ONE RECIPE, TWO MEALS: CHEESY BREAKFAST SANDWICH
I'm not exaggerating when I say I eat this exact breakfast sandwich nearly every. Single. Morning. I may switch out the spinach for kale, the red onions for sliced mushrooms, the sun-dried tomatoes for fresh garden Romas, but the principle is the same: runny yolks, melty cheese, all in my face. And I've made a painfully simple open-faced version for your kid, taking out the fancy-pants toppings, scrambling up some fluffy eggs, placing them on a toasted English muffin and topping them with a mountain of Cheddar.

Steps:
- To make the kids' sandwich: Crack two eggs into a small bowl. Add the milk and Parmesan, and lightly beat until combined.
- Heat a teaspoon of oil in a small saute pan over medium-low heat, and add the egg mix. Slowly scramble the eggs until just set and fluffy.
- Place the scrambled eggs on 1 toasted English muffin half, and top with 1/2 cup Cheddar. You can let the cheese melt naturally or place it under the broiler to get it browned and bubbly (which is the right decision in life). It's done!
- Now to make your sandwich: Heat another teaspoon of oil in your saute pan. Add the spinach and wilt, about 20 seconds. Remove from the pan and add the red onion and sun-dried tomatoes. Let them sear and blister for about a minute. Remove and place them with the spinach.
- If you need to add a little more oil at this time, go for it. Crack the remaining egg into the saute pan and let fry until the white is set but the yolk is still runny, about 2 minutes. Sprinkle with salt and pepper.
- In the meantime, place the remaining 1/4 cup cheese on the top half of the English muffin, and toast in the broiler until the cheese melts.
- Place the spinach, red onion and sun-dried tomatoes on the bottom half of the toasted muffin. Then layer with the fried egg and cheesy top half.
SHEET PAN BREAKFAST SANDWICH RECIPE BY TASTY
Here's what you need: pancake mix, eggs, milk, breakfast sausage, eggs, milk, salt, pepper, shredded mexican cheese blend

- Preheat oven to 425˚F (220˚C).
- In a large bowl, combine pancake mix, eggs and milk being careful not to over-mix.
- Divide batter evenly onto two parchment paper-lined 17x11 inch baking sheets. Spread evenly and bake for 15 minutes.
- In a large bowl, combine eggs, milk, salt and pepper. Pour the eggs onto a parchment paper-lined 17x11 inch baking sheet. Spread evenly and bake for 15-17 minutes.
- Line another 18x13 inch baking sheet with parchment paper and spread out the sausage from corner to corner. Decrease oven temperature to 350˚F (180˚C) and bake for 20 minutes.
- Drain fat, and sprinkle cheese on top of the sausage. Bake for another 5 minutes at the same temperature.
- On a cutting board, layer the sandwich starting with a pancake, followed by sausage, egg, and the second pancake. Slice into breakfast size sandwiches and serve immediately, or wrap in parchment and freeze in a container for up to 1 month.

- Coat the cooking surface of skillet (I prefer cast-iron) with coconut oil (a healthy type of fat).
- Crack the eggs and put them in the skillet. Eggs are an excellent source of protein. Eggland's Best really are the best, but an all-natural substitute will be nearly as good.
- Fry the eggs to your liking (I prefer over-medium).
- Add salt, then cayenne pepper, then turmeric.
- Boil the water for tea.
- After the eggs come out of the skillet, the bread goes in the skillet. I like Ezekiel bread because it's very nutritious (because it's made with sprouted grains). Push the bread around to soak up excess coconut oil. Turn the heat off to avoid burning the bread.
- Pour the hot water over the tea bag. I like green tea because it has so many antioxidants etc. Allow to steep while you enjoy the bread and grapefruit (high in Vitamin C).

This is my take on a breakfast sandwich. I always think home made is best and I know what's in my sandwich which I prefer! I use Heinz Chili sauce on this instead of ketchup because it's got a more zippy flavor which I love.

- Microwave the bacon between paper towels for 2 minutes on high.
- Microwave the bun for 20 seconds just to soften then split it in half and toast.
- Cook the egg and break the yoke. Try to keep it in a circular shape to fit nicely on the bun.
- Put the mayo and chili sauce on the bun. Add the cheese, bacon and egg. Put the top on the bun.
- Enjoy!

- Wrap the 3 slices of turkey bacon in a paper towel on a microwave safe plate and microwave for 2 minutes.
- Spray a small non-stick pan with some oil. Cook the egg. I have a little round saute pan I use that cooks the egg in a perfect circle.
- Warm the whole grain bun in the microwave on high for 20 seconds.
- Once that is all done, spread the Vegenaise on the bun. Add the egg, bacon and cheese and sprinkle with the pepper.
- This is very tasty!
