Number Of Ingredients 10

¼ cup extra virgin olive oil
2 small yellow onions, chopped
4 cloves garlic, peeled and chopped into large chunks
2 jalapeño peppers, seeded and chopped*
2 (15.5 ounce) cans black beans, rinsed and drained
1½ teaspoons salt
½ teaspoon ground cumin
2 tablespoons fresh lime juice, from one lime, plus more if desired
3 tablespoons water
¼ cup fresh chopped cilantro, plus more for garnish (optional)

Steps:

  • Heat the olive oil over medium heat in a small saucepan. Add the onions, garlic and jalapeño peppers and cook, stirring occasionally, until very soft, about ten minutes. Do not brown.
  • Transfer the cooked onion mixture to a blender or food processor and add the black beans, salt, cumin, lime juice, water and cilantro. Blend until smooth (if you're using a blender, you may need to stop and stir a few times to help it out). If the dip is too thick, add more water or lime juice, little by little, to thin it out. Taste and adjust seasoning, then transfer to a serving bowl. Serve warm, cold or room temperature with tortilla chips.
  • *Most of the heat from the jalapeños is in the seeds and ribs, so leave those out. If you like a spicier dip, reserve the seeds and add them little by little when you're blending the dip.

9 flour tortillas (7 inches)
2-1/4 teaspoons taco seasoning
4 bacon strips, diced
1/4 cup each chopped onion, sweet red and green pepper
2 garlic cloves, minced
2 cans (15 ounces each) black beans, rinsed and drained, divided
2/3 cup picante sauce
2 tablespoons lime juice
2 teaspoons minced chipotle pepper in adobo sauce
1 teaspoon ground cumin
1/2 teaspoon salt
2 tablespoons minced fresh cilantro

Steps:

  • Cut tortillas with a 3-in. ghost-shaped cookie cutter. Place on baking sheets coated with cooking spray. Spritz tortillas with cooking spray; sprinkle with taco seasoning. Bake at 350° for 8-10 minutes or until edges just begin to brown. Remove to wire racks to cool., In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels; drain, reserving 2 teaspoons drippings. In the drippings, saute onion and peppers until tender. Add garlic; saute 1 minute longer. , Add one can of beans and mash. Add the picante sauce, lime juice, chipotle peppers, cumin, salt and remaining beans; heat through. Stir in bacon and cilantro. Serve with ghost chips.

1 Tbsp. minced fresh ginger
1 clove garlic, chopped
2 Tbsp. toasted sesame oil
2 Tbsp. soy sauce
⅛ tsp. cayenne
1 Tbsp. rice vinegar
2 tsp. sugar
¼ cup chopped green onions, plus more for garnish
Black and white sesame seeds for garnish (optional)
Wonton wrappers
Olive or canola oil cooking spray
Sea salt
Oil, if frying

Steps:

  • Directions For the dip Place all ingredients in a blender or food processor. Blend until you get a smooth paste. If necessary, stop the blender or food processor to scrape down the sides with a spatula. After blending, some pieces of the green onions will still be visible. Transfer to a serving dish and garnish with black or white sesame seeds and chopped green onions. Serve with baked or fried wonton chips. For the chips To bake, preheat oven to 400°F and cut wonton wrappers into small triangles. Spray chips lightly with olive or canola oil, sprinkle with sea salt, and arrange in a single layer on a foil- or parchment-lined baking sheet. Bake for 7 minutes or until golden brown. To fry, heat oil on stovetop or in fryer to 400°F and fry until golden. Drain on paper towel and sprinkle with sea salt. Tip: After chips have cooled, they can be stored in a plastic storage bag for several days.

1/2 red onion, finely chopped
1/2 large tomato, finely chopped
1 jalapeno, stemmed, seeded and minced (or leave the seeds in for more spice, if desired)
1/2 bunch fresh cilantro, leaves picked and finely chopped
Kosher salt and freshly ground black pepper
Fresh tortilla chips, for serving

Steps:

  • Put the beans into a food processor and pulse until coarsely ground. While pulsing, slowly add the vegetable broth until the beans are creamy but still have some small chunks.
  • Transfer the bean mixture to a nonstick skillet over medium-low heat. Cook, stirring, until the beans are warm, about 3 minutes. Stir in the onion, tomato, jalapeno and cilantro, then remove from the heat; season with salt and pepper.

2 tablespoons vegetable oil
1 cup diced white onion
1 tablespoon finely chopped garlic
1 -2 tablespoon canned diced jalapeno pepper
1 (15 ounce) can black beans, rinsed and drained
1 1/2 cups mozzarella cheese or 1 1/2 cups oaxaca cheese, shredded
1/2 cup sour cream
1/2 teaspoon ground cumin
1/4 teaspoon cayenne
salt, to taste
fresh ground black pepper, to taste
1/2 cup crumbled Cotija cheese or 1/2 cup feta cheese

Steps:

  • In a medium skillet, heat oil over medium heat. Add onion, garlic and jalapeno peppers; saute until onions are soft, about 3 minutes.
  • Add beans and smush with the back of a spoon or potato masher until softened and heated through, another 2-3 minutes.
