Steps:
- Spread 8 slices of bread with 1 tablespoon of mustard.
- Place one 1-ounce slice of Swiss cheese on eight of the slices of bread.
- Divide the sausage into eight portions and distribute evenly on the eight cheese-topped bread slices.
- Top the sausages with the remaining Swiss cheese.
- Close the sandwiches with the remaining eight slices of bread.
- Brush the outsides of each sandwich with melted butter or spray with cooking spray.
- Cook in a panini or other sandwich press; OR cook in a nonstick saute pan set on medium heat (weight each sandwich with a cake pan holding a 28-ounce can; cook on one side until golden brown, remove the weight, turn the sandwich, and cook on the second side until golden brown and the cheese melts).
- Slice each sandwich in half and serve with soup or chips.

Steps:
- Preheat an electric panini maker according to the manufacturer's instructions.
- Brush one side of each bread slice with melted butter.
- Lay the slices, buttered side down, on a clean work surface.
- Place 2 slices of cheese on each of 2 bread slices.
- Top each with one of the other bread slices, buttered side up.
- Place the sandwiches on the preheated panini maker and cook according to the manufacturer's instructions until the bread is golden and the cheese is melted, 3 to 5 minutes.
- Transfer the sandwiches to a cutting board and cut in half.
- Serve immediately.

- Preheat panini grill to high.
- In a bowl, combine the pimentos, Cheddar, Monterey Jack, mayonnaise, pepper, salt, garlic powder, and paprika; taste and adjust seasoning, if needed.
- Brush one side of each bread slice with butter.
- Place two slices on a work surface, buttered side down, and spread evenly with pimento cheese.
- Cover with top halves, buttered side up, and press gently to pack.
- Place sandwiches in grill, close the top plate and cook until golden brown, 3-4 minutes.

- Preheat grill pan or panini machine to medium heat.
- Spread center of each roll with 1 tablespoon mayonnaise. Assemble sandwiches with remaining ingredients, except butter. Season with salt and pepper.
- Spread small amount of butter on top and bottom of each roll; place sandwich either in pan on onto panini machine and grill. Cook 5 to 7 minutes.
- (If using a pan, press sandwich down with a pan lid. Cook sandwiches about 3 to 4 minutes on each side or until bread is toasted.)
- For mayonnaise: whisk all ingredients together in small bowl. Refrigerate until ready to use.
