1 pound large shrimp, deveined (tail on or off)
2 tablespoons olive oil
2 garlic cloves
1/2 teaspoon dried oregano
1/4 teaspoon onion powder
1/2 teaspoon kosher salt*
1/2 cup breadcrumbs (optional; homemade* or plain purchased breadcrumbs)
Lemon wedges
Chopped parsley or cilantro, for garnish

Steps:

  • Preheat the broiler.
  • If frozen, thaw the shrimp.
  • Pat the shrimp dry.
  • Mince the garlic. In a medium bowl, toss with the shrimp with the olive oil, garlic, oregano, onion powder, and kosher salt*. Toss until fully combined. If using breadcrumbs, add them and toss until all shrimp are coated.
  • Place the shrimp on a baking sheet in an even layer. (You can add a few additional pinches of breadcrumbs if there were places where they did not stick to the shrimp.) Place the baking sheet in the oven and broil until juicy and opaque, about 3 to 6 minutes, until juicy and opaque, rotating the tray as necessary for even cooking.
  • Spritz with fresh lemon juice from lemon wedges, sprinkle with chopped parsley or cilantro, and serve immediately.

4 ounces rock shrimp (or peeled medium shrimp, deveined)
1 tablespoon minced shallot
2 teaspoons finely chopped peeled fresh ginger
1 tablespoon mayonnaise
1/2 teaspoon Sriracha (Asian chili sauce) or other chili sauce
1 teaspoon finely grated lime zest, plus 2 teaspoons fresh lime juice
1/2 medium baguette, sliced into 20 thin slices (less than 1/4 inch thick)
3 tablespoons unsalted butter, melted

Steps:

  • Pulse shrimp, shallot, and ginger in a food processor until a coarse paste forms. Transfer to a bowl. Stir in mayonnaise, Sriracha, and lime zest and juice.
  • Heat broiler. Working in 2 batches, toast bread slices on a rimmed baking sheet 8 inches from heat source until golden brown, about 30 seconds. Remove from oven. Flip bread, generously brush tops with butter, and spread with a thin layer of shrimp paste (about 1 teaspoon each).
  • Broil until shrimp mixture is opaque and cooked through and toasts are browned, about 1 minute. Serve warm.

¼ cup diced water chestnuts
¼ cup chopped cilantro leaves

1 teaspoon toasted sesame oil
1 teaspoon Asian fish sauce

Steps:

I didn't actually like shrimp toast growing up, but when I finally got around to trying it, I couldn't believe how much flavor was packed into one tiny unassuming square. These are crunchy on the outside, soft in the middle and really dangerous because they are so so addictive.

8 ounces raw shrimp, peeled, deveined and tails removed (the size does not really matter here)
1 large egg white
1 teaspoon sriracha, plus more for serving
1/2 teaspoon kosher salt
1/2 teaspoon toasted sesame oil
5 turns black pepper
2 cloves garlic, minced
2 scallions, trimmed and thinly sliced
1 stalk lemongrass, end trimmed, dry outer leaves discarded, bottom few inches of white part bruised with the back of a knife and finely minced
3 slices potato bread (or white bread), crusts removed
2 to 3 quarts neutral oil (vegetable or peanut are fine)
1 teaspoon sesame seeds

Steps:

  • Put the shrimp and egg white in a food processor and pulse until pasty but still a little chunky. Add the sriracha, salt, sesame oil, black pepper, garlic, scallions and lemongrass and pulse until just combined.
  • Divide the mixture among the bread slices and spread in an even layer to the edge. At this point, you can freeze the toasts while you heat the oil (although freezing is not totally necessary, it makes for cleaner cuts and easier handling).
  • Bring 1 1/2 inches of oil to 350 degrees F in a heavy-bottomed pot.
  • Cut each bread slice into 4 squares and sprinkle with the sesame seeds. Carefully place each piece shrimp-side down into the oil. Fry until golden, 2 to 3 minutes. Remove onto a rack or paper towel. Serve immediately drizzled with sriracha.

2 tablespoons fresh lemon juice
½ cup heavy cream
2 tablespoons minced fresh Italian parsley
1 pinch salt, or to taste

Steps:

  • Butterfly shrimp and place in a mixing bowl. Add cayenne, paprika, and garlic and stir until shrimp are evenly coated. Refrigerate until needed.
  • Trim most of the crusts off of the bread.
  • Add 4 tablespoons melted butter to a skillet over medium heat. Add both slices of bread and toast until golden brown, 3 to 4 minutes per side. Remove bread to a plate and wipe out any crumbs.
  • Add remaining melted butter to the skillet and increase heat to high. When the pan is very hot and you see the first wisp of smoke, add shrimp and use tongs to spread into an even layer. Sear, without stirring or tossing, for 1 minute.

  • Turn off the heat and stir in parsley. Taste and add salt if needed.
  • Divide shrimp and sauce evenly over each piece of toasted bread.

1 acorn-size piece fresh ginger, minced
1 small onion, minced
1/2 teaspoon sugar
1 egg, beaten
1 teaspoon salt
1 tablespoon cornstarch
1 tablespoon dry Sherry
Black pepper as desired
10 slices slightly stale bread
Oil for deep-frying

Steps:

  • Peel and devein shrimp. Place on a chopping board, add ginger and onion and chop until very fine using a Chinese cleaver or a large chef's knife. Transfer the mixture to a bowl.
  • Add sugar, egg, salt, cornstarch, sherry and black pepper and mix well. Spread mixture thickly on one side of the bread slices.
  • Heat oil to 375 degrees. Working with a few slices of bread at a time, fry them, shrimp side down, for about 1 1/2 minutes or until golden brown. Turn and fry the other side until golden brown. Remove, drain, cut into quarters and serve as an appetizer with soy sauce, Chinese mustard, rice vinegar, oyster sauce, hoisin sauce or plum sauce.

1/4 cup dry white wine (optional)
1 pound fresh tomatoes, thinly sliced

Steps:

  • Finely chop 2 cloves of garlic and add to a small bowl with parsley; season with salt and pepper and set aside. Thinly slice remaining 4 garlic cloves; set aside.
  • Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add bread and toast until golden brown on one side, 2 to 3 minutes. Turn bread, adding another drizzle of olive oil as needed and toast on the other side, another 2 to 3 minutes. Transfer to a large serving platter and set aside.
  • Heat butter and remaining 2 tablespoons olive oil in the same skillet. Add the sliced garlic and season with salt and pepper. Cook, swirling skillet occasionally, until the butter starts to brown and the garlic is golden, 2 to 3 minutes.
  • Add shrimp and season with salt and pepper. Cook, tossing occasionally, until shrimp are bright pink and just cooked through, 3 to 4 minutes. Add white wine, if using, and let cook for a minute or two, just to take the edge off the wine (don't reduce so much that you lose that sauciness, though). Remove pan from heat.
  • Place tomatoes on top of toast and sprinkle with half of the parsley-garlic mixture. Spoon shrimp and any buttery sauce in the skillet over the tomatoes and toast. Finish with remaining parsley-garlic mixture and serve with lemon wedges alongside.
