1 cup all-purpose flour
1 cup milk
1 egg
1 pinch salt

Steps:

  • In a medium-size mixing bowl, whisk together the flour, milk, egg and salt.
  • Heat a large frying pan or wok over medium high heat. When the pan is hot add a teaspoon of butter and lightly coat the surface of the pan with the melted butter.
  • Pour one quarter cup of the batter into the pan and tilt the pan with a circular motion so that the batter coats the surface in a smooth and even layer.
  • After two minutes, lift up an edge of the crepe with a spatula to see if it is browning. When the underside has begun to brown, flip the crepe and cook the other side until it is also brown; about 2 minutes.
  • Repeat steps 3 and 4 to cook the remaining crepes. Serve hot.

I made these for the very first time yesterday, and I must say how absolutely DELICIOUS they were! Good enough to eat alone, without any fillings really. They're super easy, and a great breakfast or brunch item. Enjoy!

Number Of Ingredients 7

1 1/2 cups whole milk
3 eggs
3 tablespoons sugar
1 teaspoon salt
4 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
1 cup flour

Steps:

  • In a blender, combine milk and eggs, blend until foamy, approx 20 seconds or so. Turn off.
  • Add sugar and salt, blend for a few seconds turn off.
  • Add melted butter and vanilla, blend a few seconds turn off.
  • Add flour, blend until all mixed.
  • Okay now for cooking them, this is what I did --
  • I had a small tefal frying pan, (measured 6-1/2 on bottom, 9-1/2 or so across top) I sprayed it with non-stick Butter Flavor cooking spray. Heat it on medium-high heat.
  • Use a 1/3 cup measuring cup and dump crepe mixture into pan, swirl around real quick to coat bottom of pan.
  • I used a silicon spatula to lift edges of crepe and to form round if any stray edges -- it will start to bubble, not much, but its safe to flip when you see edges on underside becoming brown. Just flip with plastic spatula.
  • So once first side cooked, flip and cook about 2 minutes or so, transfer to plate and continue with rest of batter.
  • *** Each crepe I made, I sprayed pan with butter cooking spray. So when I took crepe out, i sprayed bottom of pan before putting next cup of batter, do each time.
  • Serve with powdered sugar, jam, fruits any filling of your choice!
  • *** For chocolate crepes, add two tablespoons of chocolate syrup to blender when adding in vanilla.
  • *** For saltier crepes to make with meat or veggies, omit sugar and vanilla.

1 cup flour
3 eggs
1 ½ cups milk
1 pinch salt
1 tablespoon butter
½ onion, sliced
2 cloves garlic, minced
1 cup spinach
4 slices mozzarella cheese, or swiss cheese
8 slices ham
4 fried eggs

Steps:

  • In a bowl, mix the flour, eggs, ½ cup (120 ml) of milk, and salt, until smooth.
  • Add in the remaining milk and mix again until the batter is thin and smooth.
  • Heat a nonstick pan over medium heat.
  • Add the butter and onions to the pan. Cook until browned.
  • Add garlic, spinach, and salt, and stir until spinach is wilted.
  • Remove the spinach mixture and clean the pan.
  • Return the pan to medium heat and add ¼-½ cup (60-125 g) of the batter into the pan.
  • Swirl the batter to coat the pan and leave on the heat until the sides start to lift up from the pan.
  • Using a spatula flip the crepe over and cook through, about 2 minutes.
  • Repeat with remaining batter.
  • Preheat oven to 350°F (180°C).
  • Lay the crepes on a baking sheet.
  • Place one slice of cheese in the middle of a crepe.
  • Top the cheese with 2 slices of ham and the spinach mixture.
  • Top with a fried egg and fold the edges over the egg, pressing down to make sure the sides stay in place. Repeat with other crepe.
  • Bake the crepes for 5 minutes or until yolk is at the desired consistency.
  • Enjoy!

1 cup sugar
3 tangerines, thinly sliced
2/3 cup all-purpose flour
1 large egg
1 large egg yolk
2 tablespoons unsalted butter, melted, plus more for skillet
3/4 cup whole milk

Steps:

  • In a saucepan, combine sugar and 1 cup water and bring to a boil over high heat, stirring to begin dissolving sugar. Reduce heat to medium and simmer, stirring occasionally, until sugar has dissolved completely, 5 minutes. Add tangerines and continue to simmer 8 to 10 minutes, until fruit is translucent and syrup has thickened. Remove from heat, set aside, and let cool.
  • In a blender, combine flour, egg, yolk, melted butter, and milk, and blend until smooth. Cover and refrigerate at least 1 hour and up to overnight.
  • Place an 8-inch skillet over medium-high heat, add a knob of butter, and swirl pan to coat bottom evenly. Ladle 1/4 cup of crepe batter into hot pan and swirl pan to coat bottom evenly with batter. Cook until batter is lightly browned on bottom, about 1 minute. Using a small metal spatula, lift edge of crepe and flip it over. Cook other side until golden brown.
  • Transfer to a warmed plate and repeat with remaining batter. To serve, fold 2 crepes in half, place them on a plate, and spoon some candied tangerines on top.

CANDIED TANGERINE PEEL

5 large tangerines, halved and juiced (save the juice to drink at breakfast time)
2 cups granulated sugar, plus 1 cup for tossing

Steps:

  • Place the tangerine halves in a large saucepan with enough cold water to cover. Bring to a boil, reduce heat, and simmer until the tangerine rinds are tender, about 30 to 45 minutes. (Begin checking the rinds for tenderness about 20 minutes into the process, you don't want them to become mushy.) You'll know they're done when you can scrape away the pith (the white part) easily. Drain the peels and when cool enough to handle, cut into 1/4-inch strips. In the same sauce pan (now empty), combine 1 1/4 cups water with the sugar. Bring to a boil, add the peels, reduce heat to medium, and cook until the peel is translucent, stirring occasionally. Spread the candied peel onto an oiled cooling rack over a cookie sheet and allow to cool and drain. Spread the remaining sugar in a large shallow bowl, or on a cookie sheet. Add the drained peel to the sugar and toss to coat with the sugar, separating the pieces as you do so. Spread the candied peel on a cookie sheet to dry overnight. Store in an airtight container in the freezer or refrigerator.;

FROSTING:
2 packages (8 ounces each) cream cheese, softened
3/4 cup butter, softened
4 cups confectioners' sugar
2 tablespoons tangerine or orange juice
1/2 teaspoon grated tangerine or orange zest
Optional toppings: Sugared cranberries, candied tangerine or orange slices and red sprinkles

Steps:

  • Line the bottoms of 2 greased 8-in. square or 9-in. round baking pans with parchment; grease paper. In a large bowl, beat butter and sugar until crumbly, about 2 minutes. Beat in vanilla., In another bowl, mix 4 cups flour, baking powder and salt; add to butter mixture alternately with milk, beating well after each addition. In a large bowl, toss cranberries with remaining flour; fold into batter., Transfer to prepared pans. Bake at 400° for 35-40 minutes or until a toothpick inserted in center comes out clean. Cool for 10 minutes before removing from pans to wire racks; remove parchment. Cool completely., For frosting, in a large bowl, beat cream cheese and butter until smooth. Gradually beat in the confectioners' sugar, tangerine juice and zest. Spread between cake layers and over top and sides of cake. Refrigerate, covered, until serving., If desired, top with sugared cranberries, candied tangerines and sprinkles.

Chocolate and orange are two of my favorite flavor combinations, so I was happy to find this recipe in a May 1987 issue of Bon Appetite that featured Pancakes. It's the perfect finale to an elegant meal. An added bonus is that the crepes and tangerines can be prepared ahead. Use a little of the tangerine marinade in the sauce. Prep time does not include refrigeration time for crepe batter or tangerines.

3 tablespoons unsalted butter
1 ounce semisweet chocolate, chopped (not unsweetened)
1/3 cup all-purpose flour
1/4 cup sugar
2 tablespoons unsweetened cocoa powder (preferably Dutch process)
1 pinch salt
2 eggs, room temperature
3/4 cup milk, room temperature
1 teaspoon vanilla
6 small seedless tangerines or 6 small oranges
2 tablespoons Grand Marnier or 2 tablespoons orange liqueur
melted butter
3 ounces semisweet chocolate, coarsely chopped (not unsweetened)
1 cup whipping cream (or more)
1 teaspoon grated orange peel

Steps:

  • For Crepes.
  • Melt butter and chocolate in top of double boiler over barely simmering water; stir until smooth. then cool slightly.
  • Sift flour,sugar,cocoa and salt into large bowl.
  • Make a well in the center and add eggs;mix until smooth.
  • Whisk in milk, melted chocolate and vanilla; cover and refrigerate 3 hours.
  • Remove peel and white pith from tangerines.
  • Working over a large bowl to catch juice, cut between membranes with a small sharp knife to release segments; add to juices and mix in liqueur.
  • Cover and refrigerate at least 3 hours.
  • Can be prepare 1 day ahead.
  • Stir batter gently.
  • Heat crepe pan with 5-inch diameter bottom over medium-high heat; brush lightly with melted butter.
  • Remove pan from heat; stir batter and ladle 3 tablespoons into corner of pan, tilting so batter just coats bottom.
  • Cook crepes until bottom is brown,about 1 minute.
  • Turn crepe and cook until second side is speckled brown, about 30 seconds.
  • Slide out onto plate;repeat with remaining batter, stirring occasionally.
  • Adjust heat and add more butter to pan as necessary.
  • Can be prepared 2 days ahead. Wrap in foil and refrigerate.
  • Reheat crepes 1 at a time in crepe pan over low heat 5 seconds per side.
  • Spoon sauce onto each plate.
  • Fold crepes in fourths and arrange 2 crepes on each plate.
  • Drain tangerines and place alongside.
  • Drizzle crepes with sauce and serve.
  • Chocolate-Orange Sauce.
  • Melt chocolate in top of double boiler over barely simmering water; stir until smooth.
  • Gradually mix in cream,tangerine marinade and orange peel; stir until heated through.
  • Thin with more cream if desired.
  • Can be prepared 1 day ahead. Cover and refrigerate. Rewarm sauce over low heat before serving.

8 tight-skinned tangerines, washed well
2 cups granulated sugar
2 cups water
Superfine granulated sugar for coating

Steps:

  • Remove peel, including a little of pith, from tangerines in (2- by 1-inch) strips with a sharp vegetable peeler (preferably Y-shaped). Cut into thin (1/8-inch) julienne strips.
  • Cover strips with cold water in a medium saucepan and bring to a boil. Drain in a sieve, then repeat procedure with more cold water 2 times.
  • Bring granulated sugar, water, and zest strips to a boil in a heavy medium saucepan, stirring until sugar has dissolved, then simmer until zest is translucent and syrup has thickened, 45 to 50 minutes.
  • Lightly oil a large rack and set over a wax-paper-lined baking sheet. Transfer candied peel to rack with a fork, separating strips. (Discard syrup or reserve for another use.) When peel is cool (but not completely dry), toss with superfine sugar in a bowl to coat. Return to rack until dry to the touch, about 30 minutes.

Easy Crepes With Brandy image

This French crepe recipe calls for brandy, but you can substitute any flavorful spirit or liqueur to customize it to your tastes and pantry.

Yield Makes approximately 12-15 crepes

Number Of Ingredients 11

1½ cups whole milk
3 large eggs
3 tablespoons sugar
1 teaspoon salt
Scant 5 tablespoons unsalted butter, melted
½ cup brandy
1 teaspoon vanilla extract
1 cup all-purpose flour
Additional butter for cooking
Additional sugar or jelly such as apple or apricot for serving
Iron skillet or crepe pan, flexible metal or plastic spatula

Steps:

  • In a blender, combine milk and eggs. Mix on medium-high speed until foamy, about 10 seconds. Turn blender to low speed and remove feed top. With blender going, add sugar and salt. Replace feed top and blend on high speed for a few seconds, then turn blender back to low. In the same manner, add butter, brandy, and vanilla, replacing feed top and blending for several seconds after each addition. Turn blender off. Add flour all at once and blend until just combined.
  • Place crepe pan over moderately high heat. With flexible spatula, spread a tiny amount of butter in pan (an alternative method is to brush the pan with melted butter using a pastry brush) and heat until butter just begins to smoke. Pour ¼ to ⅓ cup batter into the center of the pan. As you pour, quickly tilt the pan in all directions to spread a thin layer of batter across the bottom. Pour in just enough batter to cover the pan.
  • Cook crepe over moderately high heat until bubbles just begin to form on the exposed surface, about one to two minutes. Lift up the edge to check the cooking process-if the crepe starts to burn before it is cooked through, turn down the heat. If it is not nicely browned after two minutes, turn up the heat.
  • When underside of crepe is browned, flip and cook another minute or less, until other side is browned. Remove from pan and keep warm in the oven, loosely covered with foil.
  • Grease pan with a very small amount of butter and repeat process. Continue until remaining batter is used, stacking cooked crepes on a plate in the oven. To serve, sprinkle each crepe with sugar or spread with jelly and fold or roll up. Do Ahead: Crepe batter can be made 1 day ahead. Refrigerate, covered, and blend briefly to recombine before cooking.
