Baked Broccoli Rabe With Parmesan image

Broccoli rabe usually doesn't make it past a sauté pan with garlic and olive oil, nor does it need to. But the extra step of baking it in the oven with a shower of grated Parmesan on top - a suggestion from the chef John Schenk that was written up in a 1997 Minimalist column - is one to try. Blanch the broccoli rabe until it's bright green and nearly tender, then cook it in a pan with golden toasted garlic. From there, put it in a baking dish, sprinkle with cheese, and bake until it the cheese melts, which Parmesan does unevenly - but in a good way. This is a recipe that can easily be started, stopped and picked back up later, either after the blanching or after the sautéing. It can also be served at room temperature, so despite the three-step cooking process, it's pretty flexible.

3 pounds broccoli rabe, washed and trimmed
2 to 4 tablespoons olive oil, plus some for greasing the pan
10 garlic cloves, peeled and sliced
1 cup grated Parmigiano-Reggiano

Steps:

  • Bring a large pot of salted water to boil. Preheat the oven to 350 degrees. Drop broccoli rabe into the water, and cook until bright green and tender, about 3 minutes. Remove, and plunge into ice water. Drain.
  • Place 2 tablespoons olive oil in a skillet, and turn heat to medium-high. Toast garlic in oil until golden. Chop broccoli rabe into pieces, about an inch or two long, and add to skillet. Toss, then turn off heat.
  • Add broccoli rabe mixture to a baking dish. Sprinkle with grated cheese, and bake until cheese melts, about 10 minutes. Serve hot.

5 cups coarsely chopped broccoli rabe, fresh broccoli florets, or frozen broccoli florets
1 can (14.5 oz) Muir Glen™ stewed tomatoes, undrained
1 package (9 oz) refrigerated cheese-filled ravioli or reduced-fat cheese filled ravioli
1 tablespoon snipped fresh rosemary or 1 teaspoon dried rosemary, crushed
1/4 cup grated Asiago or Parmesan cheese (optional)

Steps:

  • In a large saucepan, heat oil over medium heat. Add leek and garlic; cook for 5 minutes. Add broth, the water, and, if desired, crushed red pepper. Bring to boiling.
  • Add broccoli rabe, undrained tomatoes, ravioli, and rosemary. Return to boiling; reduce heat. Cover and simmer for 7 to 8 minutes or until broccoli rabe and ravioli are tender. If desired, sprinkle each serving with cheese.

1 recipe Chef Annes All-purpose Pasta Dough
Semolina, for dusting
Kosher salt
2 bunches broccoli rabe, tough lower stems removed
3 cups ricotta
3 eggs
3/4 cups grated Parmigiano
2 sticks unsalted butter
1 to 1 1/2 cups chicken stock
Kosher salt
1 cup grated Parmigiano, plus more for garnish
1 cup pistachios, toasted and coarsely chopped, for garnish

Steps:

  • Filling:
  • Bring a large pot of well-salted water to a boil over medium heat. Set a bowl of well-salted ice water on the counter. Add the broccoli rabe and cook for 1 minute, remove the broccoli rabe from the boiling water and plunge it immediately into the salted ice water. Reserve the boiling water to cook the pasta. Once the broccoli rabe has cooled, remove it from the ice water and squeeze out any excess water.
  • Finely chop the broccoli rabe (the food processor works really well here) and put it in a large mixing bowl. Add the ricotta, eggs and Parmigiano and season with salt, to taste. Taste for seasoning and adjust, if needed. Put the filling in a pastry bag and reserve.
  • Pasta:
  • Set the pasta roller on the widest setting (#1). Start with half the pasta dough, keep the other half covered until ready to use. Using your hands, flatten the dough as much as you can to facilitate it going through the pasta roller. Run the dough through the roller, twice dusting it in between rolls if it feels sticky. Fold the dough into thirds and turn it 90 degrees (a quarter turn) and run it through the pasta machine 2 to 3 times. Move the roller to the next setting (#2) and run the pasta through. Dust lightly with flour if the dough feels sticky. Continue to run the dough through the machine reducing the opening (or moving the setting to the next larger number) in between every roll. Stop when you get to the correct thinness, this will usually be around number 5 or 6 on the dial, but every machine is different, you will have to be the judge of your own pasta thickness.
  • *Tip: When rolling out pasta dough, always hold the pasta on the tops of your hands- palms down! If you hold it fingers up you will create stretch marks and those are never good!
  • To assemble the ravioli:
  • Lay out the dough on a flat surface. Brush the lower half of the dough (the part that is closest to you) lightly with water. This is the glue that will hold the ravioli together. Use the glue sparingly, if you use too much the pasta will slide and not stick. Pipe 1-inch balls of filling onto the pasta that has been brushed with water, leaving about 2 inches between each ball. Fold the top half of the pasta down over the filling to meet the bottom edge. Using your index fingers, poke around each filling ball to seal the ravioli shut, AND to make sure that there are no air bubbles. Using a fluted round cutter or a fluted pastry wheel or even a drinking glass, cut out each ravioli. Transfer to a sheet tray dusted with semolina or polenta and reserve until ready to use.
  • To cook the ravioli and make the sauce:
  • Add the butter to a large saute pan and bring to a medium heat. Add 1 cup of chicken stock and season with salt, to taste. Shake the pan to incorporate the butter and stock and simmer until the stock has reduced a bit and the sauce looks velvety and is the consistency of heavy cream. If the sauce thickens too much, adjust the consistency with chicken stock.
  • Add the ravioli to the pot of boiling water and cook for 3 to 4 minutes. Carefully remove the ravioli from the cooking water and put them immediately into the sauce. Bring the sauce to a boil shaking frequently to be sure that the ravioli dont stick to the bottom of the pan. Sprinkle with 1 cup of Parmigiano and swirl to combine the cheese with the sauce.
  • Transfer the ravioli to a serving platter and sprinkle with a little more grated Parmesan. Garnish with chopped pistachios and serve.

A calzone has many of the perks of pizza. Easy and crowd pleasing, it's a good vehicle for using up odds and ends in the fridge. It also has some happy benefits of its own. For one, you can get away with adding a lot more cheese. In fact, it's practically mandatory. You need to stuff enough ricotta and mozzarella into the dough so that it ripples attractively, rising as it bakes. Unlike an apple turnover, which wants to stay flat, a calzone should peak and singe at the top. (True, you could cram the dough full of vegetables and the like, but if you love cheese, calzones are the place to indulge.) Another calzone advantage is the element of surprise. Pizza gives it all up as soon as it lands on the table; serve a calzone to a group and let them anticipate the moment when they find out what's inside.

1 bunch broccoli rabe, tough stems removed

1 8-ounce ball pizza dough, homemade or purchased
1 cup fresh ricotta
1/4 cup finely grated Parmesan cheese
3 ounces fresh mozzarella, sliced
2 tablespoons pitted good black olives, thinly sliced
Pinch red pepper flakes

Steps:

  • Heat the oven to 500 degrees. Lightly oil a baking sheet.
  • Heat a large skillet over medium heat. Add 2 tablespoons oil and 2/3 of the garlic. Cook until fragrant but not brown, about 20 seconds. Add the broccoli rabe and 3 tablespoons water. Cook over medium-high heat for 3 minutes. Reduce heat, cover, and cook until stems are tender, 2 to 3 minutes more. Season with salt and pepper.
  • Lightly flour a work surface, and stretch or roll the dough into a 12-inch round. Spoon ricotta on half the dough, leaving a half-inch border. Top with Parmesan, remaining garlic and mozzarella. Mound broccoli rabe over the cheese, and sprinkle with olives and pepper flakes. Brush the edges of the dough with water, and fold dough in half, over filling; pinch the edges of the dough together to seal.
  • Transfer calzone to baking sheet. Brush the top with olive oil. Bake until crust is golden and firm, 15 to 20 minutes. Let cool 5 minutes before serving.

This dish is the ultimate comfort food for me. And the sauce is a little on the lighter side because you may choose to use very little butter or heavy cream. I use skim milk, and find that I don't miss the cream at all. Feel free to experiment with different vegetables layered in this as well. Asparagus and/or artichoke hearts make nice substitutions. For the ravioli, try and find a "family size" package (24-28 oz), or you may use two smaller packages.

2 (10 ounce) packages frozen chopped spinach, defrosted and squeezed dry
1 tablespoon olive oil
4 -6 garlic cloves, finely chopped
1 1/2-2 lbs broccoli (you can use fresh or frozen, chopped but if frozen, must be defrosted)
salt and pepper
2 tablespoons butter or 2 tablespoons margarine
2 tablespoons flour
2 cups vegetable stock (or chicken stock if you prefer)
1/2 cup skim milk (can use whole milk or cream if you like a richer sauce)
1/2 cup grated parmigiano-reggiano cheese
1/4 teaspoon freshly grated nutmeg (optional)
salt and black pepper
2 cups mozzarella cheese or 2 cups italian four cheese blend
1 (28 ounce) package frozen cheese ravioli (or use your favorite, mushroom, spinach, even meat)

Steps:

  • Preheat broiler or oven to 500 Bring large stockpot of water to a boil.
  • Steam broccoli for about 5 minutes until bright green and slightly tender.
  • As water heats up to a boil, heat a large skillet over medium heat.
  • Add olive oil and chopped garlic, and saute for about 1 minute.
  • Next, add drained spinach to the pan, along with the steamed broccoli.
  • Toss vegetable well with garlic oil to coat evenly.
  • Sauté for about 5 minutes.
  • Season with salt and pepper, remove from the heat into a bowl, and set aside.
  • For the sauce: In the same skillet, melt the butter and whisk in the flour into the butter and cook for about 1-2 minutes.
  • Add stock, raise heat and bring mixture to a boil, whisking the entire time.
  • Slowly whisk in milk and parmesan, and let mixture bubble for about 2 more minutes until thickened.
  • Season sauce with nutmeg (if desired) and salt and pepper.
  • For the pasta: When pasta water is boiling add salt, stir, and add ravioli.
  • Cook for about 4 or 5 minute, until slightly underdone.
  • The ravioli will finish cooking with sauce under the broiler.
  • Place a thin layer of the white sauce in an oven proof casserole dish.
  • Drain ravioli.
  • Layer ½ of the ravioli in the baking dish.
  • Next add ½ of the broccoli/spinach mixture Add a couple ladles of the sauce to cover this first layer, a little more than half of it.
  • Add the rest of the vegetable mixture, then the remaining half of the ravioli.
  • Spoon the remaining sauce over the top (a little less than half of it) and top with grated cheese of your choice.
  • Place casserole dish under the broiler or in oven about 8 or so inches from the element.
  • Broil about 5 minutes until cheese melts and is bubbly and starting to brown.
