CRANBERRY ROSEMARY WINE JELLY

4 (12-ounce) bags fresh or frozen cranberries (14 cups; do not thaw)
3 cups sugar
2 cups dry white wine
2 (5-inch) fresh rosemary sprigs
3 2/3 cups cold water
1 tablespoon plus 2 teaspoons unflavored gelatin (from three 1/4-ounce envelopes)
Special Equipment
a 6-cup nonreactive mold (see cooks' note, below) or glass loaf pan

Steps:

  • Bring cranberries, sugar, wine, rosemary, and 2 2/3 cups water to a boil in a 6- to 8-quart pot, stirring until sugar is dissolved, then reduce heat and simmer, partially covered, stirring occasionally, until all berries have burst, 8 to 10 minutes. Pour into a large colander lined with dampened paper towels and set in a deep bowl, then let stand until all juices have drained through, 10 to 15 minutes, and discard solids. If you have more than 4 cups cranberry liquid, boil in a small saucepan until reduced; if less, add water to bring total to 4 cups.
  • Stir together gelatin and remaining cup water in a clean small saucepan and let stand 1 minute to soften. Heat over moderate heat, stirring, until gelatin is dissolved. Stir gelatin mixture into cranberry liquid until combined. Pour cranberry mixture into lightly oiled mold (see cooks' note, below), skimming off any foam. Cool to room temperature, then cover with plastic wrap and chill until firmly set, at least 12 hours.
  • To unmold, run tip of a thin knife between edge of mold and jelly. Tilt mold sideways and tap side of mold against a work surface, turning it, to evenly break seal and loosen cranberry jelly. Keeping mold tilted, invert a plate over mold, then invert cranberry sauce onto plate.

Steps:

  • Put the cranberries in a saucepan. Remove wide strips of zest from 1/2 orange with a peeler; add to the saucepan with the juice of both oranges (about 1/2 cup). Add the sugar, coriander, a pinch of salt and 1 cup water. Bring to a simmer over medium heat; cook, stirring occasionally, until the berries burst and the sauce thickens, 15 to 20 minutes.
  • Remove from the heat and remove the orange zest; stir in the vanilla. Transfer to a blender and puree until smooth. Strain through a fine-mesh sieve into a serving dish, pushing the sauce through with a rubber spatula. Refrigerate until set, at least 3 hours.

2 1/2 cups firmly packed fresh mint leaves
1/4 cup fresh rosemary leaves
2 cups dry white wine
1/4 cup fresh lemon juice plus additional if needed
3 1/2 cups sugar
a 3-ounce pouch liquid pectin

Steps:

  • In a food processor or blender blend together the mint, the rosemary, and 1 cup of the wine until the herbs are chopped fine and transfer the mixture to a bowl. In a small saucepan bring the remaining 1 cup wine to a boil, add it to the herb mixture, and let the herb mixture stand, covered, for 45 minutes. Strain the herb mixture through a sieve lined with several layers of rinsed and squeezed cheesecloth set over a large measuring cup, pressing hard on the solids,and add 1/4 cup of the lemon juice. (There should be exactly 2 cups liquid; if there is less add enough of the additional lemon juice to measure 2 cups liquid.) Transfer the liquid to a kettle, stir in the sugar, stirring until the mixture is combined well, and bring the mixture to a rolling boil over high heat, stirring constantly. Stir in the pectin quickly, bring the mixture again to a full rolling boil, stirring constantly, and boil it, stirring constantly, for 1 minute. Remove the kettle from the heat, skim off any foam with a large spoon, and ladle the mixture immediately into 4 sterilized 1/2-pint Mason-type jars, filling the jars to within 1/8 inch of the tops. Wipe the rims with a dampened cloth and seal the jars with the lids. Invert the jars for 5 minutes and turn them upright. (Instead of being inverted, the jars may be put in a water bath canner or on a rack set in a deep kettle. Add enough hot water to the canner or kettle to cover the jars by 1 to 2 inches and bring it to a boil. Process the jars, covered, for 5 minutes, transfer them with tongs to a rack, and let them cool completely.) Store the jars in a cool, dark place.

  • Combine all ingredients in a heavy saucepan and bring to a boil. Reduce the heat to low and simmer, covered, ten minutes until berries have burst and are soft.
  • Strain through a fine sieve or food mill, pushing the soft solids through. Stir the pulp to combine thin and thick portions together. Discard solids left in sieve.
  • Pour into serving bowl, cover, and refrigerate several hours until firm. Can be made several days ahead.

3 1/2 cups wild cranberry juice
7 cups sugar
1 (6 ounce) fluid ounces box Certo (2 pouches) or 1 box fruit jell (2 pouches)

Steps:

  • Note: 3 1/2 cups of wild cranberries equals 3 cups of prepared juice.
  • ------Day1------.
  • Pick cranberries.
  • Remove stems and leaves.
  • Wash and drain.
  • Prepare a pan as a strainer.
  • This is done by using 2-3 layers of good cheesecloth, (or you can use an old but clean linen dish towel).
  • Drape over a large pan and secure with clothes pins.
  • A large enamel basin works well.
  • Using a stock pot or a large canning pot, add berries.
  • Add water to barely cover the berries.
  • Bring to a boil.
  • Turn down heat to medium or medium low.
  • Continue cooking until cranberries start popping and they look translucent.
  • (about 1-2 hours) Pour the cranberries onto the prepared strainer.
  • Do not handles the berries, even with a spoon, while draining.
  • (Handling the berries will make a cloudy jelly.) Drain overnight.
  • ----------Day2-----------.
  • Measure out 3 and 1/2 cups of the wild cranberry juice into a stockpot or small canning pot.
  • Add the 7 cups of sugar.
  • Bring to a full boil, stirring constantly.
  • Add the 2 pouches of"Certo" or"Fruit Jel", still stirring, and bring back to full boil.
  • Boil for 1 minute.
  • Remove from heat and let sit 3 minutes.
  • Skim the form off with a skimmer or metal spoon.
  • Pour quickly into prepared jars.
  • Process jars.
  • (Note: Instead of processing the jars I pour melted parrafin over the top of jell. About 0.125 of an inch. Cover with lids and let cool on a towel.) Once jars are cool, test each one for a seal by pressing the center of the lid.
  • The lid should not flex up and down.
  • If it does fefrigerate or reprocess with a new lid.
  • Note: Apple juice can be added to the wild cranberry juice if there isn't quite enough juice to equil the 3 1/2 cups.

1 box SURE-JELL Fruit Pectin
1/2 tsp. butter or margarine
4-1/2 cups sugar, measured into separate bowl

Steps:

  • Bring boiling-water canner, half full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain jars well before filling.
  • Measure juice into 6- or 8-qt. saucepot. Stir in pectin. Add butter to reduce foaming. Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Stir in sugar. Return to full rolling boil and boil exactly 1 min., stirring constantly. Remove from heat. Skim off any foam with metal spoon.
  • Ladle immediately into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.) Cover; bring water to gentle boil. Process 5 min. Remove jars and place upright on a towel to cool completely. After jars cool, check seals by pressing middles of lids with finger. (If lids spring back, lids are not sealed and refrigeration is necessary.)

4 large quinces , roughly chopped
450g Bramley apples , roughly chopped - don't worry about coring
450g fresh or frozen cranberries
1kg bag preserving sugar (not with added pectin)
1 tsp rosewater
a few small, fresh bay leaves , to decorate the jars (optional)

Steps:

  • Put the quinces, apples and cranberries in a large pan. Cover with water and bring to the boil, then turn down the heat and cook more gently for about 1 hr until the fruit is really soft.
  • Hang a jelly bag over a large mixing bowl, tip the fruit in and let it drip overnight - don't be tempted to squeeze the bag, or the pulp will come through and your jelly will be murky.
  • The next day, measure the amount of juice you have and, for every 1ml of liquid, match with grams of the sugar (so for 500ml you'd need 500g sugar). Tip both into a preserving pan, or large pan, and bring slowly to the boil, stirring until the sugar dissolves. Increase the heat once the sugar has gone and boil until it reaches 110C on a sugar thermometer.
  • Skim any scum off the surface of the liquid, then stir in the rosewater. Ladle into sterilised jars (see below left), adding a bay leaf to each one, if you like, and cover with lids - or wax discs, cellophane and elastic bands.
