Steps:
- Place egg whites in a small bowl; let stand at room temperature for 30 minutes. Add extracts and vinegar; beat on medium speed until soft peaks form. Gradually beat in sugar, 1 tablespoon at a time, on high until stiff glossy peaks form and sugar is dissolved, about 6 minutes. Beat in food coloring if desired., Transfer the meringue to a pastry bag fitted with a #10 round tip. Pipe 1-1/2-in.-diameter ghost shapes onto parchment-lined baking sheets. Add 2 chips on each for eyes. , Bake at 250° until set and dry, 40-45 minute. Turn oven off; leave cookies in oven for 1 hour. Carefully remove from parchment. Store in an airtight container.

- Cut bacon in half. Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate.
- Melt the chocolate in a microwave-safe glass or ceramic bowl in 30 second intervals, stirring after each melting, for 1 to 3 minutes (depending on your microwave). Do not overheat or chocolate will scorch. Dip all but the last inch of each strip of bacon in the melted chocolate. Place bacon on waxed paper and allow to cool and harden before serving.

These are nice little biscuits with a butter cream filling in the middle, the recipe is from my BERO book I have had for many years. I love coffee biscuits and cakes but never drink the stuff, don't know why I just don't like it in a drink. I would much rather have these wee biscuits with a cup of tea. you should get about 60 so you will end up with 30 sandwiched together

Steps:
- Mix flour and sugar and rub in margarine.
- Stir in egg and coffee mix well.
- Shape into balls the size of a cherry and place on a greased baking sheet.
- Sake in a moderate oven (325 350) (165 175) for 15-20 minutes.
- When cold sandwich together with butter icing.
- To make the icing.
- Cream the fat till pale.
- Add the icing sugar gradually and cream together.
- Add the flavouring.
- sandwich two biscuits together.
