- Thaw bread dough.
- Preheat oven to 375 degrees F (190 degrees C).
- Divide bread dough into fourths. Roll each fourth into an 8 inch circle.
- Brush the back of 4 oven-safe bowls with oil or cooking spray. Place bowls upside down on a baking sheet. Place dough circles on bowls. Brush edge of dough with water and fold it back into a "hem" to make a bowl rim.
- Bake at 375 degrees F (190 degrees C) for 18 to 20 minutes.

- In a small bowl, dissolve yeast in warm water. In a large bowl, combine sugar, salt, yeast mixture and 3 cups flour; beat on medium speed 3 minutes. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover with a kitchen towel and let rise in a warm place until doubled, about 30 minutes., Preheat oven to 500°. Punch dough down. Divide and shape into 6 balls. Place 3 in. apart on 2 baking sheets that have been generously sprinkled with cornmeal or greased. Cover with a kitchen towel; let rise in a warm place until doubled, about 15 minutes. Spray loaves with water; if desired, generously sprinkle with sesame seeds. Using a sharp knife, score surface with shallow cuts in an "X" pattern. Bake 2 minutes. Reduce oven setting to 425°. Bake until golden brown and internal temperature reaches 190°-200°. Remove from pans to wire racks to cool completely., Cut a thin slice off the top of bread. Hollow out bottom portion of loaf, leaving a 1/2-in. shell. Discard removed bread or save for another use, such as croutons.

- Slice the top of the bread boule off and remove the insides.
- Spread ½ cup (130 G) of the marinara on the bottom of the boule, then layer with half of the mozzarella, 5 ounces (140 G) of the pepperoni, onions, basil, sausage, peppers, the other ½ cup (130 G) of marinara, the remaining mozzarella, and half of the white cheddar, and place the cap of the bread boule on top.
- Wrap the bread bowl in foil, then press with a heavy object for 30 minutes.
- Preheat oven to 350°F (175˚C).
- Remove the foil and sprinkle the remaining cheddar and pepperoni on top. Bake for 30 minutes, until cheese is golden brown.
- Cool for 10 minutes and slice.

EASY BREAD BOWLS

- Lightly grease outsides of six 10-ounce custard cups with shortening (do not use cooking spray). Place cups upside down on large cookie sheet.
- Divide dough into 6 equal pieces. Shape each piece into a ball, then pat into 6- inch round. Place rounds over bottoms of custard cups. Brush dough with oil. Sprinkle with basil and garlic salt. Cover and let rise in warm place 20 minutes.
- Heat oven to 350°. Bake 16 to 20 minutes or until golden brown. Cool 5 minutes; remove from cups and place right side up on wire rack. (Interiors of bread bowls may be slightly moist.)
- To serve, place warm or cooled bread bowls in individual shallow soup or pasta bowls. Spoon soup, stew or chili into bread bowls.

ITALIAN BREAD BOWLS
These cute little bread bowls are a great way to serve soup in the wintertime. I usually serve a hearty potato soup when I have the time to bake them. They freeze for up to 1 month, if desired.

- In a large bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
- Add salt, oil and 4 cups flour to the yeast mixture; beat well. Stir in the remaining flour, 1/2 cup at a time, beating well with an electric mixer at medium speed after each addition.
- When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 6 minutes. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 40 minutes.
- Punch dough down, and divide into 8 equal portions. Shape each portion into a 4 inch round loaf. Place loaves on lightly greased baking sheets sprinkled with cornmeal. Cover and let rise in a warm place, free from drafts, until doubled in bulk, about 35 minutes.
- Preheat oven to 400 degrees F (200 degrees C). In a small bowl, beat together egg white and 1 tablespoon water; lightly brush the loaves with half of this egg wash.
- Bake in preheated oven for 15 minutes. Brush with remaining egg mixture, and bake 10 to 15 more minutes or until golden. Cool on wire racks.
- To make bowls: Cut a 1/2 inch thick slice from top of each loaf; scoop out centers, leaving 3/4-inch-thick shells. Fill bread bowls with hot soup and serve immediately.

ARTISAN BOULE BREAD
First, don't let the long list of instructions turn you away . . . it's very simple! This is my version of Artisan Bread in Five Minutes a Day (by Jeff Hertzberg and Zoe Francois), a revolutionary approach to bread baking. Actually it's a combination of Five Minute Bread and Cook's Illustrated Recipe #290761. Perfect answer to a busy life . . mix once and store in the refrigerator. (See list below of other uses for this recipe). When you're ready to bake take out the amount of pre-mixed dough needed and store the rest in the refrigerator for up to 10 days. The flavor will be similar to sourdough, developing more intensely over the days of storage. Preparation time indicated does not include pre-fermentation time, which can vary from 3 hours to 10 days. Special equipment needed: Large (5 - 6 qt.) plastic container with lid (not air tight) and a baking stone or a 5 qt. dutch oven (depending on your choice of baking methods). I've found that it's best to line a basket or bowl with parchment paper; let the bread rise, and then back in a preheated dutch oven. Note that the beer used in this recipe must be a lager; DO NOT USE AN ALE as they use a different type of fermentation. Do not use glass jars with screw tops (they could explode from the trapped gases).Lidded plastic buckets designed for dough storage are readily available -- I purchased mine through King Arthur Flour. - Mixing and Storing the Dough:.
- Note: If measuring flour rather than weighing, don't press down into the flour as you scoop it in with dry-ingredient measuring cups, By gently scooping up flour, then sweeping the top level with a knife or spatula.you willl get a more accurate measurement.
- In large plastic storage container (with lid) mix together the flour, yeast and salt.
- Add all the liquid at once and mix with a wooden spoon.
- If mixing becomes too difficult to incorporate all the flour with the spoon, reach into the mixing bowl with very wet hands and press the mixture together. Note: kneading isn't necessary.
- When everything is uniformly moist without dry patches your mixing is complete. This should take only a few minutes.
- The dough will be wet and loose enough to conform to the shape of its container.
- Cover with a lid (not airtight) that fits well on the container. Allow the mixture to rise at room temperature until it begins to collapse, or at least flattens on the top, about 2 hours, depending on the room's temperature and the initial water temperature. Longer rising times, up to about 5 hours, will not harm the result.
- You can use a portion of the dough anytime after this period. Fully refrigerated wet dough is less sticky and easier to work with than dough at room temperature. So the first time you try this method, it's best to refrigerate the dough overnight, or at least 3 hours, before shaping a loaf.
- The breads flavor improves with the retardation, so suggest you wait at least 24 hours before baking the first loaf! Dough may be stored in the refrigerator for up to 10 days.
- To bake Boule (Round Loaf):.
- First, prepare a pizza peel by sprinkling it liberally with cornmeal to prevent the loaf from sticking (or use parchment paper).
- With wet hands, pull up one end of the refrigerated dough. Using a serrated knife, cut off a 1-pound, or grapefruit-size, piece of dough. Hold the mass of dough in your hands; if it sticks, add a little flour until the dough no longer sticks to your hand. Gently stretch the surface of the dough on all four sides, rotating the ball a quarter-turn as you go. Most of the dusting flour will fall off. The bottom of the loaf may appear to be a collection of bunched ends, but they will flatten out during resting and baking. The dough ball should be smooth and cohesive and take no more than 30 to 60 seconds to shape.
- Now it's decision time, which method to use for baking.
- COVERED POT METHOD:.
- Cover loosely with plastic wrap and let rise at room temperature until dough has doubled in size and does not readily spring back when poked with finger, about 60 - 90 minutes.
- About 30 minutes before baking, adjust oven rack to lowest position, place 6- to 8-quart heavy-bottomed Dutch oven (with lid) on rack, and heat oven to 450 degrees. Lightly flour top of dough and, using razor blade or sharp knife, make one 6-inch-long, 1/2-inch-deep slit along top of dough.
- Carefully remove pot from oven and remove lid.
- Pick up dough by lifting parchment overhang and lower into pot (let any excess parchment hang over pot edge).
- Cover pot and place in oven.
- Reduce oven temperature to 425 degrees and bake covered for 20 minutes.
- Remove lid and continue to bake until loaf is deep brown and instant-read thermometer inserted into center registers 200 degrees, 10 to 15 minutes longer.
- Carefully remove bread from pot; transfer to wire rack and cool to room temperature, about 2 hours.
- BAKING ON GRILL:.
- First make a 'pillow' of aluminum foil and place in the bottom of the pot. This prevent the bottom from burning. To assure that the bottom does not burn, I also place the pot on a heat diffuser. Preheat the grill and pan to 450 degrees . . . from here follow the oven directions above.
- BAKING ON STONE::.
- Place the shaped ball on the prepared pizza peel (or parchment paper), cover and allow to rest 60 - 90 minutes.
- Place a baking stone on the lowest rack of the oven.
- Place an empty broiler tray (I use my cast-iron skillet) on an oven shelf, making sure it will not interfere with the rising bread as it bakes.
- Preheat oven to 450 degrees 20 minutes before baking.
- Spray top of dough with cold water (which allows a knife to slash through the dough without sticking). Use a serrated bread knife to slash a 1/4-inch-deep cross or tic-tac-toe pattern onto the top.
- Slide the loaf off the pizza peel onto the preheated baking stone using a quick, forward jerking motion. If using parchment just lift off peel and place on stone.
- Pour 1 cup hot water into the broiler tray and close oven door to trap steam.
- Bake about 30-35 minutes, or until the crust is nicely browned and sounds hollow when tapped.
- The loaf will crackle, or "sing," when initially exposed to room-temperature air.
- Allow to cool on a wire rack for best flavor, texture and easy slicing.
- Store remaining dough in the refrigerator in your lidded container and use during the next 10 days.

SOURDOUGH BOULE

- Mix the flour and 1 1/2 cups of the water in a large bowl until a shaggy dough forms. Cover the bowl with a lid or plate and let stand until the flour absorbs the water, 30 to 45 minutes.
- Add the sourdough starter, salt and remaining 3 tablespoons water to the dough. Squeeze and twist with your hands until a sticky dough forms (it will be soupy at first, but continue mixing). Knead the dough in the bowl by scooping under the dough, stretching it up and twisting it while you rotate the bowl a quarter turn; slap down the dough and repeat. Continue kneading until the dough smooths out and pulls away from the bowl, 5 to 7 minutes. Scrape down the sides of the bowl and cover with a lid. Let rest in a warm place, 30 minutes.
- Uncover the dough. Gently reach under the dough with a wet hand, stretch it up as far as it will go without tearing, then fold the dough over itself. Rotate the bowl a quarter turn and repeat three times; this is a set of turns. Do another set of turns, then re-cover the bowl and return to a warm place to rest, 30 minutes.
- Do two sets of turns every 30 minutes until the dough has increased in size by one-third and has large bubbles in spots, 2 1/2 to 3 1/2 more hours, covering the bowl after each time. After the last set of turns, cover the bowl and let the dough rest another 30 minutes.
- Turn out the dough onto a generously floured work surface. Slide a bench scraper or large spatula underneath and fold the dough in half. Cup floured hands around the dough and gently roll it in a circular motion into a taut ball. Let rest, uncovered, 20 minutes (the dough will flatten a little).
- Line a medium bowl with a clean lint-free towel and dust generously with flour. Lightly dust the top of the dough with flour, then slide a bench scraper or large spatula underneath and flip it over. Working gently to not deflate the dough, pull each of the four "sides" of the dough up and into the center, folding the last side to cover the whole top of the dough. Roll the dough over so the seams are on the bottom. Slide a bench scraper or large spatula underneath and gently invert the dough into the towel-lined bowl with the seam up. Cover loosely with the overhanging towel. Let rest in the refrigerator, at least 8 hours and up to 18 hours.
- About 30 minutes before baking, place a 10- to 11-inch Dutch oven with a lid in the middle of the oven and place a baking stone or large cast-iron skillet on the bottom rack to absorb the heat; preheat to 450˚ F. Carefully remove the Dutch oven from the oven and uncover. Remove the dough from the refrigerator, uncover and lay a large round of parchment on top. Invert the dough onto the parchment. Carefully lower the dough (on the parchment) into the hot Dutch oven. Using kitchen shears or a sharp knife, make a few 1/4- to 1/2-inch-deep cuts in the top so that the dough can expand.
- Transfer the pot to the oven; cover with the lid. Bake until the bread has risen and the crust is pale, about 20 minutes. Uncover and bake until the crust is browned and crisp and a thermometer inserted into the center registers 210˚ F, 25 to 35 minutes. Let cool 10 minutes in the pot, then transfer to a rack to cool completely, about 2 hours.
FRESH BAKED BOULES

- Dissolve salt, sugar, and yeast in the warm water and allow the yeast to proof. ("Proofing" the yeast is testing it for viability. It will develop a foam which looks like the head of a beer. If it doesn't proof, the yeast is dead and should be discarded.) Proofing takes about 15 minutes. Place flour in a food processor fitted with a dough blade, and through the feed tube with the food processor running, slowly pour the proofed yeast mixture, until the dough comes together and is a cohesive mass. Transfer the dough to a floured board, and knead for about 5 minutes. Place in a bowl, cover with a clean dish towel and allow dough to rise, so that it roughly doubles in volume. (This will take about 30 minutes to 1 hour). The dough has risen enough if you make an indentation with your finger and it does not spring back.) Punch the dough down and allow it to rise again. (Allowing the dough to rise a second time gives it a finer texture.) Note: It will not rise as much the second time.
- Preheat oven to 400 degrees F.
- Divide the dough in half, and transfer half to a floured board and keeping the balance covered with the towel. Shape the dough into a circle by pulling from the side and pushing the dough under and up from the bottom to form a dome, rotating to make it circular. Cover with a piece of oiled plastic wrap and let rest 10 minutes. Repeat for each section of dough. Grease a round cake pan for each loaf and transfer dough to the pans. (This shape will keep the dough from flattening out while it bakes.) Brush with melted butter and bake until the crust is golden brown and crispy. When done, the bread should sound hollow when tapped, approximately 30 to 35 minutes. Remove from oven and let rest 10 minutes in pan. Remove from pan and serve warm or room temperature with butter.
BREAD MACHINE BREAD BOWLS
I've been finding that making bread bowls can be tricky because if you let them rise too long, they tend to flatten out. Try to stick to the timing as best you can. Use the 2lb. setting on your machine if you have the option.

- Place everything but the egg white in your bread machine in the order that your manufacturer recommends.
- Use dough cycle.
- When the cycle is complete, turn out onto a lightly floured surface. Divide into 6 equal portions and shape into balls.
- Place the 6 balls onto a greased cookie sheet and let rise until doubled, about 30 minutes.
- Brush with beaten egg white.
- Bake at 375 for 20-25 minutes until golden brown.
- Once done, you can cut the top off and scoop out the center leaving about 1/4 inch on all sides.

- Combine the water, yeast, and 1/2 teaspoon of the sugar in a small bowl. Stir just until the yeast is dissolved. Cover with a towel and let stand until the mixture is foamy, about 5 minutes.
