Time 20m

Yield 4 servings

Number Of Ingredients 18

Sandwiches
4 large plum tomatoes, sliced 1/2" thick
Kosher salt and freshly ground black pepper
2 tbsp. unsalted butter
6 large eggs
Mayonnaise, for serving
8 slices Texas toast-style bread, toasted
fennel herb sausage patties
fresh flat-leaf parsley, for serving
Fennel Herb Sausage Patties
1/2 lb. ground pork
1 garlic clove, chopped
1 tbsp. chopped fresh parsley
1 tbsp. chopped fresh chives
1/2 tsp. fennel seeds, crushed
1/8 tsp. red pepper flakes
Kosher salt
Cooking spray

Steps:

  • For the Fennel Herb Sausage Patties: Stir together pork, garlic, parsley, chives, fennel seeds, red pepper, and 1/2 teaspoon salt in a bowl. Cover and chill for at least 15 minutes and up to one day.
  • Form sausage mixture into four 3 1/2-inch patties. Heat a large nonstick skillet over medium-high heat; lightly grease. Cook patties until gold brown and cooked through, 3 to 4 minutes per side. Drain on paper towels.
  • To make the sandwiches: Heat broiler to high. Line a rimmed baking sheet with foil; fit with a rack and lightly grease rack. Place tomatoes, in a single layer, on rack. Season with salt and pepper. Break yolks with a rubber spatula. Cook, stirring every 15 seconds, until soft curds form, 3 to 4 minutes.
  • Spread mayonnaise on 4 slices of toast. Top with eggs, tomatoes, sausage patties, and parsley dividing evenly. Top with remaining toast.

HOMEMADE BREAKFAST SANDWICHES WITH HOMEMADE MAPLE SAUSAGE, EGG AND CHEESE

Homemade Breakfast Sandwiches with Homemade Maple Sausage, Egg and Cheese image

Provided by Kelsey Nixon

Time 20m

Yield 4 servings

Number Of Ingredients 17

4 Portuguese or kaiser rolls, sliced in half
3 tablespoons unsalted butter, melted, plus 1 tablespoon not melted
1 tablespoon olive oil
Homemade Maple Sausage, formed into 4 (4-ounce) patties, recipe follows
4 large eggs
Kosher salt and freshly cracked black pepper
4 slices American cheese
Hot sauce, optional, for serving
Ketchup, optional, for serving
1 pound ground pork
2 tablespoons maple syrup
2 teaspoons chopped fresh sage
2 teaspoons salt
1 teaspoon fennel seeds
1 teaspoon granulated garlic
1 teaspoon granulated onion
1 teaspoon crushed red pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Brush the inside of each roll with the melted butter and toast in the oven until slightly crispy and golden brown, 5 to 6 minutes. Remove from the oven and set aside until you are ready to build your sandwich.
  • Heat the olive oil in a cast-iron or nonstick skillet over medium heat. Brown the sausage patties for 3 to 4 minutes per side. Once they are browned and cooked through, remove the patties to a paper towel-lined plate. In the sausage drippings, add the remaining tablespoon of butter and crack 4 eggs into the skillet. Sprinkle the eggs with salt and pepper and cook them to your desired doneness. For this I prefer a fried egg, cooking 2 minutes per side, but you can do whatever you like best. Once the egg is cooked to your liking, top each egg with a slice of American cheese. Place a lid over the skillet to melt the cheese.
  • To assemble a sandwich, place a sausage patty on the bottom half of the toasted roll and top with the egg and cheese. Have it plain or dressed with the condiments you prefer. I like to eat mine with ketchup and a little hot sauce!
  • In a large bowl mix the pork, maple syrup, sage, salt, fennel seeds, garlic, onion and red pepper. Cook the sausage however you like - make patties and sear or crumble and cook in a skillet like hash.
  • Cook's Notes: You can use all different types of meats and spices to make the sausage your own!
  • Make sure you form the sausage patties in the same size and shape of the bread you are using, that way every bite you take of the sandwich has every component it.

BREAKFAST SANDWICHES WITH CHILE-FENNEL SAUSAGE PATTIES

Breakfast Sandwiches with Chile-Fennel Sausage Patties image

This sandwich combines the classic combo of pork and fennel, some heat from the red pepper flakes, and a gorgeous golden sunny-side-up egg. Perfect with English Muffins and a giant cup of joe.

Provided by Dennis Prescott

Categories     HarperCollins     Sandwich     Breakfast     Sausage     Egg     Cheese     Tomato     Fennel

Yield Makes 4 sandwiches

Number Of Ingredients 16

Sausage patties:
1 1/2 teaspoons fennel seeds
1 teaspoon dried oregano
1 teaspoon red pepper flakes
1 pound best-quality ground pork
1/2 teaspoon sea salt
1/2 teaspoon freshly cracked black pepper
1 tablespoon olive oil
Sandwiches
4 slices Swiss cheese
1 tablespoon butter
4 large free-range eggs
4 English muffins, store-bought or homemade, split and toasted
1/4 cup Spicy Herb Mayo
1 large heirloom tomato, thinly sliced
4 sandwich-size lettuce leaves

Steps:

  • Make the sausage patties: Using a mortar and pestle, smash together the fennel seeds, oregano, and red pepper flakes. In a large bowl, combine the ground pork with the spice mixture, salt, and black pepper. Give the sausage a good mix, separate it into four equal portions, and shape them into patties. The patties should be just larger than the width of the English muffins, as they will shrink when cooked.
  • Heat two large skillets, one over medium heat and the other over medium-low heat. Pour the olive oil into the first pan and, working in batches if necessary, fry the sausage patties for 5 minutes per side, or until crispy and cooked through. When you flip the patties, top each with cheese.
  • Melt the butter in the second pan. Crack in the eggs, taking care to not break the yolks. Gently fry the eggs until the whites have set but the yolks are still nice and runny.
  • While the eggs and sausage are cooking, spoon a heaping spoonful of the mayo onto each muffin half.
  • To build each breakfast sandwich, lay a sausage patty, tomato slice, and fried egg on each English muffin bottom. Sprinkle each egg with a pinch of salt and black pepper, then top with a lettuce leaf and the other muffin half. Serve immediately.

HOMEMADE GRILLED BREAKFAST SAUSAGE PATTIES

Homemade Grilled Breakfast Sausage Patties image

I looked and looked at the grocery store for a breakfast sausage that did not include sugar. It was a long and fruitless search, so I decided to make it myself. After a couple of tries, yielding rather bland tasting sausage, I realized that commercial sausage sits with its seasonings and preservatives, and possibly, flavor enhancers, in the grocer's refrigerator case for a long time. When you make this sausage, please don't skip the resting time in the refrigerator, because this allows the seasonings to bloom.
