CREAMY BRIE MASHED POTATOES
If we could shrink ourselves, crawl into a bowl of these ultra-rich potatoes and take a nap, you better believe we would. This side dish is the most comfortable of comfort foods. Brie cheese gets carefully tucked into warm pillows of mashed Yukon gold potatoes, creating luscious pockets of warm, melty cheese. Who knew potatoes could be this luxurious?

Steps:
- In 3-quart saucepan, place potatoes and enough salted water to cover potatoes. Heat to boiling; reduce heat to medium-low. Cover and simmer 20 to 30 minutes or until tender; drain.
- Return to pan. Shake pan gently over low heat to dry potatoes.
- Meanwhile, in 1-quart saucepan, heat milk, butter, salt, pepper and garlic over medium-low heat 10 to 15 minutes, stirring occasionally, until garlic is tender. Pour milk mixture over potatoes. Add half of the cheese; mash with potato masher until fluffy.
- Fold remaining cheese into mashed potatoes, just enough to incorporate. There should still be visible pockets of cheese. Serve hot.

- In 4-quart saucepan or 5-quart Dutch oven, place potatoes; add enough water just to cover potatoes. Heat to boiling. Reduce heat; cover and simmer 20 to 30 minutes or until potatoes are tender when pierced with a fork. Drain.
- Heat oven to 350°F. Spray 2- to 3-quart casserole with cooking spray. In 1-quart saucepan, heat milk, butter, salt and pepper over medium heat, stirring occasionally, until butter is melted. Measure out 1/4 cup milk mixture; set aside.
- To potatoes, gradually add remaining milk mixture, cubed cheese and thyme, mashing with potato masher or electric mixer on medium speed until light and fluffy. Spoon potatoes into casserole. (Potatoes can be covered and refrigerated up to 24 hours at this point.)
- Pour reserved 1/4 cup milk mixture over potatoes. Bake uncovered 40 to 45 minutes or until potatoes are hot. Stir potatoes before serving.

QUICK CHICK-IN-WINE WITH BRIE-YUKON GOLD MASHED POTATOES

- In a large bowl, add the chicken, cover with wine, and set aside.
- Quarter the potatoes, leaving the skin-on. Place in a large pot, cover with water and bring up to a boil over medium heat. When the potatoes are cooked, drain and place in a medium bowl. Mash the potatoes, season with salt and set aside.
- In a small pot, combine apple and cream and reduce over medium heat 15 minutes.
- Drizzle olive oil in a large skillet over medium high heat, add the bacon and crisp 3 to 4 minutes. Remove to a plate.
- While bacon crisps, remove the chicken to a work surface, reserving the wine. Cut chicken into large bite-size pieces, season with salt and pepper, dredge in flour then brown in bacon drippings. While chicken browns chop vegetables. Remove the chicken to a plate, then add 2 tablespoons olive oil to the skillet, season the vegetables with salt and pepper and add bay leaf and thyme. Cover pan to sweat vegetables 5 minutes then remove lid, stir in 2 tablespoons flour, cook 1 minute then stir in wine, add chicken back to pan and simmer together to thicken and the chicken is cooked through, a couple of minutes more.
- To a food processor, add the apple-cream and brie, process until smooth and season with salt. Combine apple-brie mixture with the mashed potatoes.
- Serve chicken with wine over brie mashed potatoes.
BRIE MASHED POTATOES
A very decant mashed potato that is not for the diet conscious. Recommend using Klondik gold potatoes which are a small buttery flavored potato that requires no peeling. Zaar would not take Klondik gold potatoes. Can use yukon gold but will need to cut them up as they are larger than the Klondik's.

BOBBY'S FAVORITE MASHED POTATOES

- Put the potatoes in a large saucepan and cover with water by 2 inches. Add 2 tablespoons of kosher salt, bring to a boil and cook until fork tender, about 25 minutes.
- While the potatoes are cooking, heat the milk in a small saucepan over high heat, bring to a boil, cover and remove from the heat. Keep warm until the potatoes finish cooking.
- Drain the potatoes in a colander and return them to the saucepan over low heat. Stir the potatoes for about a minute in the saucepan to evaporate any additional water.
- Put the potatoes into a ricer or food mill set over a large bowl. Stir in the butter then 1 1/2 cups to all of the warm milk until creamy. Stir in creme fraiche, mascarpone or pesto, if desired. Season with salt and pepper.
BRIE STUFFED JACKET POTATOES
In an internet quest for the recipe for Brie-mashed potatoes, I came upon these little gems. I was only baking for two, so only used two potatoes, however, I forgot to scale down the remaining ingredients, which were slated to feed four (using 4 potatoes). - Slice off the top of each potato and scoop out the flesh, leaving behind a potato skin jacket ready for filling.
- Mix together potato flesh, Brie, salt, egg yolk and butter.
- Beat until well mixed, and return mixture to potato skins.
- Place upon a baking sheet, or preferably a baking stone.
- Put into a 375-degree oven for 15 minutes, or until filling is golden brown.

- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Add potatoes, and cook until tender but firm, about 15 minutes; drain.
- In a large bowl, mash potatoes with the butter and milk. With a hand mixer, beat in cream cheese and onion. In a small bowl, beat the egg with a little bit of the mashed potatoes. Stir into potatoes, and season with salt and pepper. Transfer to a 2 quart casserole dish.
