I got this recipe while working for a coffee shop called Tuscany Cafe in Littleton, CO. This was my favorite way to start the day (yes, this is better than coffee, in my mind!) This is absolutely packed with flavor!

8 ounces cream cheese
3 cherry tomatoes, seeded and chopped fine
1/8 teaspoon garlic salt
2 tablespoons grated cucumbers
1/2 teaspoon minced red onion
2 sesame seed bagels
1 medium ripe tomatoes, sliced thick
salt and pepper

Steps:

  • Fold cream cheese ingedients together.
  • You can also toss all the ingredients into a food processor, but I like a chunkier cream cheese.
  • Slice bagels in half, lengthwise.
  • Toast.
  • Spread generously with cream cheese and top with tomato slices.
  • I like to make sure every square centimeter is covered with tomato.
  • Sprinkle with a little salt and a good amount of pepper; eat while still warm.

1 pound thick-cut bacon
3 bagel (3" dia)s plain bagels
8 large eggs
2 cups half-and-half
1 cup shredded Swiss cheese
½ cup diced tomato
2 tablespoons chopped fresh basil
¼ teaspoon salt

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and crumble when cool enough to handle.
  • While bacon is frying, tear bagels into bite-sized pieces and place in the bottom of a 9x13-inch baking pan.
  • Beat eggs, half-and-half, Swiss cheese, tomato, basil, and salt together in a medium bowl until well combined.
  • Sprinkle crumbled bacon over bagel pieces, then pour egg mixture over top, making sure liquid is evenly distributed. Cover and refrigerate for at least 8 hours.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Remove casserole from the refrigerator and bake in the preheated oven until a knife inserted into the center comes out clean, 35 to 40 minutes.

Steps:

  • Mash the tofu and mix with scrambler until combined.
  • Form a patty with sausage, cook in skillet sprayed with cooking spray on medium until browned about 5-7 minutes, flipping to cook both sides.
  • Set the sausage aside and cook the tofu 2-3 (in the same skillet) minutes, stirring occasionally.
  • Build sandwich and microwave 12 seconds to melt cheese.
