BOURBON GRILLED STEAK TIPS
Tender beef tips are infused with an easy bourbon marinade and grilled to perfection for a restaurant-worthy meal.

- In a medium-size bowl, whisk together the olive oil, Bourbon, soy sauce, dijon mustard, minced garlic, brown sugar, Tabasco, and black pepper.
- Pour the marinade into a sealable bag with the steak tips and squeeze out all of the excess air. Refrigerate for 2 hours.
- Remove the steak tips from the refrigerator and place them onto a plate. Preheat the grill to medium-high and cook 3-4 minutes per side or until internal temperature reaches your desired level of doneness. Allow steak tips to rest for a few minutes before serving.

BOURBON-GLAZED STEAK TIPS

- Cut beef into 1-inch cubes. If using Top Blade Roast, make sure to cut away and discard the thick membrane that runs through the middle of the roast.
- Combine Worcestershire sauce, soy sauce, balsamic vinegar, ¼ cup honey, and ½ cup bourbon in a bowl or zip top bag. Add the steak tips and refrigerate overnight, or at least 4 hours.
- Heat a heavy based or cast iron skillet to medium-high heat. Spray with a little oil.
- Drain the excess marinade from steak tips and discard.
- Place steak tips in the hot skillet. Cook 5-7 minutes until color develops.
- Mix remaining bourbon and honey in a small bowl, then pour over steak tips to glaze. Continue cooking until glaze has caramelized and darkened to a rich brown color. The tips should have enough salt from the soy sauce, but you can taste them at this stage and add more salt if needed.
- Remove from heat, allowing 2-3 minutes to cool, then serve.

GRILLED STEAK WITH BOURBON SAUCE
A gourmet meal that will have your friends talking. The herbs and bourbon sauce give this steak a wonderful flavour. I barbequed my steak but the recipe tells you to cook in the oven. If you are using dried herbs the prep time is considerably less. I like to use fresh herbs to bring out the flavour. Serve this with garlic and paramasen mashed potatoes and a green salad. I found this gem in a Food and Drink Magazine the local liquor store gives out.

- Heat 1 tbsp of the butter on medium heat in pot, reserving remaining butter.
- Stir in shallots, garlic, thyme, tarragon and rosemary.
- Sauté for 1 to 2 minutes or until shallots soften.
- Add bourbon and bring to boil Reduce to 2 tbsp approx.
- 5 minutes Add stock and bring to boil Simmer approx 20 minutes or until reduced to 1/2 cup Swirl in 1 tsp balsamic vinegar, reserving the rest Season with salt and pepper Heat oil in large ovenproof skillet on medium-high heat.
- Season steak with salt and pepper.
- Add steaks and cook for about 2 minutes per side.
- Place in oven and bake for 7 to 10 minutes for medium rare.
- Test steak with instant read thermometer if your are unsure (125 F) Place steak on carving board and let rest for 5 minutes Reheat bourbon sauce and whisk in remaining butter and reserved balsamic vinegar Season well Slice steak down into 1/2 inch slices against the grain and place on 4 plates.
- Drizzle with sauce.

BOURBON GRILLED AND JUICY STEAK TIPS RECIPE
The grilled bourbon steaks are bursting with smoky bourbon flavor. Rib-eye steaks (or any cut of meat) are marinated in a bourbon and Worcestershire mixture before being grilled to achieve a nice char.

- In a large ziptop bag, combine the first 7 ingredients. Steaks should be added. Coat the other side. Refrigerate for 4 to 12 hours, turning bag every now and then.
- Remove the steaks from the bag and pat dry. Season with salt and pepper to taste. Allow for 30 minutes at room temperature.
- Preheat the grill to medium-high. Grill the steaks for 8 to 10 minutes, turning once. Allow for a 5-minute rest before serving.

BOURBON GRILLED FLANK STEAK
Flank steak is a very versatile and lean cut of steak, so it really benefits from a marinade. The marinade helps tenderize the meat and infuse it with flavor. Poking the steak with a fork here helps the marinade penetrate better and faster. Double cooking sweet potatoes in both the microwave and the grill, yields the creamiest insides and crisp charred skin.

- Put the steak in a resealable plastic bag along with the garlic, 2 tablespoons bourbon, the brown sugar, Worcestershire sauce, chili powder, cumin, 1/2 teaspoon salt and a few grinds of pepper. Rub the marinade into the steak and refrigerate, 6 to 12 hours.
- Preheat a grill to medium high. Remove the steak from the marinade; pour the marinade into a small saucepan, discarding the garlic. Add 2 tablespoons water and the remaining 2 tablespoons bourbon. Bring to a boil, reduce the heat and simmer until slightly reduced, 3 to 5 minutes. Remove from the heat, stir in the vinegar and season with salt and pepper. Meanwhile, prick the sweet potatoes with a fork and microwave until soft, 5 to 7 minutes.
- Season the steak with salt and pepper. Toss the broccolini with the melted butter and season with salt and pepper. Grill the steak, turning once, 10 to 12 minutes for medium rare, and the sweet potatoes, turning, until charred, 15 to 18 minutes. Once the steak is done, grill the broccolini, turning, until tender, 6 to 8 minutes.
- Thinly slice the steak and divide among plates; spoon the reduced marinade on top. Serve with the broccolini and sweet potatoes; top the sweet potatoes with butter.

BOURBON-MARINATED STEAKS

- Prepare marinade; In large plastic bag, Mix 1 cup water with all the ingredients except steaks.
- Add steaks, turning to coat, seal bag, pressing out excess air.
- Place bag in shallow glass baking dish and refrigerate at least 4 hours or over night, turning bag occasionally.
- Remove steaks from marinade.
- Discard marinade.
- Put steaks on grill over medium heat and cook 15 to 20 minutes for medium-rare or until desired doneness, turning once.
- (Or preheat broiler and place steaks on rack in broiling pan. Broil steaks at closet position to source of heat for 15 to 20 minutes for medium-rare) If using top round grill or broil for 25 to 30 minutes.
