Bop's Favorite Meatloaf Recipe is a super savory and easy comfort food that's generously flavored with onion, green bell pepper, spices, and of course, ketchup. An easy meatloaf recipe that's sure to become a family favorite!

1 1/2 pounds ground beef
1 cup soda cracker crumbs (Saltine crackers)
1 8-ounce can tomato sauce
3/4 cup finely chopped onion
1/2 cup finely chopped green bell pepper
2 large eggs, beaten
1 bay leaf, finely crushed
1 teaspoon salt
1/8 teaspoon dried thyme
1/4 teaspoon ground black pepper
1/2 cup ketchup

Steps:

  • Preheat the oven to 350 degrees F., and spray a large rectangular baking dish with cooking spray. You can also line the pan with foil or parchment, if you like, for easier clean up (spray any lining with cooking spray).
  • In a large bowl, combine the ground beef, cracker crumbs, tomato sauce, onion, bell pepper, eggs, crushed bay leaf, salt, thyme, and black pepper. Stir well to combine everything evenly.
  • Shape the ground beef mixture into a long oval loaf that is about 9 to 10 inches long. Place the loaf in the center of the baking dish.
  • Brush the top of the loaf with ketchup.
  • Bake, uncovered, for one hour, or until the internal temperature reaches 160 degrees F.
  • Remove from the oven, and allow the meatloaf to rest for 5 minutes before serving hot.

1 cup diced green bell pepper
¾ cup Italian-style bread crumbs
¼ cup hot pepper sauce
1 egg
1 teaspoon salt
1 teaspoon ground black pepper
2 pounds ground beef
1 (.75 ounce) packet dry brown gravy mix

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix onion, bell pepper, bread crumbs, hot pepper sauce, egg, salt, and pepper together in a large bowl. Add ground beef; mix.
  • Press beef mixture into a loaf pan. Sprinkle brown gravy mix over meat.
  • Bake in preheated oven until cooked through and browned, 1 hour. Remove from oven and let rest for 10 minutes before serving.

My husband has always sworn that he hates meat loaf. I came across a recipe in a Campbell Soup cook book and changed it to his taste. Now he wants this meat loaf every week and absolutely loves it. It stays moist and reheats very well so we can make a large batch of it at a time. We add it to omelets in the morning and make sandwiches out of it for lunch.

1 (10 1/2 ounce) can condensed low-sodium tomato soup
2 -3 lbs lean ground beef, about 7%
2 cups corn flakes, crushed lightly
1 cup finely chopped yellow onion (can buy these frozen for no-prep work)
2 1/2 tablespoons chopped parsley (fresh or dry works)
1 1/2 tablespoons Worcestershire sauce
1 -2 egg, slightly beaten (for two pound meat use one egg, for three pounds, use 2 eggs)
1/2 teaspoon salt
3/4 teaspoon lemon pepper
1 tablespoon minced garlic or 1 -2 crushed garlic clove

Steps:

  • Combine all ingredients; mix THOROUGHLY.
  • Shape FIRMLY into a shallow baking pan or casserole dish.
  • Bake in 350 degree oven, uncovered for 1 1/2 hours.
  • During last half hour of cooking, drain excess juice. Can use this later as a sauce if desired.
  • Recommend that you use a thermometer to check the center of meatloaf frequently.

This "better than mom's" version still has lots of old-school appeal but has been kicked up a notch with a rich and savory flavor, plus we said goodbye to the sugary sweet topping. Sliced meatloaf leftovers make the best sandwiches. I like mine with mustard, cheese, and grilled onions!

cooking spray
¾ cup minced onion
½ cup finely chopped bell pepper
½ cup milk
2 large eggs
2 cloves garlic, minced
¾ cup ketchup, divided
2 tablespoons chopped fresh parsley
4 teaspoons Worcestershire sauce, divided
2 teaspoons minced fresh thyme
2 teaspoons Dijon mustard
¾ cup seasoned bread crumbs
2 pounds ground sirloin
1 ½ teaspoons kosher salt
¾ teaspoon ground black pepper
2 teaspoons balsamic vinegar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly coat a 9x5-inch loaf pan with cooking spray.
  • Combine onion, bell pepper, milk, eggs, garlic, 2 tablespoons ketchup, parsley, 3 teaspoons Worcestershire, thyme, and Dijon in a large bowl and mix well. Stir in bread crumbs. Add ground sirloin, salt, and pepper; mix until just combined. Form mixture into a loaf shape and fit into the prepared pan.
  • Combine remaining ketchup with balsamic vinegar and remaining 1 teaspoon Worcestershire in a small bowl. Mix until well combined and spread over the top of the meatloaf.
  • Bake in the preheated oven until an instant read thermometer inserted in the center reads 160 degrees F (71 degrees C), about 1 hour. Let stand for 10 minutes before slicing and serving. The longer it sits, the easier it will be to slice.
