BREAD MACHINE PERFECT PIE CRUST
Steps:
- Put ice cubes in a glass or cup and fill with cold water. Do not sift flour. In the bread machine, put flour and salt and start the dough cycle. Measure and add the shortening, such as Crisco. Let the machine continue to mix until it seems granular, or half the size of peas, and then add the water 1 T at a time. When the humidity is high you will need less, otherwise in the winter when the air is dry, you will need it all. By adding it 1 T at a time lets you see where the dough is. If it seems not wet, then stop and let the machine finish rolling it to a smooth finish, you may need to use a rubber spatula to help it along or push it down to keep it rolling. When it seems smooth then take it out roll into 2 balls and wrap in plastic wrap or a cover container and put in fridge to chill. This makes crust for a 2 crust pie . If it seems not enough, use 1 1/2 recipe. Roll out onto a slightly floured board.Start in the middle of the dough and make a dent, then roll once forward and then towards you, turn half way and repeat this until it is uniform and the size for the pan. It should be a little larger than the pan.

BREAD MACHINE THIN CRUST PIZZA DOUGH
This is a great easy recipe for anyone to try with just basic ingredients. If you love a good thin crust that still has a nice chew to it, this recipe is for you.

- Pour the warm water into the pan of the bread machine, and add the flour on top of the water. Sprinkle with salt and sugar, and top with the yeast. Set the machine on the dough setting, and push the start button. When the machine signals that the dough is finished, transfer to a well-floured work surface.
- Preheat oven to 425 degrees F (220 degrees C).
- Roll or stretch the dough out into thin crust about 14 inches across. Leave dough thick at the edge. Place the dough onto a 14-inch pizza baking sheet, and brush the dough with the olive oil.
- Bake in preheated oven for 5 minutes before removing to top with desired ingredients for final baking.

FLAKY FOOD PROCESSOR PIE CRUST
This is a basic white flaky pie crust, made in the food processor. The secret to good crust is to have everything very cold and to handle it as little as possible. Use frozen or almost frozen lard, butter, and/or shortening as your fat and ice water, and then chill the dough well before rolling. Process the dough as little as possible and use only the amount of water needed to allow YOU to form it into a ball, not the machine.

- Measure the flour into the processor with the regular blade attached. Add the unsalted butter, cut into cubes, and shortening, cut into cubes. (Your fat should be frozen or very cold. You may vary the proportions, or use some lard, but the total should be 9 tablespoons.) Add salt. Pulse three times with three counts per pulse to lightly mix the ingredients.
- With the motor running, pour ice water into the workbowl just until the dough just starts to get noticeably crumbly. Don't wait until it is a big clump or it will be way too wet and will turn out tough.
- Stop the machine, dump the crumbly dough into a bowl, and gather the dough into a ball with your hand. you can squeeze it a bit to make it stick together. If it just won't form a ball, add a tiny bit more water. (Note that if you are making crust in the food processor, you will use less water than most recipes call for.)
- Wrap your dough ball in wax paper or plastic wrap and chill it about 30 minutes in the refrigerator. Roll it out on a cool surface if you can. Then follow your pie recipe for baking.
