Add broth to moisten slightly; blend thoroughly.
  • Spread 2 1/4 quarts dressing in bottom of 3 baking pans (12x20).
  • Spread 1 1/2 quarts turkey on top of dressing.
  • Add another layer of dressing and turkey.
  • Cover each pan tightly and bake at 350F degrees for 1 hour.
  • Melt margarine; stir in flour and salt.
  • Gradually stir in broth.
  • Cook until thickened.
  • Pour 2 quarts gravy over each pan.
  • Bake at 250F uncovered about 15 minutes before serving.

1 cup buttermilk
8 slices day-old bread, cut into 1/2 inch cubes
3/4 cup chopped celery
3/4 cup chopped onion
1/2 cup chopped fresh parsley
2 teaspoons poultry seasoning
2 teaspoons white pepper
2 teaspoons rubbed sage
1 -2 teaspoon ground thyme
1 teaspoon celery salt
1/2 cup butter or 1/2 cup margarine, melted
3 eggs, beaten
2 (14 1/2 ounce) cans ready-to-serve chicken broth

Steps:

  • Spoon shortening into an 8-inch cast-iron skillet.
  • Place in a 425* oven for 4 minutes or until hot.
  • Combine cornmeal, flour, baking powder, soda, and salt in a large bowl; add 2 eggs and buttermilk, stirring well.
  • Spoon into hot skillet, and bake at 425* for 25-35 minutes or until browned.
  • Cool; crumble cornbread into a large bowl.

2-1/4 cups chicken broth
1/2 cup butter, cubed
1/2 teaspoon salt
1 teaspoon dried thyme
1/4 teaspoon each dried marjoram, rubbed sage and dried rosemary, crushed
1/4 cup minced fresh parsley
2 tablespoons minced chives
DRESSING:
1 loaf (1 pound) sliced bread
1 pound bulk pork sausage
1/2 cup butter, cubed
4 cups thinly sliced celery
3 cups thinly sliced carrots
1/2 pound fresh mushrooms, chopped
1/2 pound cubed fully cooked ham
2 cups green onions
2 cups chopped pecans
1 large tart apple, chopped
1 cup chopped dried apricots
1 tablespoon rubbed sage
2 teaspoons dried marjoram
1 teaspoon dried rosemary, crushed
1 teaspoon salt
1/8 teaspoon ground nutmeg
1 cup egg substitute
1 turkey (16 to 18 pounds)
1 cup chicken broth

Steps:

  • In a small saucepan, combine the broth, butter and salt; bring to a boil. Add herbs; set aside. , Toast bread; cut into 1/2-in. cubes. Place in a bowl. In a skillet, cook sausage over medium heat until no longer pink; remove with slotted spoon and add to bread. Add butter to drippings; saute the celery, carrots, mushrooms, ham and onions for 15 minutes. , Add to bread mixture; stir in the nuts, fruit and seasonings. Add egg substitute and 3/4 cup basting sauce; mix lightly. , Stuff turkey with about 8 cups dressing. Skewer openings; tie drumsticks together. Place on rack in roasting pan. Baste with some of remaining basting sauce. , Bake, uncovered, at 325° for 5 to 5-1/2 hours or until a thermometer reads 180° for the turkey and 165° for the stuffing, basting every 30 minutes. When turkey begins to brown, cover lightly with foil. , Add broth to remaining dressing; toss to coat. Place in a greased 2-1/2-qt. baking dish; refrigerate. 2 pounds ground turkey
2 cups peeled and sliced carrots
1 (15 ounce) can cut green beans, drained
1 (10 ounce) can whole kernel corn, drained
1 (12 ounce) jar turkey gravy
1 (6 ounce) package herb-seasoned dry bread stuffing mix
1 (10.75 ounce) can condensed cream of mushroom soup
3 cups shredded Cheddar cheese
1 cup dried, sweetened cranberries

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Lightly grease a 2 quart casserole dish or 9 inch square inch baking dish.
  • Set a large skillet over medium heat and coat with cooking spray. Crumble the ground turkey into the skillet and add carrots. Cook and stir until turkey is no longer pink, 5 to 10 minutes. Add the corn, green beans and gravy; stir to blend. Set aside and keep warm.
  • Prepare the stuffing mix according to package directions. Stir cream of mushroom soup into the stuffing along with the Cheddar cheese and cranberries.
  • Spoon the turkey and vegetables into the prepared baking dish. Drop large spoonfuls of the stuffing on top until the vegetables are completely covered.
  • Bake for 15 to 20 minutes in the preheated oven, until the top is lightly browned. Set the oven to broil, and cook for 5 minutes to crisp the top. Enjoy!

4 - tablespoons instant minced onion
1 - teaspoon garlic powder
3 - tablespoons parsley flakes
1 1/2 - teaspoons poultry seasoning

6 - cups french bread, about half a loaf
1 1/2 - cups water
2 - teaspoons chicken granules
1/2 - stick real butter

- optional ingredients:
1/2 - medium onion fine chopped and sauteed
1/2 - cup celery fine chopped and sauteed
1/2 - cup cooked sausage, giblets or fine diced turkey

Steps:

  • PREPARE THE BREAD: Cut the french bread into small cubes no larger than 1/2 inch square. Place the cubes on the cookie sheet in a 300 degree oven until they are very dry. Meanwhile,
  • PREPARE THE SEASONINGS: Mix together the instant onion, garlic powder, parsley flakes, poultry seasoning, and black pepper. Set aside
  • PREPARE THE LIQUID: Place one cup of water in a small saucepan, add the butter and the chicken granules. Get it hot, but don't boil it.
  • PREPARE ANY OPTIONAL INGREDIENTS: Sometimes, I add sauteed onion and celery to mine. If you make optional ingredients, add them to the liquid mixture now.
  • MAKING THE DRESSING: The bread should be dry or close to it. Transfer the bread cubes to a large kettle. Add the seasonings and toss well. Now add the liquid mixture, and mix gently until well combined. Put the lid on and let it sit about five minutes, and mix gently again. Put the lid back on and let sit at least 15 minutes. Enjoy!
  • Cook's Tip: This is seasoned to my family's taste. If you prefer a lighter seasoning flavor, just add more bread, and a little water 1/4 cup at a time, until it is just right for you.
