Yield Makes about 3 1/2 dozen

Number Of Ingredients 18

1 pound ground chicken breasts
2 ounces bean thread noodles, blanched and chopped
1 cup grated carrot, squeezed dry
1/4 cup loosely packed fresh Thai basil, chopped
1/4 cup scallion greens, cut on the diagonal
1 clove garlic, finely chopped
1 tablespoon green curry paste, preferably Maeploy brand
3 tablespoons fish sauce
2 1/2 tablespoons sugar
Coarse salt and freshly ground pepper
3 tablespoons coconut milk
1 package round white dumpling wrappers
1/2 cup smooth peanut butter
1/4 cup Sriracha chile sauce
1 can (14 ounces) coconut milk
2 tablespoons fish sauce
1/4 cup dark-brown sugar
Coarse salt and freshly ground pepper

Steps:

  • Prepare the filling; combine all of the ingredients, except the dumpling wrappers, in a medium bowl. Bring a small saucepan of water to a boil. Add 1 teaspoon filling, and cook until no longer pink. Taste, and adjust the seasoning, if necessary.
  • Place a dumpling skin on work surface. Using your finger, wet around the edges with water. Place 1 1/2 tablespoons filling in the center. Fold dumpling skin over to enclose. Pinch the edges together to form a half moon. Pleat the rounded edge. Set aside. Repeat with remaining filling and wrappers.
  • Prepare dipping sauce; combine all the ingredients in a small saucepan. Heat gently, whisking, until emulsified. Be sure not to boil. Set aside to cool.
  • Just before serving, bring a large pot, fitted with a steamer insert lined with lightly oiled parchment paper with a few holes poked in it, to a simmer. Add dumplings and simmer until cooked through, 5 to 7 minutes.

CHICKEN AND THAI BASIL DUMPLINGS

Chicken and Thai Basil Dumplings image

I love these dumplings, though not authentic Thai food, they still taste fantastic. You can find Thai basil usually at your local asian market, it has purplish stems. This recipe originates from a restaurant in New York famous for dumplings.

NAT'S THAI CHICKEN BASIL

Nat's Thai chicken basil image

I've been trying to duplicate this dish from my favorite Thai restaurant, and the Mortar and pestle makes the difference here. This taste "exactly" how it does at the restaurant. Remember that the strength of flavours in most of these ingredients varies, with basil, chillis, garlic and even the fish and soya sauce, Taste, taste, taste, and adjust! Sweet, not too spicy yet all the Thai flavours we love.

Time 25m

Number Of Ingredients 12

THAI GROUND CHICKEN BASIL

  • First cook the rice following the directions on the bag and fry the eggs in 2 tablespoons of vegetable oil. Set the eggs aside for later.
  • Rinse the chicken breast in cold water and pat dry with some paper towel. Then chop the chicken into bite-sized pieces.
  • Rinse and peel the cloves of garlic and flatten them with the side of a knife. Remove the stems from the Thai chilli peppers. Then mince both the garlic and the chillies together. Alternatively, you can use a mortar and pestle to do this if you have one. This will help bring out the flavours when frying them in oil.
  • Rinse off your holy basil leaves in cold water and set them aside to dry off. Make sure to remove the stems from the leaves.

  • To make the spicy peanut dip: In a small bowl, whisk together the peanut butter, nam prik pao, sugar, and fish sauce. Continue whisking and add the coconut milk in a slow, steady stream to emulsify the mixture. Season with salt and pepper to taste. You also can adjust the other seasonings to your taste. The dip can be refrigerated in an airtight container for up to 1 week.
  • To make the dumplings: In a food processor, combine the sugar, fish sauce, garlic, lemongrass, and 1 ¼ teaspoons pepper. Pulse until the lemongrass is very finely chopped. Transfer the marinade to an airtight container and refrigerate at least overnight and up to 1 week.
  • When ready to cook, strain the marinade through a fine-mesh sieve, pressing on the solids to extract as much liquid as possible. You should have ½ cup (120 ml). (If you have extra, save it to use as a marinade for grilling chicken, pork, or beef.)
  • Fill a medium bowl with ice and water. Bring a small pot of water to a boil and drop the noodles in. Cook just until softened, about 3 minutes, then drain and transfer to the ice water. When cool, drain again, then chop the noodles.
