2 pounds red potatoes, quartered
1 pound carrots, halved and cut into 2-inch pieces
1 medium onion, cut into wedges
1 tablespoon olive oil
2 teaspoons dried rosemary, crushed
1 teaspoon rubbed sage
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 450°. Place the pork in a shallow roasting pan coated with cooking spray; arrange the potatoes, carrots and onion around pork. Drizzle with oil. Combine the seasonings; sprinkle over meat and vegetables. , Bake, uncovered, 25-35 minutes or until a thermometer reads 145° and vegetables are tender, stirring vegetables occasionally. Remove pork from oven; tent with foil. Let stand 5 minutes before slicing.

2 pounds pork shoulder, cut into 6 large chunks
Salt and freshly ground black pepper
2 tablespoons olive oil
1 onion, chopped
2 celery stalks, chopped
1 carrot, chopped
1 clove garlic, roughly chopped
2 tablespoons tomato paste
2 tablespoons all-purpose flour
1 cup red wine
1 1/2 cups beef stock or broth
1 bunch parsley stems, tied with string
2 bay leaves
1 cup water

Steps:

  • Preheat the oven to 325 degrees F. Pat the pork dry with paper towels and season with salt and pepper.
  • In a large Dutch oven, heat the olive oil over medium-high heat, and working in batches brown the meat on all sides until a golden crust forms. Transfer the pork to a plate. To the pan add the onion, celery, and carrot and sweat until softened, 5 to 7 minutes. Add the garlic and sweat another 2 minutes. Stir in the tomato paste and cook for 3 minutes to cook off the raw flavor and caramelize it. Sprinkle with the flour and cook another 2 minutes to cook off its raw flavor. Whisk in the wine and reduce it by half. Return the pork to the Dutch oven, then stir in the beef stock, parsley stems, and bay leaves. Add the water if liquid does not come up to the top of the pork. Do not cover the pork with liquid. Cover the pan and place it in the oven to braise until the meat is fork tender, about 3 hours. Taste and season with more salt and pepper, if needed. Transfer to a serving platter and serve.

1 teaspoon salt
½ teaspoon black pepper
2 tablespoons vegetable oil

3 cups whole milk

Steps:

  • Season pork loin with salt and pepper. Heat oil and butter in a large pot over medium-high heat and brown pork loin on all sides. Slowly pour the milk in with the pork. Stir in the rosemary and garlic. Allow the milk to come to boil, then lower the heat to medium-low. Partially cover with the lid and cook until the pork is no longer pink in the center, about 1 hour and 45 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C). Remove pork and set aside to rest.
  • If the milk is not already a nutty brown color, increase the heat until the milk beings to brown. Spoon off any additional fat. Pour the water into the pan, and bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Slice the pork and serve with the milk sauce.

3 tablespoons vegetable oil
1 (5 pound) boneless pork loin roast
3 cups chopped onion
5 carrots, chopped
1 (12 fluid ounce) can or bottle beer
2 teaspoons salt
¼ teaspoon ground black pepper
1 bay leaf
4 whole cloves

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Heat vegetable oil a heavy pot or dutch oven over medium-high heat. Sear pork in hot oil until brown on all sides, about 10 minutes. Remove roast from pot.
  • Drain all but about 3 tablespoons grease from pot. Cook and stir onion and carrots until softened, about 5 minutes.
  • Stir beer, salt, pepper, bay leaf, and cloves into the onion mixture.
  • Return pork roast to the pot and cover.
  • Bake in the preheated oven until pork is tender and no longer pink in the center, about 2 hours.
  • Transfer roast to a platter and cover loosely with aluminum foil. Remove bay leaf from vegetables.
  • Pour the beer and vegetable mixture from the Dutch oven into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel and carefully start the blender, using a few quick pulses to get the vegetables moving before leaving it on to puree until smooth.
  • Bring pureed sauce to a boil in a saucepan over medium-high heat until thickened, stirring often, about 5 minutes. Spoon sauce over pork roast to serve.

2 Tbsps vegetable oil
150 milliliters dry white wine
8 shallots
4 garlic cloves
2 Tbsps Lime blossom honey
1 Tbsp lemon juice

Steps:

  • Preheat the oven to 160°C (approximately 325°F).
  • Rinse the meat and pat dry. Heat oil in a roasting pan. Season pork with salt and pepper and brown on all sides in the roasting pan. Add the white wine and remove from the heat.
  • Peel shallots and press the garlic. Distribute around the pork, cover and braise in the oven for about 15 minutes. Then remove the lid and braise for another 20-25 minutes. As needed, pour in some water to prevent scorching. Baste the meat occasionally with cooking liquid. During the last 10 minutes of braising, mix the honey with the cooking liquid and baste the meat with it.
  • If desired, garnish pork with dried lime blossoms before serving.

A tender pork loin roast slow cooked with a handful of root vegetables with a cream gravy finish. I created this recipe using simple braising techniques and matched early spring late winter vegetables that are available year round.

18 ounces pork tenderloin
3/4 cup carrot
3/4 cup celery
1 cup button mushroom
2 minced garlic cloves
1/2 cup yellow onion
1/4 cup shallot
1/4 cup leek
16 ounces chicken stock or 16 ounces vegetable stock
3/4 cup white wine
1 tablespoon cornstarch
1/2 cup heavy cream

Steps:

  • For Best results for this recipe purchase a permarinated and seasoned tenderloin available in your grocery. For this recipe I chose a lemon garlic herb preseasoned tenderloin. However you may use any type but it should be marinated.
  • Julienne carrots and celery, mince garlic and prepare shallots, onion by chopping. Leaks may be cut into one to two inch segments or chopped as you prefer.
  • In a Dutch Oven heat olive oil on medium high until hot. Carefully add tenderloin and brown on all sides. Remove and set aside.
  • Remove any excess oil reserving enough to saute vegetables. Add Garlic, onion and Shallot and saute stirring frequently until translucent.
  • Add carrots and celery to onion garlic mixture and stir frequently approximately 3 minutes.
  • Add the leak and saute another 2 minutes.
  • Add button mushrooms. You will notice some liquid from the vegetables. Stir frequently for another 2 to 3 minutes.
  • Deglaze with 3/4 cup of wine. If desired you may also use chicken stock (low sodium) with 1 tablespoon of your favorite wine vinegar. I recommend for this recipe a white whine vinegar however you may use any flavor you like.
  • Return the browned tenderloin to the Dutch Oven then add Stock until vegetables and loin is almost covered. Add salt and pepper to taste. You may omit salt as the loin is naturally salty from brine.
  • Bring to a rolling or hard simmer and reduce heat and simmer approximately 15 minutes.
  • In a preheated 375 degree oven add the covered dutch oven and immediately reduce temperature to 275 degrees. Roast for one hour.
  • In one hour reduce oven heat to 225 degrees for two hours.
  • Remove from oven, then set roast aside, covered in foil to rest. With a slotted spoon remove the vegetables and set aside, covered.
  • On stove top at medium heat, bring stock liquid to a simmer.
  • While waiting for simmer to begin, whisk corn starch into cream and incorporate fully.
  • When simmer begins reduce heat to medium low and add the corn starch cream mixture stirring constantly until thickened. It should not take long to thicken depending the liquid volume and amount of corn starch. If needed add additional cornstarch incorporated into water or cream. Remove from heat and gravy will thicken as it cools.
  • Slice tenderloin and serve with gravy over meat or on the side.

3 pounds pork ribs, (country-style, all visible fat removed*)
Coarse salt (and freshly-ground black pepper to taste)
1/4 cup olive oil,
2 cups onions, (medium dice)
1 cup bell pepper, (medium dice)
1 cup celery, (medium dice)
4 to 6 fresh cloves garlic, (fine dice)
1/4 cup flour, (all-purpose)
2 cups chicken stock ((homemade preferred)**)
1 (14 1/2-ounce) can of diced tomatoes, (fire-roasted with juice)
1 tablespoon sage, (dried***)
2 sprigs thyme (leaves, fresh )
2 bay leaves
1 tablespoon Adobo Seasoning
1 tablespoon Ancho Chile Seasoning
5 to 8 young organic carrots, (washed, left whole)
5 to 6 small, whole chile peppers
1/4 cup parsley (leaves, fresh, chopped****)

Steps:

  • Heat olive oil in a large pot or cast iron Dutch oven over medium heat. Brown the pork ribs in batches (on both sides) to a nice golden brown. Do not crowd the pork ribs in the pan. Remove browned ribs to a plate and continue browning the remaining ribs. When all the pork ribs are browned; set aside on a plate until ready to use.
  • Add the onions, bell peppers, and celery to the hot pot and saute, scrapping up the browned bits from the bottom of the pan. When vegetables have softened, add garlic and saute approximately 1 minute until fragrant.
  • Add the flour to the pan, stirring with a wooden spoon or heat resistant spatula, to combine the vegetables and flour. Cook and stir for approximately 2 minutes.
  • Add and stir in the chicken stock, diced tomatoes, browned pork ribs, sage, thyme, and bay leaves. Simmer 1 1/2 hours, stirring occasionally, and scrapping the bottom of the pan to prevent sticking.
  • Season with the Adobo Seasoning and Ancho Chile Seasoning. Add the carrots, and chile peppers on top of meat, and continue to cook for an additional 30 minutes, stirring and scrapping the bottom of pan a couple of times. Meat should be tender and beginning to fall away from the bones. Taste and adjust seasonings if desired, and add additional salt and pepper if needed; stir and simmer for approximately an additional 5 minutes.
  • When removing meat, use a large spatula or spoon, trying to keep the meat and bone fairly intact, if you want to make a pretty presentation. Remove meat and vegetables to individual plates, place the whole carrots and chile peppers on top, and sprinkle with parsley. Be sure to remove bay leaves from the dish, as you find them, and discard.
  • The resulting juices from this recipe make a wonderful sauce for pasta, mashed potatoes or rice.
  • Makes 4 servings.

1 cup frozen petite whole onions
1 141/2-ounce can low-salt chicken broth

  • Melt butter in large deep skillet over medium-high heat. Add pork; brown on all sides, about 5 minutes total. Add parsnips, squash, onions, broth, and thyme; bring to boil. 3 cups onion (chopped)
4 to 6 carrots (pared and diced)
12 ounces beer (dark)
2 teaspoons salt
1/4 teaspoon pepper
1 bay leaf
4 cloves (whole)

Steps:

  • Gather the ingredients.
  • In a large Dutch oven or oven-safe roasting pan, coat the bottom with vegetable oil and bring the temperature up to high. Brown the pork loin roast in the hot oil on all sides. Remove the pork roast from the pan. Drain all but 3 tablespoons of fat from pan.
  • In the pan, sauté onions and carrots in the pan drippings until softened. Stir in beer, salt, pepper, bay leaf, and whole cloves.
  • Return the pork to the pan or Dutch oven and cover tightly with aluminum foil. Bake at 350 F for 2 hours or until the pork is tender. Check with a meat thermometer in the thickest part of the roast. It should be at least 145 F.
  • Place the pork loin on a serving platter and keep it warm.
  • Pour the cooking liquid from pan into a large bowl; skim off fat and remove the bay leaf.
  • Place the liquid with the vegetables into a blender; cover and process at low speed until smooth. Or press through sieve or process in a food processor in batches.
  • Pour the processed beer sauce into a saucepan. Bring to a boil, stirring often.
  • Slice the pork roast. Spoon the sauce over the sliced pork to serve. Cover and refrigerate any leftover pork roast. You can also refrigerate leftover sauce and reheat it in the microwave to serve. You may have seen older guidelines about the safe temperature for cooking pork roast. The United States Department of Agriculture (USDA) updated safety recommendations for pork in 2011 to lower the target temperature to 145 F. At this temperature, the pork loin might be a little pink in the middle, but it is safe. As a bonus, it won't be overcooked and dried out.

2 -3 lbs boneless pork loin
8 fresh sage leaves, plus some
fresh sage leaf, for garnish
salt & pepper
3 tablespoons unsalted butter
1 tablespoon olive oil
2 garlic cloves, left whole
1 bay leaf
1/2 cup dry white wine
2 tablespoons balsamic vinegar
2 tablespoons all-purpose flour

Steps:

  • Trim excess fat from pork.
  • Tie with butchers string.
  • Put 3 sage leaves on top and 3 on the bottom of roast under string.
  • Rub the meat with salt & pepper.
  • In a dutch oven, on med-high heat, melt butter and oil, when hot add the pork and sear quickly on all sides, 5 minutes or so. The sear is very important. Reduce heat to med-low and add garlic (whole) 1-2 minutes transfer meat and garlic to plate, pour off fat.
  • Return meat to pan( with garlic) and bay leaf.
  • Add 1/2 cup wine, vinegar, and 2 more sage leaves.
  • Cover tightly, reduce to low, simmer for 2 hours turning 1/2 way through cooking, add more wine if needed.
  • Let meat rest covered in foil.
  • Meanwhile, discard bay,garlic,and sage from pan.
  • Skim fat off (you need about 1 cup of liquid, add water if needed.
  • Melt 1 tbsp butter into separate pan add flour and cook 1-2 minutes add pan juices whisking constantly until thick and smooth.
  • Arrange meat on platter, spoon sauce over top and garnish with sage leaves.
