1 package Garlic & Fine Herb Boursin Cheese
1-2 teaspoons sea salt
Optional: butter and minced chives (to garnish)

Steps:

  • Add the cauliflower to a large pot with 1 cup of water. Bring the water to a boil, cover the pot, and let the cauliflower steam for 10 minutes. Remove it from the heat and drain any remaining liquid.
  • Working in batches if needed, add the cauliflower and Boursin cheese to your food processor and blend on high until smooth. Season to taste, starting with 1 teaspoon of salt.
  • Serve the Boursin mashed cauliflower in a bowl and top with a little butter and some chives.

1 head cauliflower, cut into florets
1 container (6 ounces) 0% plain Greek yogurt
1 tablespoon butter
2 garlic cloves, roughly chopped
2 tablespoons chopped fresh dill, plus additional for garnish
2 tablespoons chopped fresh flat-leaf parsley, plus additional for garnish
Kosher salt and freshly ground black pepper
2 tablespoons finely grated Parmigiano-Reggiano cheese

Steps:

  • Bring a medium pot of water to a boil. Add the cauliflower and let cook until fork-tender, about 8 minutes. Drain thoroughly and transfer to a food processor. Add the Greek yogurt, butter, garlic, dill, and parsley and process until creamy. Season with salt and pepper to taste, add the Parmesan, and process until just combined.
  • Transfer to a bowl and garnish with more dill and parsley. Serve hot.

Steps:

  • Prepare the cauliflower: Remove the stem and cut the cauliflower into smaller florets. Trim the stem on the florets as much as possible (stems can cause graininess). In a medium-size pot, add a couple cups of water (just enough to cover florets). Bring to a boil and generously season water with salt. Add florets and turn heat down to medium. After 10 minutes, remove from heat.
  • Finish: After boiling, drain well in a colander. Place florets in a food processor or blender along with Boursin cheese and salt. Pulse until smooth. Taste to determine whether more salt is needed. Top with ground pepper, a small dollop of Boursin or fresh herbs (optional). Serve immediately.

2 heads cauliflower
2 tablespoons olive oil
3 cloves garlic, chopped
½ cup sour cream
½ cup fresh chives, chopped
¼ cup fresh parsley
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Wrap cauliflower in a clean dish towel, then turn it upside down and bang it against the surface of your counter until you feel the cauliflower crack (be sure to rotate to break it up on all sides).
  • Pull florets off of stem and break the bigger florets into smaller pieces.
  • Bring a large pot of water to boil over high heat.
  • Add the cauliflower pieces to the pot and boil, covered, for 15-18 minutes.
  • Drain the cauliflower.
  • Mash the cauliflower with a fork until smooth.
  • Mix in remaining ingredients. Allow to cool for 5 minutes.

Steps:

  • Pour broth into a deep pot.
  • Trim leaves and core off head of cauliflower.
  • Place head of cauliflower in broth and drizzle with the olive oil.
  • Cover and bring to a boil.
  • Reduce heat to medium and boil covered until tender, about 8 to 10 minutes.
  • Uncover and mash cauliflower w/potato masher.

1 cup chicken broth
1 large head cauliflower
1/3 cup boursin cheese or 1/3 cup other garlic & herb spreadable cheese
1/4 cup grated parmigiano-reggiano cheese or 1/4 cup romano cheese
1/8 teaspoon grated nutmeg
3 tablespoons chives, chopped

Steps:

  • Add chicken stock and 1 tablespoon of extra-virgin olive oil, 1 turn of the pan, to a deep pot.
  • Trim away greens and stems from the base of cauliflower. Cut away the core with a sharp paring knife. Set cored head into pot with broth.
  • Cover pot and bring liquid to a boil. Reduce heat to medium low and cook cauliflower, covered, until tender, 8 to 10 minutes.
  • Uncover the pot and mash the cauliflower.
  • Let some liquid cook off as you smash the cheeses into the cauliflower.
  • As the mixture thickens, turn off heat and season with salt, pepper and nutmeg. Stir in chives and transfer cauliflower to as serving dish.
