BROCCOLI NOODLES AND CHEESE CASSEROLE
This is a quick and easy recipe if you are in a hurry -- just noodles, broccoli, cottage cheese and Cheddar. My daughter loves it. It's always a hit.

- Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- Steam broccoli until bright green and tender, 5 to 10 minutes. Combine broccoli, pasta and cottage cheese in 2 quart baking dish; mix well.
- Sprinkle pasta mixture with Cheddar cheese and bake for 8 to 10 minutes, until cheese is bubbly.

This is so easily put together and quick. I had some pasta and broccoli cheese soup and I came up with this.... Really a wonderful and tasty dish.. You could also add some fresh broccoli and cooked chicken.... I hope you enjoy this as much a our family did.. Also feel free to add more cheese...

- Cook and drain pasta.
- Mix broccoli cheese soup with milk.
- Stir in 1 stick of melted butter and 1 cup shredded cheddar cheese into soup mix.
- Gently mix the pasta with the soup mix.
- Spray baking dish with non stick spray.
- Pour pasta into baking dish.
- Top with 1 cup of shredded cheddar cheese.
- Mix bread crumbs with 1 stick of melted butter and place on pasta.
- Bake 450 for 20 minute or until hot.

- In a large pot of boiling salted water cook rigatoni or fusilli pasta with one tablespoon of oil until al dente. Drain.
- Meanwhile, in a large saucepan melt butter or margarine. Stir in flour and milk and whisk until mixture boils and thickens. Add grated Parmesan cheese, salt, garlic salt, nutmeg, thyme and grated Cheddar cheese and stir until blended.
- Add cooked broccoli and drained pasta to cheese sauce. Mix well. Pour into a greased 9x13 inch baking dish. Sprinkle with grated Swiss cheese.
- Bake uncovered at 350 degrees C(175 degrees C) for 20 minutes. Let stand 10 minutes before serving.

- Place broccoli and water in a large microwavable bowl. Cover loosely with plastic wrap, and microwave on HIGH until tender, about 8 minutes. Set aside.
- Melt 3 tablespoons of the butter in a Dutch oven over medium-high. Add onion, and cook, stirring occasionally, until softened, about 5 minutes. Add garlic, and cook, stirring occasionally, 1 minute. Sprinkle flour evenly over onion mixture, and cook, stirring constantly, 1 minute. Whisk in milk, and cook, stirring constantly, until thickened, about 2 minutes. Reduce heat to medium, and whisk in mayonnaise, mustard, salt, and pepper until smooth. Add cheese, and stir until melted and smooth. Add broccoli, and stir to coat. Transfer to a lightly greased 13- x 9-inch broiler-proof baking dish, and cool to room temperature, about 30 minutes. Cover with aluminum foil, and chill until ready to bake, up to 1 day ahead.
- Preheat oven to 350°F. Remove casserole from refrigerator while oven preheats. Bake, covered, until hot and bubbly, about 1 hour.
- Place remaining 1 tablespoon butter in a medium-size microwavable bowl, and microwave on HIGH until melted, about 15 seconds. Add crackers and parsley, and stir to combine. Sprinkle evenly over casserole. Increase oven temperature to broil on HIGH, and broil casserole until top is golden brown, about 1 minute. Let stand 10 minutes before serving.
