Steps:
- Preheat the oven to 375 degrees F.
- Line a baking sheet with parchment and grease the paper with butter. Rinse the flounder; pat dry with paper towels. Place the fish on the prepared baking sheet with head-side up.
- Starting on one side of the fish, insert a knife horizontally into the slit. Begin cutting, about 1 inch from the head, between the flesh and bone, stopping just before the tail to form a pocket. Cut another pocket on the opposite side of the fish.
- Combine the crabmeat, saltines, mayonnaise, parsley, egg, green onion and Old Bay Seasoning in a medium bowl and fold together. Spoon the mixture evenly into the prepared fish pockets.
- Sprinkle the fish with the bread crumbs and drizzle with the melted butter. Bake until the fish flakes easily when tested with fork, about 25 minutes.
BROILED FLOUNDER (SO EASY!)
This is one of the easiest ways to prepare fish. We ate lots of flounder growning up. I say that tongue-in-cheek. We actually did eat lots of fish, but for some reason when she was really little my baby sister declared the only fish she liked was flounder. So whenever we had fish, no matter what kind it was, if somewhat asked what kind of fish it was we always answered, "Flounder (wink, wink)."

Steps:
- Preheat the oven to 350 degrees F.
- In a medium saute pan over low heat, melt the butter; add the onion and a pinch of salt and sweat until translucent. Add the garlic and continue to cook for another minute. Add the spinach and lemon zest and cook until just heated through. Season with the salt and pepper, add the parsley, and stir to combine. Remove from the heat and keep warm.
- Place the heavy cream and wine into a saucepan over medium heat. Once the mixture begins to simmer, gradually add the cheese and stir until melted. Set aside and keep warm.
- If the fillets are large, cut in half. Season each filet on both sides with salt and pepper. Divide the spinach mixture evenly among the fillets and roll the fish around the mixture. Place the rice into a 2 1/2-quart casserole dish and spread evenly. Place each roll on top of the rice, seam side down. Pour over the cheese sauce and place in the oven for 25 minutes. Allow to cool for 5 minutes before serving.

BROILED FLOUNDER
My mom passed away before she could give me her recipe, but I think I got it close. It is a simple way to do a great fish, if your lucky enough to get a whole flounder.

Steps:
- Heat brolier on high.
- Score the fish in two or three spots on the dark side.
- Melt butter and worcestershire sauce with juce from half a lemon and garlic.
- Rub fish down with salt and pepper on both sides, depending on the size of your fish you might need more or less salt and pepper.
- Put fish under the broiler for 3 minuets.
- Slide the fish out of the broiler and paint it with butter and garlic sauce every minuet or so untill the fish is done. I follow this rule: if you can stick a toothpick into the widest part of the fish, then place the toothpick to your lips and the toothpick is warm, your fish is done.
- When fish is done drizzle with the juice from the other half of your lemon.
- I like putting the whole fish on the table and let everybody digin.

Steps:
- Sauté the finely chopped onion in 6 tablespoons butter until soft; add celery and sauté 2 or 3 minutes longer. Add shrimp and mushrooms (with their liquid) and sauté until the shrimp are pink; then add crabmeat, bay leaf, Worcestershire, cream, and enough bread crumbs to hold the dressing together. Season to taste. Add the wine and stuff the fish. Close the slits with the aid of small skewers and lace up. Heat 2 tablespoons oil along with 2 tablespoons butter in broiler pan and place the fish in the pan. Broil the fish slowly under a low flame, basting with the butter/oil mixture as the fish begins to brown. Add a little more wine to the broiler pan to increase basting liquid and keep the fish moist. It is not necessary to turn the fish. Keep the flame low and when the top of the fish is golden brown or slightly darker, the fish will be cooked through. Spoon the remaining sauce from the pan over the fish. Sprinkle with lemon juice.
