I had never heard of these until I met my husband, Mark, who is English. They are simple and delicious! They freeze really well too.

1 (16 ounce) package pork sausagemeat
1 (17.25 ounce) package frozen puff pastry sheets, thawed
¼ cup Dijon mustard
1 beaten egg

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Unfold the puff pastry sheets, and cut along the fold lines of each sheet to form 6 equal squares for a total of 12 squares. Brush each square with mustard. Divide sausage into 12 pieces, and roll into small logs. Place one log on each square. Roll dough around the sausage, and seal with a bit of beaten egg. Place rolls onto an ungreased baking sheet, and brush the tops with the rest of the egg.
  • Bake for 20 minutes in the preheated oven, or until the rolls are puffed and golden. I usually watch after 10 minutes or so to make sure they don't burn. These freeze (unbaked) very well.

British sausage rolls are made from buttery rough puff pastry and a simple pork sausage filling. Serve this traditional British appetizer warm or cold at a party with HP sauce or mustard-they'll disappear quickly!

1 1/2 pounds ground pork (85% meat, 15% fat)
2 teaspoons fennel seeds (lightly crushed)
1 teaspoon freshly grated nutmeg
1 teaspoon ground sage
1 teaspoon dried thyme leaves
1 teaspoon freshly ground black pepper
1/2 teaspoon salt
1.3 lb rough puff pastry or puff pastry
1 large egg (beaten)

Steps:

  • Place the ground pork in a large mixing bowl and add the spices. Mix with a fork until well combined. Don't mix any longer than necessary, or the meat mixture will get tough.
  • Cut two large pieces of plastic wrap and lay them flat on the counter. Divide the meat mixture between the two pieces, then shape them into logs. Make sure each log is well wrapped in the plastic wrap.
  • Chill the logs in the fridge for at least 15 minutes.
  • Preheat the oven to 400 F. Line an 11 by 17-inch rimmed cookie sheet with parchment paper. Crack the egg into a small bowl and beat a fork until well blended.
  • Roll out the pastry on a lightly floured surface until it's just a bit longer than the meat logs (roughly 10x18 inches). Cut the rectangle in half lengthwise.
  • Unwrap the meat logs, then lay them on top of the rectangles.
  • Brush one long side of the rectangle with beaten egg, then roll the pastry tightly over the sausage so it overlaps. Pinch the seam closed, then place the roll seam side down.
  • Place both logs on a small parchment-lined cookie sheet and brush them all over with beaten egg. Chill in the freezer for 10 minutes or in the fridge for 30 minutes to harden the pastry. This is an important step; don't skip it.
  • Slice the roll into about 12 pieces and place them about an inch apart on the prepared cookie sheet.
  • Bake at 400 F for 35-40 minutes, until the pastry is well browned and the meat is cooked. Test the meat's temperature by stacking two or three rolls and sticking a meat thermometer through the center. The temperature should be 160 F.
  • Immediately transfer them to a wire rack to cool a little. Serve warm with HP sauce or English mustard.

The traditional British sausage roll is so quick and easy to make, plus it is the perfect snack or party food and can be served hot or cold.

1 tablespoon vegetable oil
1 medium onion (finely chopped)
2 pounds sausage meat
3 medium eggs ( free-range if possible; divided)
Ground black pepper (to taste)
Salt (to taste)
1/8 cup flour (for rolling out pastry)
25 ounces puff pastry (or shortcrust pastry )

Steps:

  • Gather the ingredients.
  • In a frying pan, heat the vegetable oil on medium heat and add the onion to cook for approximately 7 minutes, or until it starts to lightly brown.
  • In a large mixing bowl, add the sausage meat, cooked onion, and 2 of the eggs. Season with a couple of pinches of black pepper and a good sprinkling of salt. Mix well until all the ingredients are thoroughly and evenly combined.
  • Preheat the oven to 400 F. On a lightly floured surface, roll out the pastry into two 8- by 10-inch rectangles. Cut each rectangle into 2 long strips (4 total) and rest them in the fridge for at least 10 minutes.
  • Place the cold pastry onto 2 lightly greased baking pans. In the center of each pastry, form the sausage meat into a long sausage the length of the pastry strip. Beat the remaining egg in a small bowl and lightly brush the edges of the pastry.
  • Fold the pastry over the meat filling to form long rolls. Flip the sausage roll over so the seam is underneath. Lightly brush the top surface with egg.
  • Cut the rolls into 1 1/2-inch lengths. Or vary the length to the style of roll you want.
  • Cook in the preheated oven for 20 minutes or until golden brown. Leave them to cool before packing them into your picnic basket or lunch box, or simply eat them right away. Enjoy.

Though the concept of sausage wrapped in pastry exists in every cuisine in one way or another, the British have claimed sausage rolls as their own. They are always welcome, especially at holiday time. Boxing Day, a national holiday in Britain, celebrates the traditional post-Christmas servants' day off, when upper-class families were forced to fend for themselves and subsist for a day on a lavish buffet of leftover feasts from the week. Sausage rolls are often part of the spread. A pleasantly spiced homemade sausage mixture is easy to make up with a pound or two of ground pork shoulder, not too lean. They are usually made with all-butter puff pastry (often frozen store-bought, a good option); these are wrapped in a very flaky lard and butter pastry. Both the pastry and the sausage filling can be made a day ahead.

2 cups/250 grams all-purpose flour, more for dusting
1/2 teaspoon salt
4 tablespoons/50 grams pork lard
4 ounces/113 grams cold unsalted butter (1 stick), cut in 1/4-inch cubes
1/2 cup /118 milliliters ice water
2 pounds/900 grams pork shoulder, not too lean, ground coarse
2 teaspoons kosher salt
1/2 teaspoon black pepper
Pinch of cayenne
1/2 teaspoon ground coriander
1/4 teaspoon nutmeg
1/4 teaspoon mace
2 teaspoons chopped thyme
2 tablespoons chopped sage
2 tablespoons chopped parsley
1 egg, beaten, for egg wash

Steps:

  • Make the pastry: Put flour and salt in a mixing bowl. Work in lard with fingertips until completely absorbed. Add butter cubes and ice water and mix with a wooden spoon to form a sticky dough. Dust dough with flour and pat into a rough square about 1 inch thick. Wrap and refrigerate for at least 1 hour, or overnight.
  • Make the sausage filling: Put pork in a mixing bowl. Add salt, pepper, cayenne, coriander, nutmeg, mace, thyme, sage and parsley. Working quickly with wet hands, incorporate seasoning evenly. Divide mixture into 4 equal pieces (1/2 pound each) and roll each piece into a 9-inch sausage length. Cover and refrigerate.
  • Heat oven to 375 degrees. Roll pastry into a rectangle 9 inches by 24 inches. Cut rectangle in half lengthwise and crosswise to form four rectangles 4 1/2 inches by 12 inches. Lay 1 sausage in the center of each rectangle and moisten 1 of the long edges with a bit of water. Wrap dough around sausage and press edges together to make a log. With the seam side down, cut each log into 6 pieces.
  • Line two baking sheets with parchment paper. Arrange 12 pieces on each sheet and brush each piece well with egg wash. Bake for 20 to 25 minutes, until pastry is crisp and golden and sausage is cooked. Cool for 5 minutes before serving, or serve at room temperature.

This recipe is from my friend's mum-in-law. My husband, who is English, says they're brilliant! Use any sausage you like, either bulk or with the casing removed; I use the Pepperidge Farm puff pastry sheets.

2 lbs sausage
1 medium onion, finely chopped
1 (17 1/3 ounce) box puff pastry sheets
1 egg, beaten
1/4 cup flour

Steps:

  • Set oven to 200C or 390°F.
  • Mix the sausage with the onion; set aside.
  • Separate the puff pastry sheets into three sections (along fold lines).
  • Flour your hands, rolling pin, and workspace lightly to avoid sticking.
  • One section at a time, roll the pastry thin, and set it lengthwise on floured workspace.
  • Place the sausage/onion mixture (about a half-inch wide and a half-inch tall) along the middle of the pastry sheet.
  • Brush the top and bottom edges of the pastry sheet with egg; bring them together at the top of the sausage and seal them.
  • Brush the entire top of the roll with egg.
  • Cut the roll into one-inch sections.
  • Cut two small vent slits on top of each section.
  • Place sections on ungreased baking sheet and bake until the pastry is golden brown (mine typically take 10 to 15 minutes).
