BOW TIE PASTA TUNA SALAD
Steps:
- Boil water and cook pasta according to package directions. Rinse with cold water and set aside.
- In a large mixing bowl, stir tuna, mayonnaise, peas, celery, relish, onions together until mixed well.
- Stir in pasta and gently stir until everything is mixed well.
- Add salt and pepper to taste.
- Cover and place in fridge until chilled. Add tomatoes, stir and enjoy!
BOW TIE PASTA WITH TOMATO TUNA SAUCE
Steps:
- Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
- Bring a large pot of lightly salted water to a boil over high heat. Stir in the pasta and boil until cooked through, but still firm to the bite, about 12 minutes. Drain well.
- Heat the olive oil in a large skillet. Toast bread crumbs in oil, about 2 minutes. Season with salt and pepper; stir in lemon zest. Remove seasoned bread crumbs from skillet and drain on paper towels.
- Place the skillet back over medium heat. Add the beans, and mash. Stir in the tuna, tomato sauce, and 1/4 cup of the Parmesan cheese. Reduce heat to a simmer and cook for 10 to 15 minutes.
- Toss sauce with prepared pasta; place in prepared baking dish. Top with the toasted bread crumbs and remaining 1/2 cup Parmesan cheese. Bake in preheated oven until the cheese melts, about 10 minutes.

GREEK-STYLE TUNA AND BOW TIE PASTA SALAD
This salad is delicious, and great to take in a container for a brown bag office lunch! The tuna can be replaced with cooked chicken breast. Plan ahead this needs to chill for a minimum of 5 hours or overnight.

Steps:
- Cook the bow tie pasta in salted boiling water until JUST firm-tender; drain and rinse with cold water, then transfer to a large bowl and toss with 2-3 tablespoon oil.
- Add in the tuna, feta cheese, cucumber, red onion, cherry tomatoes and olives; toss to combine.
- To make the dressing; mix/whisk together olive oil, lemon juice, oregano, garlic powder (if using) Parmesan cheese, salt and pepper.
- Pour the dressing over the pasta mixture; toss to coat well.
- Cover and chill for a minimum of 5 hours or overnight.

TUNA CASSEROLE WITH BOW TIES, MUSHROOMS AND PARMESAN
This is a great from scratch Tuna Casserole. No canned soup here, an easy Parmesan cream sauce with just a touch of cayenne to give it a nice kick. Red bell peppers, green onions and mushrooms give it the right flavor and colors to pull an ordinary tuna casserole to over the top. This recipe comes from Art Smith's cookbook "Kitchen Life" which I am enjoying very much! When I make this again, I will probably substitute Ritz cracker crumbs for the dried bread crumbs to add a little more pizzaz to the top.

Steps:
- Position a rack in the center of the oven and preheat the oven to 350. Lightly coat the inside of a 2 ½ to 3 quart baking with vege spray.
- Bring a large of water to a boil over high heat. Add the pasta and cook until barely tender (it will cook further in the oven). Drain well. Return the pasta to the cooking pot.
- Meanwhile heat the butter in a large skillet over medium heat. Add the bell pepper and cook stirring often, until softened, about 3 minutes.
- Add the mushrooms and the scallions, and cook, stirring often, until the mushroom juices evaporate and the mushrooms are tender, about 6 minutes.
- Sprinkle with the flour and stir well. Stir in the milk and broth, and bring to a boil, stirring often.
- Reduce heat to medium low and simmer until slightly thickened, about 3 minutes.
- Remove from heat and stir in the tuna, ½ cup parmesan and the cayenne. Stir this into the pasta mixture and season with salt and pepper.
- Pour the pasta into the baking dish and sprinkle with bread crumbs and remaining ¼ cup parmesan. Bake until the sauce is bubbling, 25 to 30 minutes. Let stand 5 minutes, then serve hot.
ALBACORE TUNA AND BOW TIE PASTA SALAD
Yet another Trader Joe's copycat recipe for one of their excellent pre-packaged salads. Perfectly acceptable to use canned tuna, but for a real treat try some fresh albacore! Please note that all of my ingredient amounts are estimated.

- Cook pasta according to package directions. Rinse under cold water to halt cooking. Drain.
- Broil or pan fry fresh tuna. Set aside. (If using canned tuna, drain and place the tuna in a serving bowl and proceed with recipe.).
- Combine dressing ingredients in non-reactive bowl and blend well.
- Break up the fresh tuna into bite size pieces and place in serving bowl with the pasta. Toss dressing gently with the pasta, tuna and remaining salad ingredients.
- Keep covered and chilled until ready to serve.

TUNA MUSHROOM CASSEROLE
Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 1-quart casserole dish.
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- In a mixing bowl, combine mushroom soup, milk, salt, and pepper. Mix thoroughly. Then add tuna, mushrooms, and pasta. Mix thoroughly. Pour mixture into the greased casserole dish.
- In another mixing bowl, combine bread crumbs, butter, and thyme. Mix well. Sprinkle over the top of the tuna mixture.
- Bake uncovered in a preheated oven until bubbling and golden brown, about 40 minutes.
