Kids and adults will enjoy crafting and devouring this cheesy and delicious Brazi Bites Graveyard recipe.

1 16 oz can refried beans
2 cups sour cream
1 package taco seasoning
2-3 avocados, mashed
1 clove garlic, minced
2 T mayonnaise
1 cup salsa
1 bunch green onions, chopped
1 head iceberg lettuce, cut into pieces
Black olives, sliced
1 11.5 oz bag Brazilian Cheese Bread, thawed

Steps:

  • PREHEAT OVEN TO 400° F
  • In a small bowl mix together the sour cream and taco seasoning.
  • In a separate bowl mix together the mashed avocados, garlic and mayonnaise.
  • In a small dish or plate begin the layering. First layer the beans, then the sour cream mixture, then the avocado mixture and then the salsa. Sprinkle lettuce pieces, scallions and olives on top.
  • Refrigerate at least one hour.
  • With oiled hands, knead together 2-3 Brazilian Cheese Bread. Roll until thin and use a cookie cutter for your desired shape.
  • Repeat until you have the desired amount and shapes you want.
  • Cook on a sheet pan at 400° F for 10 minutes or until golden. Place in the graveyard dip and enjoy!!

These yummy gluten/wheat free breads are good for those with Celiac disease or gluten intolerance. These are good either served plain, or with marinara sauce. For more variety, try adding a variety of herb seasonings, such as Italian seasoning or try substituting other cheeses for the Parmesan.

½ cup olive oil or butter
⅓ cup water
⅓ cup milk or soy milk
1 teaspoon salt
2 cups tapioca flour
2 teaspoons minced garlic
⅔ cup freshly grated Parmesan cheese
2 beaten eggs

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Pour olive oil, water, milk, and salt into a large saucepan, and place over high heat. When the mixture comes to a boil, remove from heat immediately, and stir in tapioca flour and garlic until smooth. Set aside to rest for 10 to 15 minutes.
  • Stir the cheese and egg into the tapioca mixture until well combined, the mixture will be chunky like cottage cheese. Drop rounded, 1/4 cup-sized balls of the mixture onto an ungreased baking sheet.
  • Bake in preheated oven until the tops are lightly browned, 15 to 20 minutes.

  • Preheat the oven to 400 F/205 C. Shred the cheese if necessary or buy pre-shredded cheese. Place all the ingredients in a blender and blend for 1 to 2 minutes until mixed well.
  • Spray a mini-muffin pan with cooking spray, then fill up each cavity near the top, with the batter. You should be able to get 24 of them.
  • Place the pan on the middle rack, and bake them for 20 to 23 minutes until they puff up and get slightly golden brown. The bottoms in the cavities of the pan will be a little browner than the tops.Remove them from the oven and allow them to cool for about 5 minutes in the pan.
  • Remove them from the pan and place them on a wire rack to cool completely. These are nice and chewy and cheesy and oh so delicious. Enjoy!
