Discovered this recipe years ago and is a family favorite. It is a great recipe for beginning cooks because it is very easy with tasty results! For a variation, try other herbs rather than rosemary such as sage, tarragon or thyme.

2 1/2 lbs boneless skinless chicken breasts
salt
fresh ground pepper
1 1/2 teaspoons dried rosemary
1/2-1 lb sliced bacon

Steps:

  • Heat the oven to 425°F.
  • Cut chicken breasts into 4-6 ounce pieces.
  • Sprinkle the chicken with salt and pepper.
  • Wrap a slice of bacon around each piece of chicken and place in baking dish.
  • Sprinkle with rosemary.
  • Roast for 15 minutes at 425°F.
  • Reduce heat to 375°F and continue roasting until done. It won't take long--be careful not to over cook chicken (chicken is done when juices run clear when pierced).

1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup all-purpose flour
5 bacon strips, chopped
1 tablespoon butter
4 garlic cloves, thinly sliced
1 tablespoon minced fresh rosemary or 1 teaspoon dried rosemary, crushed
1/8 teaspoon crushed red pepper flakes
1 cup reduced-sodium chicken broth
2 tablespoons lemon juice

Steps:

  • Pound chicken breasts slightly with a meat mallet to uniform thickness; sprinkle with salt and pepper. Place flour in a shallow bowl. Dip chicken in flour to coat both sides; shake off excess., In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 2 tablespoons in pan. Cook chicken in butter and reserved drippings 4-6 minutes on each side or until a thermometer reads 165°. Remove and keep warm., Add garlic, rosemary and pepper flakes to skillet; cook and stir 1 minute. Add broth and lemon juice; bring to a boil. Cook until liquid is reduced by half. Return chicken and bacon to skillet; heat through.

½ (8 ounce) package cream cheese
6 slices bacon, or as needed
1 (10.75 ounce) can condensed cream of chicken soup

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Spread chicken thighs out flat and pound if necessary with a meat mallet. Spread cream cheese across each thigh. Roll up chicken thighs, tucking in the sides. Wrap each chicken roll with at least 1 slice of bacon and secure with a skewer.
  • Place chicken rolls in a deep casserole dish. Pour entire can of condensed cream of chicken soup over the chicken rolls. Cover dish with aluminum foil .

4 skinless, boneless chicken breast halves

  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.

3 slices bacon
1 tablespoon olive oil
1 tablespoon butter
¼ teaspoon minced garlic, or to taste
1 pound bone-in, skinless chicken thighs
sea salt and freshly ground black pepper to taste
½ cup chicken broth
½ cup tomato paste
½ cup white wine
¼ sprig minced fresh rosemary, or to taste
1 tablespoon all-purpose flour

Steps:

  • Place bacon in a large frying pan and cook over medium-high heat, turning occasionally, until evenly browned and crisp, about 10 minutes. Drain bacon slices on paper towels and snip into bits.
  • Drain bacon grease from the pan and add olive oil and butter to the same pan. Add garlic and brown slightly over medium heat, 1 to 2 minutes. Add chicken, salt, and pepper; brown until chicken is staring to crisp but is not too done, about 8 minutes. Remove chicken and drain on a paper towel.
  • Drain most of the oil and butter from the pan, leaving just a small amount for flavor. Add chicken broth, tomato paste, wine, and bacon bits; bring to a boil.
  • Remove a small amount of boiling liquid to a bowl and stir in flour. Pour back into the skillet and whisk until it thickens, 2 to 3 minutes. Stir in rosemary. Reduce heat to low and return chicken thighs to the skillet. Cover and simmer until chicken is no longer pink at the bone and the juices run clear, 20 to 30 minutes. 3 Red Delicious apples, peeled cored and chopped
4 garlic cloves, chopped
1 cup red wine vinegar
1 cup brown sugar
4 boneless skinless chicken thighs
salt and pepper
1/4 cup water
liquid smoke
1/2-1 lb bacon
2 tablespoons olive oil

Steps:

  • Preheat oven to 450 degrees.
  • place the red wine vinegar in a sauce pan over medium high heat and add in the brown sugar. Bring to a boil. Reduce heat and then simmer while other ingredients are being prepared.
  • Peel and dice 4 cloves of garlic. Add to the vinegar and brown sugar mixture.
  • Dice the bacon into 1/4-1/2" pieces and place it in a frying pan. Cook until crisp and then drain and set aside.
  • Combine the chopped apples and bacon to the vinegar and brown sugar mixture and return to a boil, then cover and reduce heat to simmer for 30 minutes.
  • Cut red potatoes into quarters or however you prefer based on size of potatoes. Place them in a baking dish and drizzle lightly with olive oil and season with salt and pepper to taste. Place in the oven for 20 minutes or until done.
  • Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Season chicken thighs with salt and pepper to taste. Place chicken thighs in heated skillet and cook for 7 minutes. Flip chicken and cook for another minute then reduce heat to low and cover, letting the chicken braise in the oil and juice for the next 10 minutes.
  • Plate the chicken, top with chutney and place a few red potato wedges along side it and enjoy!

1 lb chicken thigh
1 large leek
1/2 cup uncooked quinoa
4 ounces cremini mushrooms
2 ounces shiitake mushrooms
2 garlic cloves
1 1/2 teaspoons fresh rosemary
1 1/2 teaspoons fresh sage
1 tablespoon all-purpose flour
1/2 cup dry white wine
1 cup low sodium chicken broth
2 tablespoons heavy cream
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cook Quinoa according to normal instructions (2 to 1 water to quinoa, boil, then simmer for roughly 20 minutes or until done. Set aside to serve under the chicken and gravey.
  • Heat a 12-inch cast-iron pan or braiser over medium-high heat. Season the chicken pieces well with salt and pepper.
  • Place skin-side down in the skillet and cook, without disturbing, until golden brown on the skin side, about 5 minutes. Remove chicken to a plate.
  • Pour off all but two tablespoons of fat from the pan. Reduce heat to medium.
  • Add the leeks, mushrooms, garlic, rosemary and sage and cook, stirring often, until all the veggies have softened and substantially reduced in volume, 5-10 minutes.
  • Add flour and cook, stirring constantly, for a minute or two.
  • Stir in the wine, chicken stock and cream and bring to a boil.
  • Add browned chicken, skin-side up, and any juices that have accumulated on the plate. Adjust heat to keep liquid at a simmer, and cook until chicken is done all the way through, about 45 minutes.

4 chicken thighs, on the bone with skin
2 stalks celery, chopped in big pieces
2 large carrots, chopped in big pieces (or some mini carrots cut in half)
1 large onion (chopped in big pieces)
3 garlic cloves, peeled and whole
1 (16 ounce) can chicken stock
2 tablespoons oil
1 (28 ounce) can crushed tomatoes
1/2 cup water

Steps:

  • Heat oil in dutch oven over medium-high heat on stovetop. Put salt and pepper on chicken thighs and place in dutch oven (skin side down first) cook until each side has nice color on it (about 4 minutes each side). Take chicken out and put on a plate. Put a tbsp more oil in dutch oven and turn down to medium heat. Put carrots, celery, onion and garlic in and cook for 8 minutes or until onions are almost translucent. Add Chicken Stock, tomatoes and water and stir until they come to a boil. Put Chicken back in the pot so it is submerged in juices. Put lid on the dutch oven and cook @350 degrees for 2 hours 15 minutes and then turn oven off but leave the dutch oven in the oven for about 1 hour or more (it continues to cook). Remove pot from oven and serve over pasta-tastes good with egg noodles (chicken should be falling off the bone).
