RICH BROOKS' DAMN GOOD CHILI

Steps:

• Chop the onions, peppers, celery stalk, jalapeno, and mince the garlic clove.
• Heat the vegetable oil on med-high heat and saute the onions, peppers, celery stalk, jalapeno, and garlic until they are soft and onions are translucent.
• Add the beef and continue cooking until the beef is no longer pink, adding salt and pepper to taste.
• When finished cooking, spoon any excess oil from beef mixture and transfer the beef mixture to a soup/chili pot.
• In a separate bowl, mix the chili powder, cumin, garlic salt, hot sauce, salt and pepper, and the beer. Let it sit for a few minutes.
• Add the chili powder mixture from the bowl to the beef mixture in the soup pot.
• Next add the water, stewed tomatoes, tomato sauce, tomato paste, diced green chilies, and bay leaf to the pot.
• Cover and cook on low heat for 3 hours, stirring occasionally.
• I serve it with shredded cheese and a dollop of sour cream. It's also good with Fritos, crackers, or as just plain chili!

BROOKS BEANS® EASIEST EVER CHILI

Steps:

• Brown ground beef with green peppers and onion in large sauce pot.
• Add remaining ingredients and simmer uncovered 25 minutes. Serve, if desired, with shredded cheddar cheese and sour cream.

BROOKS' CHILI

Steps:

• 1. Add both cans of tomatoes, undrained, into a large pot. 2. Finely chop the entire onion and sautee for 10 minutes or until golden brown 3. Concurrently bring the 2 tbl sp of butter to heat and cook the turkey meat until solid white 4. Stir onions and turkey into the pot 5. Stir 6 small cans of tomato juice into the pot 6. Stir 1/4 cup sugar into the pot 7. Stir 2 packs of McCormick's Chili Seasoning into the pot 8. Bring to a boil over medium 9. Reduce to medium-low and simmer for 30 minutes

GRANNY'S FAST AND EASY CHILI

Steps:

• In large dutch oven cook ground round until no longer pink and nicely browned. Drain any grease that has accumulated.
• Add remaining ingredients to browned ground round and mix well. Cover and simmer for 20 minutes or until heated thru.
• Serve with shredded cheddar cheese, sour cream, or any topping of your choice.

GROUND BEEF CHILI WITH BEANS

Steps:

• Pour tomatoes into a large stockpot over medium heat.
• Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Transfer beef to the stockpot.
• Cook and stir chorizo in the same hot skillet over medium-high heat until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Transfer chorizo to the stockpot.
• Heat oil in the same skillet over medium-high heat. Saute onions and garlic until very well cooked and translucent, 7 to 10 minutes. Add cumin and chili powder and cook for about 3 minutes more. Transfer onions to the stockpot with lime juice, salt, and black pepper. Stir black beans, pinto beans, and kidney beans into the pot.
• Heat the skillet over medium-high heat and lightly saute bell peppers, about 5 minutes. Add to the stockpot.
• Add corn to the stockpot and season with additional salt and pepper. Add hot sauce to taste and simmer for 30 minutes more. Sprinkle cilantro on top and serve.
