In the 1930s, Rudolph Boysen was looking for a place to grow a new berry variety when he met the Knotts, who were struggling to make ends meet on their California farm. They teamed up, and soon the Knott family was growing boysenberries, which taste like a cross between a blackberry and a raspberry. The Knotts' kitchen became the Chicken Dinner Restaurant, and the rest of the property transformed into the theme park we know today. The park honors its history with treats like boysenberry sherbet, cotton candy and this double-crust pie, still made from the Knotts' original recipe.

2 1/2 cups all-purpose flour, plus more for dusting
2 tablespoons granulated sugar
1 teaspoon salt
1/2 cup cold vegetable shortening
1 1/2 sticks (12 tablespoons) cold unsalted butter, cut into small cubes
2 tablespoons apple cider vinegar
1/3 cup ice water
1 pound frozen boysenberries, thawed, 1/2 cup liquid reserved
1 cup granulated sugar
3 tablespoons cornstarch
Pinch of salt
Heavy cream, for brushing
Coarse sugar, for sprinkling

Steps:

  • Make the crust: Combine the flour, granulated sugar and salt in a food processor; pulse to combine. Add the shortening and pulse a few times until the mixture looks like coarse meal. Add the butter and pulse a few times until pea-size pieces form. Pulse in the vinegar, then pulse in the ice water until the dough starts to come together but is still clumpy (you do not want it to form a ball). Divide the dough in half and form into 2 disks. Wrap each disk in plastic wrap and refrigerate at least 1 hour or overnight.
  • On a lightly floured surface, roll out each disk of dough into a very thin 12-inch round (you can also roll the dough between 2 sheets of lightly floured parchment paper). If the dough is too soft, return to the refrigerator for about 20 minutes. Press 1 round of dough into a 9-inch pie plate. Trim the excess dough, leaving a 1/2-inch overhang.
  • Make the filling: Combine the boysenberries and liquid, the granulated sugar, cornstarch and salt in a large bowl. Stir until well combined.
  • Pour the berry filling into the prepared pie crust. Place the second round of dough over the pie and trim the excess to match the bottom layer. Fold the overhanging dough under itself and crimp as desired. Cut a few slits in the top crust. Refrigerate at least 1 hour before baking.
  • Put a baking sheet on the middle oven rack and preheat to 425 degrees F. Brush the pie with heavy cream and sprinkle with coarse sugar. Put the pie on the hot baking sheet and reduce the oven temperature to 375 degrees F. Bake until the crust is deep golden brown and the filling is bubbling, 60 to 75 minutes. Transfer the pie to a rack and let cool at least 4 hours before slicing.

Steps:

  • In a small bowl, combine wafer crumbs and butter. Press onto the bottom and up the sides of a 9-in. pie plate coated with cooking spray. Freeze for 30 minutes. Spread chocolate ice cream over crust; freeze for 1 hour or until firm., In a microwave, melt chocolate chips and whipping cream; stir until smooth. Cool slightly. Quickly and carefully spread over chocolate ice cream. Freeze for 30 minutes. Top with vanilla ice cream; sprinkle with almonds. Cover and freeze until firm., For sauce, in a blender, cover and puree raspberries. Strain and discard seeds. In a saucepan, combine cornstarch and raspberry juice until smooth. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Cool completely. , Remove pie from the freezer 10 minutes before cutting. Serve over raspberry sauce.

1 pint fresh boysenberries

Steps:

  • Prepare pie crust for baking and fit into 9" pie plate.
  • Refrigerate while making filling.
  • Mix together dry ingredients until well-blended.
  • Stir in sour cream.
  • Spread about 3 T of mixture in bottom of unbaked crust.
  • Spread washed berries over bottom of pie crust to cover.
  • Pour remaining mixture over berries.

2 Two pastry pie crusts ((one for top, one for bottom-homemade or store bought))
4 cups boysenberries ((fresh))
1 cup granulated sugar
1/3 cup all purpose flour
1/4 teaspoon cinnamon
2 Tablespoons butter

Steps:

  • Preheat oven to 425 degrees.
  • In a large bowl, gently mix together the boysenberries, sugar, all purpose flour and cinnamon. Pour the fruit mixture into a pastry lined pie pan. Cut the butter into small pieces; dot the top of the fruit with the butter.
  • Top the pie with the second crust; completely seal and flute the edges to make the crust. Make a slight cut with a knife in the middle of the top crust to vent the pie. If you wish to have a shiny/sugary top crust, brush the top crust with a tiny bit of milk (using a pastry brush), then sprinkle with granulated sugar).
  • Bake for approximately 40-45 minutes, or until the juices are bubbly in the center and the crust is golden brown.

1 cup graham cracker crumbs
3 tablespoons sugar
4 tablespoons butter or margarine, melted
2 cups buttermilk
1 (14 ounce) can sweetened condensed milk
1 (8 ounce) package cream cheese
⅛ cup lemon juice
1 tablespoon lemon zest
1 pinch salt
¼ cup coarsely chopped cashews
¼ cup boysenberry preserves

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). In a small bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture evenly into the bottom of a pie pan. Bake for 8 minutes, and remove from oven. When cool, break into small pieces.
  • Combine buttermilk, sweetened condensed milk, cream cheese, lemon juice, zest, and salt in a blender or food processor. Process until smooth. Pour into an ice cream maker, and freeze according to the manufacturer's instructions.
  • Mix in cashews and pieces of graham cracker crust. Gently fold in preserves to create a ribbon effect. Transfer to the freezer for 1 hour to harden.

Easy and sooo yummy. Got this recipe when I worked at Knott's Berry Farm. "Cooking" time is chilling time. Shortbread cookie crumbs should total the 1 1/2 cup, its hard to get the recipe to write up that way. Also note the divided use of the jam.

3 tablespoons butter or 3 tablespoons margarine, melted
1 cup boysenberry jam, divided use (Knott's Berry Farm seedless)
6 ounces cream cheese, softened
1/2 cup chocolate chips, melted
3 cups vanilla ice cream, softened
1/3 cup almonds, toasted

Steps:

  • Combine crumbs and butter.
  • Press into 9 inch pie pan.
  • Blend together (only) 1/4 cup jam, cream cheese and melted chocolate.
  • Spread into bottom and up the sides of the crust.
  • Stir together ice cream and (only) 1/4 cup jam.
  • Spoon into pie to fill.
  • Place in freezer for 4 hours or until ice cream is firm.
  • Top with remaining jam and toasted almonds.

16 ounce Semisweet Chocolate, cut up
1/2 c. Butter
1 Tbsp. Sugar
1 1/2 tsp Flour
4 x Large eggs, separated Sweetened Whipped Cream Boysenberries Chocolate Curls
3/4 c. Seedless Boysenberry Jam, Melted

Steps:

  • In heavy saucepan, combine chocolate and butter. Cook and stir oer low heat till chocolate melts. Remove from heat. Stir in sugar, flour, and 1 teaspoon Boysenberry liquer, if you like. With wooden spoon, beat in yolks, 1 at a time, just till combined; set aside. In large bowl beat egg whites with electric mixer on high speed till stiff peaks form. Mix in chocolate mix. Pour into greased 8 inch springform pan. Bake in 350F oven 25 to 30 min or possibly till edges puff. Cold on rack 30 min. Remove sides of pan; cold. Chill, covered, 4 to 24 hrs. To serve, top with Sweetened Whipped Cream, Boysenberries, and Chocolate Curls. Drizzle each piece with 1 tbls. melted jam. Serves 12. Sweetened Whipped Cream: Refrigeratemixing bowl and beaters of electric mixer in refrigerator. In chilled bowl combine 1 c. whipping cream, 2 tbls. powdered sugar, and 1/2 teaspoon vanilla. Beat with chilled beaters on medium speed till soft peaks form. Makes 2 c.. Chocolate Curls: Draw vegetable peeler across bar of chocolate. Transfer curls to top of cake with toothpick or possibly wooden skewer.

4 large egg yolks
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1/2 cup chilled whipping cream
1/2 cup whole blanched almonds, toasted, coarsely ground
For crust
1Easy Pastry Dough disk
1/2 cup whole blanched almonds
For topping
1 1-pound package frozen boysenberries, thawed, drained, juice reserved
1 tablespoon crème de cassis
1 3/4 teaspoons unflavored gelatin
6 tablespoons sugar
Lightly sweetened whipped cream

Steps:

  • Make filling:
  • Stir sugar, cornstarch and salt in heavy medium saucepan. Gradually whisk in half and half, then yolks. Whisk over medium heat until custard thickens and boils, about 8 minutes (custard may be lumpy; whisk until smooth). Remove from heat. Whisk in extracts. Transfer to medium bowl. Press plastic onto surface; chill until cold and firm,at least 4 hours.
  • Beat 1/2 cup cream in medium bowl until stiff peaks form. Whisk 1/4 of cream into filling to loosen. Fold remaining cream into filling; then fold in ground almonds. Cover and refrigerate up to 1 day.
  • Make crust:
  • Preheat oven to 375°F. Rollout dough disk on floured surface to 13-inch round. Transfer to 9-inch-diameter glass pie dish. Fold overhang under; crimp edge, forming high-standing rim. Press whole almonds on diagonal into crust edge, spacing 1/2 inch apart. Pierce crust all over with fork. Freeze 10 minutes. Line with foil and beans or pie weights.
  • Bake crust until sides are set, about 15 minutes. Remove foil and beans. Bake until cooked through and pale golden, covering edge with foil if nuts brown too quickly and piercing with fork if crust bubbles, about 10 minutes. Transfer to rack; cool. Spoon filling into crust; chill.
  • Make topping:
  • Reserve 1/4 cup berries. Transfer remaining berries to processor; puree. Firmly press puree through sieve into measuring cup. If necessary, stir in enough reserved juice to yield 1 cup. Transfer 1/2 cup puree to saucepan; mix in crème de cassis. Sprinkle gelatin over. Let stand 15 minutes. Add sugar. Stir over medium-low heat until gelatin dissolves and mixture begins to simmer, about 2 minutes. Mix in remaining 1/2 cup puree. Chill just until cold but not set, 30 minutes.
  • Spoon topping over filling; chill until set, at least 3 hours and up to 1 day.
  • Garnish pie with whipped cream and reserved berries.
