SAVORY CREAM OF WHEAT
In my early 20's, I lived with some southern belles in Alaska! They were crazy for grittes with butter and cheese, but they couldn't find grittes in Alaska - so they would cook up a batch of Cream of Wheat and add butter and cheese. I loved the result and have passed it on to my husband and sons who also love this savory treat...

Steps:
- 1. Using a wire whip, gradually whip cereal into the boiling water. Stir constantly.
- 2. Reduce the heat and allow to boil until thick. Only takes a few minutes.
- 3. Add shredded cheese and butter. Any favorite cheese will do, but I prefer sharp cheddar.
- 4. Serve immediately. Makes two medium size bowls. This recipe multiplies well 3 or 4 times the original.
CREAM OF WHEAT RECIPE
This easy cream of wheat recipe (farina) is made with evaporated milk, cinnamon and some vanilla extract for flavor. Hot cereal is the perfect iron rich breakfast to get your day started on the right foot!

Steps:
- First, start by adding the cream of wheat, evaporated milk, water, vanilla extract, sugar, salt and cinnamon stick to a sauce pan. Give everything a quick stir to combine before turning the heat on to medium high.
- Stir the entire time to prevent the farina from sticking to the bottom of the pan.
- Once the hot cereal begins to boil, add in the butter and lower the heat to low. Continue stirring to melt the butter into the cream of wheat.
- Turn off the heat once you have reached your desired consistency. This will only take about 3-4 minutes. The longer you cook the cream of wheat, the thicker it will be.
- Finally, top with fruits, ground cinnamon or whatever you'd like and enjoy!

CREAMY WHEAT BERRY HOT CEREAL
This warming whole-grain hot cereal recipe pairs cooked wheat berries with rolled oats, fruit and nuts for a filling fiber-rich breakfast. Using a microwave makes preparation speedy, especially if you've thawed frozen cooked wheat berries overnight in the refrigerator.

- To prepare the wheat berries: Sort through wheat berries carefully, discarding any stones. Rinse well under cool running water. Place in a large heavy saucepan. Add water and salt Bring to a boil over high heat, then reduce heat, cover, and simmer gently for 1 hour, stirring occasionally. Drain and rinse. (Makes about 4 1/2 cups.)
- To prepare the hot cereal: Place oats, raisins, milk (or soymilk) and salt in a large, microwave-safe bowl. (No microwave? See Stovetop Variation.) Stir to combine. Microwave on High, uncovered, for 3 minutes. Stir in 1 1/4 cups cooked wheat berries and microwave again until hot, 1 to 2 minutes more. Let stand for 1 minute. Stir in brown sugar and cinnamon. Sprinkle with toasted almonds and serve. (Refrigerate or freeze leftover wheat berries.)

- 1. Fill a small pot with cool water, add in the salt, and place over high heat. 2. After 3 minutes, reduce to medium heat.3. Slowly pour the cream of wheat into the pot while vigorously stirring it with a silicone whisk.*This prevents the formation of lumps*4. Stir in the milk, butter, and sugar, then let it cook for 2 more minutes while continuing to stir.
