Braised Beets image

Each recipe below is based on a given root, but feel free to mess around. Bake beets instead of celeriac; make creamy potato soup, braise carrots, braise parsnips and so on.

Beets
Butter
White wine
Tarragon
Salt
Pepper

Steps:

  • Peel about a pound of beets and chop them into 1-inch cubes.
  • In a large saucepan, combine a couple of tablespoons of butter with the vegetables and stock to cover (.5 cup or more).
  • Add a splash of white wine and some freshly chopped tarragon; bring to a boil.
  • Cover and adjust the heat so the mixture simmers.
  • Cook until the vegetables are tender, 15 to 20 minutes.
  • Add salt and pepper to taste, and serve.

Mature leaves have a much more pungent flavor and are best boiled until tender. This simple saute takes just a few minutes to cook and makes a lovely accompaniment to roast chicken or steak.

2 tablespoons olive oil
1 tablespoon unsalted butter
1 garlic clove, thinly sliced
2 lbs baby beet leaves, washed
1 -2 teaspoon fresh lemon juice
sea salt & freshly ground black pepper

Steps:

  • Heat the oil and butter in a large skillet or Dutch oven over low heat, and add the garlic.
  • Cook gently, stirring frequently, until the garlic is fragrant but does not take on any color.
  • Add the moist greens, raise the heat to medium-high, and cover the pan. Cook until the greens wilt, about 2 minutes, shaking the pan once or twice.
  • Remove the cover; if there's any excess liquid, cook until it evaporates.
  • Toss the greens with the lemon juice, salt, and pepper, and serve hot.

8 ounces slab bacon, cut into lardons
3 tablespoons duck fat or lard
2 cloves garlic, sliced
2 shallots, sliced
2 fresno chiles, seeded and sliced
1 pound hardy greens, such as Swiss chard, collards, rapini, or beet greens, stems trimmed
1/4 cup sherry vinegar
Salt and freshly ground pepper
1/4 cup honey

Steps:

  • Heat a 6-quart casserole over medium heat. Add the bacon and duck fat and cook for five minutes to render the fat from the bacon. Add the garlic, shallot, and chiles and cook until softened but not browned, about 2 minutes. Add the greens, reduce the heat to low, add the vinegar, and season with salt and pepper. Cook the greens down until they're tender, about 1 hour. Drizzle with the honey and mix well.

2 cloves garlic, minced
1 teaspoon crushed red pepper flakes
Zest and juice of 1/2 lemon

  • Heat a medium saute pan coated with oil over medium heat until the oil shimmers. Add the beet greens and garlic, and toss until the greens are wilted and tender, 5 to 8 minutes. Add the red pepper flakes and lemon zest and juice, and toss. Season with salt and pepper.

Roasted Beets and Sauteed Beet Greens image

This is a great way to use every part of the fresh beets you buy. You can get two delicious side dishes out of this one vegetable.

1 bunch beets with
greens
¼ cup olive oil, divided
2 cloves garlic, minced
2 tablespoons chopped onion
salt and pepper to taste
1 tablespoon red wine vinegar

Steps:

  • Preheat the oven to 350 degrees (175 degrees C). Wash the beets thoroughly, leaving the skins on, and remove the greens. Rinse greens, removing any large stems, and set aside. Place the beets in a small baking dish or roasting pan, and toss with 2 tablespoons of olive oil. If you wish to peel the beets, it is easier to do so once they have been roasted.
  • Cover, and bake for 45 to 60 minutes, or until a knife can slide easily through the largest beet.
  • When the roasted beets are almost done, heat the remaining 2 tablespoons olive oil in a skillet over medium-low heat. Add the garlic and onion, and cook for a minute. Tear the beet greens into 2 to 3 inch pieces, and add them to the skillet. Cook and stir until greens are wilted and tender. Season with salt and pepper. Serve the greens as is, and the roasted beets sliced with either red-wine vinegar, or butter and salt and pepper.

  • With a sharp knife peel celery root and cut into 1-inch pieces. Diagonally cut carrots into 1-inch-thick pieces. Quarter shallots lengthwise. In a 2-quart heavy saucepan melt butter over moderately low heat. Add celery root, carrots, shallots, salt, and pepper to taste, stirring to coat vegetables with butter, and cook, covered, stirring occasionally, 20 minutes. While root vegetables are cooking, trim beans. Stir beans into root vegetables and cook, covered, stirring once or twice, until all vegetables are tender, about 10 minutes.

1 teaspoon olive oil
1 large clove garlic, chopped
1 cup no-salt-added chicken stock
1 tablespoon white wine (or dry sherry)

Steps:

  • Wash the greens and remove tough stems. Cut or break greens into 2-inch lengths.
  • Heat a nonstick pan over high heat; reduce heat to medium-high, add the oil and sauté the garlic for 30 seconds. Add the greens, and sauté for 1 minute.
  • Stir in the stock, Sherry and hot pepper flakes; cover, and cook 8 to 10 minutes, until greens are soft.

1 large onion, finely chopped

4 to 5 cups finely chopped beets greens, including stems
1 cup water or low-sodium canned chicken broth
1/4 teaspoon Garam Masala

Steps:

  • 1. Heat 2 tablespoons oil in a large nonstick skillet over medium-high heat and add the cumin seeds they should sizzle upon contact with the hot oil. Quickly add the onion and cook, stirring until golden, about 7 minutes. Add the ginger and garlic and stir about 1 minute.2. Add the coriander, cumin, and salt, stir 1 minute, then mix in the beet greens and water (or broth). Cover the skillet, reduce the heat to medium, and cook, stirring a few times, until the greens are soft and most of the water has evaporated, about 15 minutes.3. If you haven't roasted beets before, you're in for a treat. Although they take a bit more time, it's well worth it; roasting intensifies their sweet, earthy flavor.

2 bunches beets (3 to 4 pounds with greens), greens removed, chopped, washed, and drained with some water clinging (about 9 cups greens)
2 pork tenderloins (12 ounces each), trimmed of excess fat
Coarse salt and ground pepper
4 tablespoons olive oil
2 teaspoons Dijon mustard
2 teaspoons plus 1 tablespoon red-wine vinegar
2 garlic cloves, smashed
2 tablespoons toasted pine nuts

Steps:

  • Preheat oven to 400 degrees. Loosely wrap beets in a 12-by-20-inch piece of foil. Place on a rimmed baking sheet and bake until easily pierced with a knife, 35 to 45 minutes. When cool to touch, grab beets with a paper towel and slip off skins. Reserve one beet; halve and slice remaining beets. Set aside.
  • Season pork generously with salt and pepper. Place on a rimmed baking sheet and roast until pork registers 150 degrees on an instant-read thermometer, 14 to 16 minutes.
  • Meanwhile, in a food processor, combine the reserved beet and 1 tablespoon oil; process until smooth. Strain through a fine-mesh sieve (or strainer) lined with cheesecloth into a small bowl to yield 4 teaspoons juice; discard solids. Add mustard, 2 teaspoons vinegar, and 2 tablespoons oil; whisk to combine. Set aside.
  • In a large skillet, heat remaining tablespoon of oil over medium. Add garlic and cook until fragrant and golden, about 1 minute. Add beet greens, season with salt and pepper, and cook, stirring occasionally, until wilted and tender, 2 to 4 minutes. Remove greens from heat and discard garlic. Add reserved beets and remaining tablespoon of vinegar, and toss to combine.
  • To serve, top sauteed greens with toasted pine nuts. Drizzle a little of the beet vinaigrette on the plate and top with sliced pork.
