BEEF IN BEER IN THE SLOW COOKER
Delicious tender beef cooked in the slow cooker with beer, shallots, bacon, and mushrooms. The Guiness® makes a lovely gravy without tasting overly strong of beer. This is quite a meaty dish so would also be nice with potatoes and carrots added. I serve this with crusty French bread to mop up the juices. Hearty and warming to come home to. Cooks in 5 hours in the slow cooker; however it would not hurt it to be cooked all day.

Steps:
- Place the meat in a bowl, add the wine and one-half cup of the onions. Cover and refrigerate overnight, but no more than 16 hours.
- The next day, remove the meat from the wine marinade, reserving the marinade. Preheat oven to 350 degrees. Pat the meat dry on paper towels.
- Heat the oil in a heavy three-quart casserole, add the beef and brown it on all sides. Remove the meat from the casserole and add the remaining onions and cook over medium-low heat until tender and lightly browned. Stir in the garlic.
- Add the stock and the reserved marinade. Bring to a simmer, scraping the bottom of the pan. Stir in salt and pepper to taste, the bay leaf and rosemary. Return the meat to the casserole.
- Cover the casserole and place in the oven. Bake for about two hours, until the meat is tender.
- To serve at once, remove the meat from the casserole and slice it. Arrange on a platter. Reheat the sauce and check seasonings. Spoon some of the hot sauce over the meat and pass the rest alongside.
- Alternatively, the meat can be refrigerated overnight in the cooking liquid, and the next day the meat can be sliced and the sauce reheated before serving. Doing this will improve both the flavor and texture of the meat and will also allow the layer of chilled fat on the surface of the liquid to be removed and discarded.

PRESSURE-COOKER WINE-BRAISED BEEF SHANKS
I adapted this from a slow-cooker recipe to one that takes about 2 hours start to finish, using a pressure cooker. Served over egg noodles or rice, it reminds me of Grandma's house. -Helen Nelander, Boulder Creek, California

BREEZERMOM'S SLOW COOKER WINE-BRAISED BEEF
Essentially, this is Recipe #482673 by Chef #226863 that I adapted for the slow cooker. It lends itself to that method of preparation beautifully, and the result is a flavorful, tender beef dish that is very delicious. As in the original recipe, I did not include the marinating time in the prep time, so prepare accordingly.

Steps:
- For marinade, in a mixing bowl, combine the wine, carrots, onions, red wine vinegar, and olive oil. Make the bouquet garni using cheesecloth (several thicknesses). Place garlic, bay leaves, peppercorns, cloves, juniper berries, thyme, marjoram, and fennel seed in the center of the square of cheesecloth. Bring the edges together and tie with kitchen string.
- Place the beef in a plastic bag set in a shallow dish. Pour the marinade over the meat, add the bouquet garni, and seal the bag. Marinate the meat in the refrigerator for 10 hours or overnight, turning the bag occasionally.
- Drain the beef, reserving the marinade, vegetables, and bouquet garni. Pat the beef dry with paper towels.
- In a heavy Dutch oven, cook the bacon until crisp and remove; drain and crumble. Brown the beef in the bacon drippings, adding the onions and carrots to slightly brown. Remove beef and vegetables and place in slow cooker. Next, add the bouquet garni, drained tomatoes, 1/2 of the reserved marinade, and beef broth. Cover and cook on low for 8 hours or high for 4 hours.
- When beef is finished cooking and is tender, stir in the black olives to warm them. Then remove beef and vegetables to a serving bowl and discard bouquet garni.
- Combine the flour, softened butter, salt and pepper into a smooth paste. Pour the liquid from the slow cooker into a large saucepan and heat to a simmer. Stir in the flour mixture, cooking and whisking until thickened and bubbly. Cook and stir 1 minute more.
- To serve, pour the wine gravy over the meat and vegetables.
