Steps:
- Reserve about a third of the beans. Mash the rest of the beans in a medium bowl with a large fork. Set aside.
- Heat the oil in a medium skillet over medium-high heat. Add the onion, and cook until lightly browned, about 4 minutes. Add the garlic and continue to cook, stirring, until lightly browned. Add the spices and cook until fragrant about 1 minute.
- Add the mashed beans and half the broth; cook, stirring frequently, until slightly thickened, about 5 minutes. Add the reserved beans and the enough of the remaining broth to loosen up the beans. Simmer until the beans are thick but not pasty, about 2 minutes more. Season with salt and pepper to taste. Stir in the fresh coriander, if desired, and serve.

- Set oven control to broil. Cut rolls horizontally in half. Broil cut sides up 2 to 3 inches from heat about 1 minute or until golden brown.
- Spread each roll half with 2 tablespoons beans. Sprinkle each with 1 tablespoon cheese.
- Broil with tops 2 to 3 inches from heat about 1 1/2 minutes or until cheese is melted.

REFRIED BEAN QUESADILLAS

- Heat the oil in a large frying pan and cook the onion and garlic for 2 mins. Add the cumin and cook for 1 min more. Tip in the beans, paprika and a splash of water. Using a potato masher, break the beans down as they warm through to make a rough purée. Season generously.
- Spread the refried beans onto 4 of the tortillas and scatter over the cheese and coriander. Spoon over the salsa, then top with the remaining tortillas to make 4 sandwiches. Wipe the frying pan with kitchen paper and return to the heat or heat a griddle pan. Cook each sandwich for 1-2 mins on each side until the tortillas are crisp and golden and the cheese is melting. Serve warm, cut into wedges, with extra salsa and soured cream for dipping.

I used a couple of the other recipes on here for a guideline and did my own thing. It turned out so well that I thought I would share this recipe for the best refried beans. Top with grated cheese if desired. Enjoy with chips, in a burrito, etc.

- Put the pinto beans in a bowl and cover with 2 inches of water. Soak for 8 hours to overnight.
- Transfer the beans to a medium saucepan and cover with water by about 1 inch. Add onion, garlic, chili powder, cumin, celery seed, salt, and black pepper. Bring to a boil, then reduce heat to low, cover, and let cook for 1 1/2 hours.
- Use a colander to separate the liquid from the solids. Transfer the solids to a food processor with diced tomatoes, hot sauce, oregano, and cayenne. Blend to desired consistency.

DESPERATE MAN'S REFRIED BEAN SANDWICH
It's tasty! I suppose I didn't have anything else around so I started thinking:) Preparation time is about 5 minutes if you toast the bread. This recipe is for when you want to make one sandwich. You can make as many as you wish.

- I like it right out of the can too.
- Take sufficient amount of refried beans from can or pan to place on one slice of bread (depends on how hungry you are).
- Add mayonnaise, pickles, salt and pepper according to your preference over beans.
- Add the other slice of bread and eat away!
- Don't knock it until you try it.

I had some leftover canned refried beans that I wanted to eat, but not cold and not out of the can, so I came up with this truly tasty sandwich!

- In a medium size skillet, heat the olive oil, saute the onion until slightly cooked, add the garlic, cook 1 minute.
- Add the refried beans, cook and stir until heated, reduce heat to low.
- Add the cheese. Stir to melt through.
- Toss in the jalapeno slices. Leave on low heat until heated through. Meanwhile, toast the sandwich rolls, open faced, under the broiler, until golden.
- Prepare the lettuce.
- When time for assembling the sandwich, season the beans with salt and pepper. Spread the bean mixture onto the sandwich roll. Top with lettuce and the French dressing.

They can also be the base of a satisfying sandwich, creating a welcome clash between savory and sweet. Mexicans seem to be divided on the sandwich topic: Some can't do without them; some can't stand them. It is a dish you will not find in a cafeteria or restaurant, but in Mexican homes and lunch boxes. The most well-known versions involve refried beans; this one is filled with chipotle refried beans, bacon and avocado. A sunny-side-up egg can be a good addition.

- Heat the oil in a medium skillet over medium. When hot but not smoking, stir in the onion and cook until softened and browned around the edges, 4 to 5 minutes.
- Add the beans and their liquid, along with the adobo sauce and the chipotles, if using. Cook over medium-high, mashing the beans thoroughly with a potato masher (or the bottom of a coffee mug) until they are warmed and begin to stick to the bottom of the skillet, about 3 minutes. Season with salt to taste.
- To assemble the sandwich, slice the conchas in half horizontally. Spread a very generous ¼ cup refried beans on the bottom of each concha. Top with the bacon slices, breaking them in half to fit, and avocado slices. Top with the top half of the concha. Slice in half and serve.
