Delicious, healthy and easy-to-make black bean dip.

Steps:
- Heat the olive oil over medium heat in a small saucepan. Add the onions, garlic and jalapeño peppers and cook, stirring occasionally, until very soft, about ten minutes. Do not brown.
- Transfer the cooked onion mixture to a blender or food processor and add the black beans, salt, cumin, lime juice, water and cilantro. Blend until smooth (if you're using a blender, you may need to stop and stir a few times to help it out). If the dip is too thick, add more water or lime juice, little by little, to thin it out. Taste and adjust seasoning, then transfer to a serving bowl. Serve warm, cold or room temperature with tortilla chips.
- *Most of the heat from the jalapeños is in the seeds and ribs, so leave those out. If you like a spicier dip, reserve the seeds and add them little by little when you're blending the dip.

- Cut tortillas with a 3-in. ghost-shaped cookie cutter. Place on baking sheets coated with cooking spray. Spritz tortillas with cooking spray; sprinkle with taco seasoning. Bake at 350° for 8-10 minutes or until edges just begin to brown. Remove to wire racks to cool., In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels; drain, reserving 2 teaspoons drippings. In the drippings, saute onion and peppers until tender. Add garlic; saute 1 minute longer. , Add one can of beans and mash. Add the picante sauce, lime juice, chipotle peppers, cumin, salt and remaining beans; heat through. Stir in bacon and cilantro. Serve with ghost chips.

ASIAN BLACK BEAN DIP WITH WONTON CHIPS

Just use a blender or food processor to create this deliciously dippable mixture of black beans, fresh ginger, garlic, sesame oil, soy sauce and a few other ingredients, and then serve it with fresh wonton chips. These simple wonton chips are scrumptious baked or fried-and are the perfect accompaniment to this fresh and flavorful black bean dip.

- Directions For the dip Place all ingredients in a blender or food processor. Blend until you get a smooth paste. If necessary, stop the blender or food processor to scrape down the sides with a spatula. After blending, some pieces of the green onions will still be visible. Transfer to a serving dish and garnish with black or white sesame seeds and chopped green onions. Serve with baked or fried wonton chips. For the chips To bake, preheat oven to 400°F and cut wonton wrappers into small triangles. Spray chips lightly with olive or canola oil, sprinkle with sea salt, and arrange in a single layer on a foil- or parchment-lined baking sheet. Bake for 7 minutes or until golden brown. To fry, heat oil on stovetop or in fryer to 400°F and fry until golden. Drain on paper towel and sprinkle with sea salt. Tip: After chips have cooled, they can be stored in a plastic storage bag for several days.

- Combine beans, water, lemon juice, garlic, cumin, chili powder, onion powder, and salt in a food processor; process until thick and smooth, adding more water if needed to reach desired thickness.
- Chill for at least 1 hour before serving.

- Put the beans into a food processor and pulse until coarsely ground. While pulsing, slowly add the vegetable broth until the beans are creamy but still have some small chunks.
- Transfer the bean mixture to a nonstick skillet over medium-low heat. Cook, stirring, until the beans are warm, about 3 minutes. Stir in the onion, tomato, jalapeno and cilantro, then remove from the heat; season with salt and pepper.
- Serve warm or at room temperature with tortilla chips for dipping.

- Heat oil in a skillet over medium heat. Add onion, jalapeno, and garlic. Cook until onion is soft and translucent, about 5 minutes, stirring often to prevent garlic from burning. Add cumin, chili powder, salt, and cayenne pepper and cook 5 minutes more. Remove from heat and let cool slightly.

- In a medium skillet, heat oil over medium heat. Add onion, garlic and jalapeno peppers; saute until onions are soft, about 3 minutes.
- Add beans and smush with the back of a spoon or potato masher until softened and heated through, another 2-3 minutes.
- Remove from heat; stir in shredded mozzarella or Oaxaca cheese, sour cream, cumin and cayenne pepper, stirring until cheese is melted.
- Season with salt and pepper to taste.
- Transfer to a serving dish and sprinkle Cotija or feta on top. Serve warm or at room temperature with chips and/or vegetables.
- Leftover dip can be refrigerated and reheated in a microwave.

- Cut the bell pepper in half lengthwise, discarding seeds and membranes. Place the bell pepper halves, skin sides up, on a foil-lined baking sheet, and flatten with hand.
