Simple banana fritters are baked instead of fried, with a nice, sweet crunch.

⅓ cup dry bread crumbs
2 tablespoons dry shredded coconut
1 teaspoon white sugar
¼ teaspoon ground cinnamon
1 egg white
2 bananas, cut into bite-size pieces

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Combine bread crumbs, coconut, sugar, and cinnamon together in a bowl. Beat egg white in a small bowl until frothy. Dip each banana piece in egg white and press into bread crumb mixture. Place the breaded bananas on prepared baking sheet; do not stack.
  • Bake in preheated oven until golden brown, about 10 minutes.

This is based on a recipe from Madge Rosenberg's cookbook, The Best Bread Machine Cookbook Ever - Ethnic Breads. She says, "These fritters, similar to what we know as beignets, make inexpensive party food rich in natural fruit flavors. Children will enjoy munching these crispies with milk, but the big kids will eat their way through an endless supply with coffee or beer." My kind of fritters!

2 teaspoons active dry yeast
1 3/4 cups bread flour
1/2 cup whole wheat flour
2 tablespoons sugar
1/2 teaspoon salt
1/2 cup flaked coconut
1 cup banana, ripe and mashed
1 egg
1/4 cup milk
2 -4 cups vegetable oil, for frying
1/2 cup confectioners' sugar

Steps:

  • Add all the ingredients for the dough to your bread machine in the order suggested by the manufacturer and process on the dough cycle.
  • Remove the dough after the cycle ends and place on a lightly floured work surface.
  • With a floured rolling pin, roll out the dough into an 8-by-12-inch rectangle.
  • Cut into 2-inch squares.
  • Place on a nonstick or greased tray, cover, and let rise in draftfree area about 30 minutes.
  • Heat 1-inch of oil in a large saucepan or skillet until it reaches 365 degrees F on deep-frying thermometer.
  • Fry 3 or fritters at a time 10 to 15 seconds on one side until golden.
  • Carefully flip fritters and fry until lightly browned, 5 to 7 seconds.
  • Drain on crumpled brown paper bags or on several layers of newspaper covered with a sheet of paper towel.
  • Sprinkle confectioners' sugar over fritters.
  • Serve warm.

An absolutely delightful way to use up your surplus of bananas that you just can't help but purchase. It's quick, easy and disappears quickly.

3 overly ripe bananas (large)
1 cup all purpose flour
2 tsp baking powder
¾ tsp salt (or more to adjust to suit your preference)
1 tsp garlic
½ tsp ginger
1 tbsp paprika
½ - 1 tsp cayenne pepper (depending on your tolerance level)

Steps:

  • Mash plantains with a potato masher or spoon until puree or use a food processor to blend.
  • In a medium bowl add flour, baking powder, salt, garlic, paprika, ginger, cayenne pepper to the mashed plantains.
  • Adjust seasonings.
  • Let rest for 1 hour
  • Using your hands roll about a tablespoon of mixture in the palm of your hand into little bite size balls or use spoon to scoop it out.
  • Heat oil to 350 degrees in a skillet or saucepan. You may also use the oil test by dropping a 1-inch square of bread into the oil. If it takes 60 seconds to brown, then the oil is at around 350 degrees
  • Carefully place spoonful of the batter into the hot oil and fry for 3-4- minutes, or until the fritters are crisp and golden-brown (you may need to do this in batches).
  • Remove from the pan with a slotted spoon and set aside.
  • You may drain on paper napkin to remove any excess oil

1 large egg, room temperature
1 cup all-purpose flour
1/2 teaspoon baking soda

2/3 cup mashed ripe banana (about 1 medium)
1/2 cup chopped pecans

Steps:

  • Preheat air fryer to 325°. In a large bowl, cream butter and sugar until light and fluffy, 3-4 minutes. Beat in egg. In another bowl, whisk flour, baking soda and salt; add to creamed mixture alternately with banana, beating well after each addition. Fold in pecans., Transfer to a greased 8-in. round baking pan that will fit in the air fryer. Cover with foil. Cook 25 minutes. Uncover; cook until a toothpick inserted in center comes out clean, 8-10 minutes. Cool in pan on a wire rack for 10 minutes before removing from pan.

2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
¾ cup white sugar
3 tablespoons vegetable oil
2 eggs
2 bananas, peeled and halved lengthwise

Steps:

  • Place ingredients in the pan of the bread machine.
  • Select the Dough setting, and press Start. Mix the bread for 3 to 5 minutes until the bananas are mashed and all ingredients are thoroughly combined. If necessary, use a rubber spatula to push the dough from the sides of the bread pan. When 3 to 5 minutes have passed on the clock display, press Stop. Do not continue mixing. Smooth out the top of the loaf with the rubber spatula.
  • Select the Bake setting, and press Start. The Bake cycle time may vary with machines, but should be about 50 minutes. To test the bread for doneness, insert a toothpick into the center top. Remove the toothpick. If the bread is done, the toothpick will come out clean. If there is batter on the toothpick, reset the machine on Bake and continue to bake an additional 10 to 15 minutes. Test again with the toothpick to ensure the bread is completely baked. Remove the pan from the machine, but allow the bread to remain in the pan for 10 minutes. Remove the bread to cool completely on a wire rack.

2 eggs, lightly beaten
1/2 cup cold milk
3 tablespoons light brown sugar
1 cup flour
1 pinch baking soda
4 ripe bananas, sliced diagonally into 1/4-inch pieces
2 tablespoons confectioners' sugar
peanut oil, for frying

Steps:

  • Heat 3 inches of oil in a heavy saucepan or deep fryer to 375 degrees.
  • Mix the eggs, milk, brown sugar, flour, and baking soda together in a medium-sized bowl.
  • Add the banana slices a few at a time, coating them well with the batter.
  • With a long slotted spoon remove the banana slices a few at a time and place them into the oil.
  • Fry the bananas for 2 to 3 minutes, until lightly browned, turning them once. Drain them on paper towels and transfer them to a serving platter.
  • Repeat the process until all of the bananas have been fried.
  • Sprinkle them with the confectioners' sugar and serve warm.

1 1/2 cups all-purpose flour
6 tablespoons sugar
3 eggs
1 cup milk
5 bananas (about 1 pound)
oil, for deep frying
powdered sugar, for topping

Steps:

  • In a deep mixing bowl, stir the flour and sugar together and, with a whisk, beat in the eggs one at a time. Whisking constantly, add the milk, about 1/3 cup at a time and continue to beat until the batter is smooth and elastic enough to stretch like a ribbon from the beater when it is lifted up out of the bowl.
  • Peel the bananas, chop or slice them coarsely, and drop them into a shallow bowl. With the tines of a table fork, mash the bananas to a smooth puree. Stir the puree into the batter and let the mixture rest at room temperature for about 30 minutes before frying.
  • Pour oil into a deep fryer or large, heavy saucepan to a depth of 2 to 3 inches and heat the oil until it reaches a temperature of 375 degrees ona deep frying thermometer.
  • For each fritter, ladle about 1/4 cup of the banana batter into the hot oil. Deep-fry 2 or 3 fritters at a time, leaving enough space between them so that they can spread into 3 or 4-inch rounds or oblongs. Turning them once or twice with a slotted spoon, fry for about 3 minutes or until the fritters are a rich golden color on all sides. as they brown, transfer them to paper towels to drain.
  • While the fritters are still warm sprinkle them lightly with powdered sugar and serve at once.
