1/4 cup KRAFT Peppercorn Ranch Dressing
1 Tbsp. GREY POUPON Savory Honey Mustard
6 cups small broccoli florets, steamed
3 cups small cauliflower florets, steamed
1/2 cup crushed round buttery crackers

Steps:

  • Combine first 3 ingredients in medium microwaveable bowl. Microwave on HIGH 30 to 45 sec. or until cream cheese is melted; stir until blended.
  • Add vegetables; toss to coat.
  • Spoon into serving bowl; sprinkle with cracker crumbs.

2 tablespoons unsalted butter
3 tablespoons olive oil
3 cups 1-inch broccoli florets (about 1 medium broccoli crown)
3 cups 1-inch cauliflower florets (about 1/2 medium head)
Kosher salt
4 cloves garlic, finely chopped
1 lemon, optional

Steps:

  • Heat the butter and 2 tablespoons of the oil in a large skillet over medium-high heat.
  • Add the broccoli and cauliflower in a single layer, sprinkle with 1/2 teaspoon salt and cook, undisturbed, until the undersides are browned in spots, 3 to 4 minutes. Continue to cook, stirring every 1 to 2 minutes, until browned all over and crispy and tender, about 5 minutes more.
  • Reduce the heat to medium and push the vegetables to one side of the skillet. Add the garlic and remaining 1 tablespoon oil to the empty side and cook, stirring, about 30 seconds. Mix the garlic into the vegetables and add a large splash (about 3 tablespoons) of water. Squeeze in half a lemon, if using. Cook, stirring, until the juices have evaporated.

This is a favorite family recipe that I ate quite a bit of when I was pregnant. It's just one of those things that you can't get enough of!

½ cup uncooked white rice
10 ounces broccoli florets
10 ounces cauliflower florets
½ cup butter
1 onion, chopped
1 pound processed cheese food, cubed
1 (10.75 ounce) can condensed cream of chicken soup
5 ⅜ fluid ounces milk
1 ½ cups crushed buttery round crackers

Steps:

  • In a saucepan bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes. Drain and set aside.
  • Simmer broccoli and cauliflower florets in water for 10 minutes, or until crunchy. Meanwhile, preheat oven to 350 degrees F (175 degrees C).
  • In a large saucepan, melt butter and saute onion. Stir cauliflower, broccoli and rice into the saucepan. Once the vegetables and rice are coated, stir in the cheese, chicken soup and milk. Transfer the entire mixture to a 9x13 inch baking dish and sprinkle the crackers on top.
  • Bake in a preheated 350 degrees F (175 degrees C) oven for 30 minutes.

10 cups broccoli florets (about 3-1/2 pounds)
6 cups seedless red grapes (about 3 pounds)
1 cup sliced celery
6 green onions, sliced
2 cups mayonnaise
2/3 cup sugar
2 tablespoons cider vinegar
1 pound sliced bacon, cooked and crumbled
1-1/3 cups slivered almonds, toasted

Steps:

  • In a large salad bowl, combine the broccoli, grapes, celery and onions. In a small bowl, combine the mayonnaise, sugar and vinegar. Pour over broccoli mixture and toss to coat. , Cover and refrigerate for at least 4 hours or overnight. Just before serving, gently stir in bacon and almonds.

1 large egg

4-1/2 cups fresh broccoli florets
1 cup shredded cheddar cheese

  • In a bowl, combine the first 7 ingredients; beat until smooth. Fold in half of the onions. Spread onto the bottom and up the sides of a greased 13x9-in. baking dish, forming a shell. Bake, uncovered, at 350° for 20-25 minutes or until edges are lightly browned., In a saucepan, cook broccoli in a small amount of simmering water until crisp-tender; drain. Place in the potato shell. 1 large cauliflower, in florets
6 tablespoons butter
1/4 cup flour
1 teaspoon salt
2 cups milk
2 tablespoons prepared mustard
1/2 cup soft breadcrumbs
1/4 cup grated parmesan cheese

Steps:

  • Cook cauliflower in boiling water until crisp tender, about 6 minutes.
  • Drain and transfer to a lightly buttered 1 1/2 quart baking dish.
  • In a small saucepan, melt 3 tablespoons of butter, whisk in flour and salt.
  • Stir until bubbly, then gradually add milk, stirring constantly until thick and smooth, about 3 minutes.
  • Stir in mustard and pour sauce over cauliflower in baking dish.
  • Melt remaining butter, add bread crumbs and toss to coat.
  • Sprinkle Parmesan cheese over casserole, then top with buttered bread crumbs.
  • Bake at 375° for 20 minutes or until bubbly and brown.

2 cups cauliflower
2 eggs
½ cup mayonnaise
½ cup chopped onion
1 cup shredded Cheddar cheese, divided
½ cup butter, melted
1 (15 ounce) package seasoned croutons, crushed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Put broccoli and cauliflower in separate saucepans and pour enough water into the saucepans to cover the vegetables completely; bring each to a boil and cook until tender, 3 to 4 minutes. Drain each and mix in a 11x7-inch baking dish.
  • Beat eggs in a bowl until creamy. Mix mayonnaise, onion, and 1/2 cup Cheddar cheese into the eggs; pour over the vegetables. Pour melted butter over the broccoli mixture and top with the remaining Cheddar cheese. Sprinkle croutons over the entire dish.
  • Bake in preheated oven until browned and bubbling, about 40 minutes.

1 teaspoon cornstarch
1 teaspoon chicken bouillon powder
1 teaspoon sugar
1/2 teaspoon salt

7 cups broccoli, chopped (or florets)
1 garlic clove, minced (or 1/4 t. garlic powder)

Steps:

  • Stir together first 6 ingredients and set aside.
  • Heat cooking oil in wok or frying pan on medium-high. Add broccoli and garlic and stir-fry 3-4 minutes or until broccoli is tender-crisp.
  • Stir cornstarch mixture and add to broccoli mixture until boiling and thickened.
