This is one of my favorite low-fat dishes-it's delicious! Rosemary, garlic, almonds and sunflower kernels flavor the broccoli and rice. Sometimes I add cooked cubed chicken for a complete meal. -Mari Condit of Brooklyn Center, Minnesota

1 cup uncooked brown rice
2-1/4 cups reduced-sodium chicken broth or vegetable broth
2 tablespoons minced fresh rosemary or 2 teaspoons dried rosemary, crushed
2 garlic cloves, minced
2 cups chopped fresh broccoli
1/4 cup slivered almonds
1/4 cup unsalted sunflower kernels
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a large nonstick skillet coated with cooking spray, saute rice until lightly browned. Add the broth, rosemary and garlic; bring to a boil. Reduce heat; cover and simmer for 40 minutes or until rice is almost tender. , Stir in the broccoli, almonds, sunflower kernels, salt and pepper. Cover and cook 3-5 minutes longer or until rice is tender and broccoli is crisp-tender. Fluff with a fork.

In order to infuse the rice with the taste of broccoli, I puree the broccoli stalk with water and cook the rice in the green broccoli water. Some freshly squeezed lemon at the end adds freshness to this broccoli and rice recipe.

1 head broccoli, stalk and florets chopped separately
2 cups water
2 tablespoons olive oil
1 tablespoon minced garlic
½ cup uncooked white rice
salt to taste
1 squeeze lemon juice

Steps:

  • Combine broccoli stalk and 1 cup water in a blender; blend until pureed. Add remaining cup of water for a total of 2 cups of green water to cook the rice in.
  • Heat olive oil in a saucepan over medium heat and cook garlic until fragrant, 1 to 2 minutes. Add rice and cook and stir for 3 minutes. Add chopped broccoli florets, green water, and salt; bring to a boil. Reduce heat to low and simmer until rice is tender, 15 to 20 minutes.
  • Fluff cooked rice with a fork and squeeze lemon juice on top before serving.

I make this recipe for almost every holiday and often take it to potlucks. Usually, I make the pilaf ahead to allow the flavors to blend and then reheat it in the microwave before serving. 2 cans (14-1/2 ounces each) chicken broth
3/4 cup uncooked wild rice
1 cup uncooked long grain rice
1 large onion, chopped
2 medium carrots, halved lengthwise and sliced
1/2 teaspoon dried rosemary, crushed
1/2 cup butter, cubed
1 garlic clove, minced
3 cups fresh broccoli florets
1/4 teaspoon pepper

Steps:

  • In a large saucepan, bring broth to a boil. Add wild rice; reduce heat. Cover and cook for 30 minutes. Add long grain rice; cook 20-25 minutes longer or until liquid is absorbed and rice is tender. , Meanwhile, in a large skillet, saute the onion, carrots and rosemary in butter until vegetables are tender. Add garlic; cook 1 minute longer. Stir in the rice, broccoli and pepper. , Transfer to a greased shallow 2-qt. baking dish. Cover and bake at 350° for 25-30 minutes or until broccoli is crisp-tender. Fluff with a fork before serving.

What a great low-carb side dish! Tasty alone or as a replacement for rice under your favorite stir-fry or sauce. This also makes a great filling for tacos, over a grain bowl, or cool and toss in a salad. Add other herbs and flavors as desired!

1 (12 ounce) bag broccoli florets
2 tablespoons olive oil
½ small onion, minced
2 large cloves garlic, minced
¾ teaspoon sea salt
¼ teaspoon ground black pepper
lemon, juiced

Steps:

  • Place 1/2 of the broccoli florets in a food processor; pulse about 20 times until broccoli looks like grains of rice. Repeat with remaining broccoli florets.
  • Heat olive oil in a large skillet over medium-low heat. Add onion; cook and stir until softened, about 3 minutes. Stir in garlic; cook for 30 seconds. Stir in broccoli rice, salt, and pepper. Reduce heat to low and cook, covered, until broccoli has softened, about 5 minutes. Pour lemon juice on top.

I found this recipe on allrecipes.com and adapted it to include my favourite veggie, broccoli! You can also make this with asparagus. Butter lends a fantastic flavour to the recipe, so preferably, don't substitute it with any else. Although I've tried this only with water, using vegetable broth would add even more zing!

1/4 cup butter (Don't substitute)
2 ounces uncooked spaghetti, broken
1/4 cup onion, minced
1/2 teaspoon minced garlic
1 1/4 cups long-grain rice or 1 1/4 cups jasmine rice
2 1/4 cups vegetable broth or 2 1/4 cups water (I use water)
salt and pepper
1/2 lb broccoli floret
1/2 cup cashews, halves, roasted

Steps:

  • Melt butter in a medium saucepan over medium-low heat.
  • Increase heat to medium, and stir in spaghetti, cooking until coated with the melted butter and lightly browned.
  • Stir onion and garlic into the saucepan, and cook about 2 minutes, until tender.
  • Stir in rice, and cook for about 5 minutes.
  • Pour in vegetable broth and season mixture with salt and pepper.
  • Bring the mixture to a boil, cover, and cook 20 minutes, or until rice is tender and liquid has been absorbed.
  • While the rice is cooking, place broccoli in a separate medium saucepan with enough water to cover.
  • Bring to a boil, and cook until tender but firm; drain excess water.
  • Mix broccoli and cashew halves into the rice mixture, and serve warm.

  • Begin by heating olive oil in large skillet or saucepan on medium heat. Add orzo and white rice to skillet; stir, to cover orzo and rice well with the oil. Stir mixture often (to prevent burning) and cook until the orzo turns a nice golden brown. This will only take a few minutes.
  • The next step is to add vegetable broth to the pilaf mixture in skillet. Bring the liquid to a rolling boil, then reduce heat to Low. Cover the skillet (or pan), and cook between 10-15 minutes, until ALMOST all of the broth has been absorbed (mine took 12 minutes, so keep an eye on it). At that point, add chopped broccoli. Stir broccoli into the pilaf; cook mixture for 3 more minutes.
  • Remove skillet (or pan) from direct heat; add the shredded cheddar cheese, butter, salt and pepper. Stir until cheese and butter have melted and blended in completely. Put a lid on the pan, keep covered, and let the pilaf rest for 4-5 minutes, then remove lid, and fluff pilaf with a fork. Transfer to a serving bowl, if desired, and serve. Enjoy!
