- Preheat oven to 350°F. Grease a 9x5 baking loaf pan and line with parchment paper (where it hangs over the edges) for easy bread removal. Set aside. In a medium bowl, whisk flour, baking soda, salt and cinnamon until well combined. Set aside. In large bowl, whisk together bananas, vegetable oil, brown sugar, eggs and vanilla extract. Slowly whisk in the flour mixture, until there are no lumps. Pour batter into prepared loaf pan and smooth the top with a spatula. Sprinkle the top with brown sugar. Bake for 50 to 55 minutes, until a toothpick inserted in the center comes out clean. Around the halfway baking point, loosely tent the loaf pan with foil to prevent too much browning on top of the bread. Allow to cool for 15 minutes before removing from loaf pan. Slice and serve!

BROWN SUGAR BANANA BREAD
This is a delicious recipe from the cookbook "Eating For IBS" by Heather Van Vorous. Not only is it the best banana bread I've ever tasted, it's low fat and very safe for people with IBS! If eggs aren't a problem for you feel free to substitute 3 eggs for the 6 egg whites. Please note that the bananas have to be super-ripe for this recipe. IF THEY'RE NOT BLACK, THEY'RE NOT READY! This recipe doubles or triples easily, and extra loaves freeze well.

- Preheat oven to 350 degrees F.
- Sift flour, baking powder, baking soda, and salt into a large bowl and whisk with a metal whisk until well blended.
- In a large bowl blend the egg whites, oil, brown sugar, vanilla, and mashed bananas with an electric mixer until creamy.
- Add dry ingredients to wet and with a few swift strokes blend by hand until smooth.
- Pour into non-stick loaf pans sprayed with cooking oil and bake for 50-60 minutes or until a toothpick or cake tester inserted into the center of the loaf comes out clean.
- Cool on rack.
BROWN SUGAR BANANA BREAD RECIPE

- Throughly coat a 9 by 5 inch (23 by 13 centimeters) loaf pan with coconut oil, or olive oil - get the corners good! Optionally line the pan with parchment for easiest release and removal. Set aside.
- Place 3/4 cup (80 grams) of walnuts in a pan and transfer to the oven. Preheat the oven to 350 Fahrenheit (177 Celsius). The walnuts will toast in the preheating oven for about 18-20 or until lightly toasted and fragrant. Rough chop when cool. If using the extra 1/4 cup for the top of the banana bread, they should be untoasted. Rough chop those too. Set aside.
- In a small bowl, whisk the flour, cinnamon, salt, baking soda and powder. Set aside.
- In a large mixing bowl, whisk the mashed bananas, brown sugar, eggs, coconut oil, and vanilla extract until smooth - small banana lumps are okay. Fold the dry ingredients into the wet ingredients until no dry patches of flour remain. Fold in the yogurt until no white streaks remain. The batter will be creamy and rich. Fold in the toasted walnuts.
- Scrape the batter into the prepared loaf pan and sprinkle with the remaining 1/4 cup of raw, untoasted walnuts (they'll toast in the oven).
- Bake the banana bread at 350 Fahrenheit for 60-70 minutes, tenting with aluminum foil at 40 minutes if the bread is getting too dark. The bread is done with a tooth pick comes out clean, the bread is golden brown and fragrant.
- Cool in the pan for 10 minutes, then transfer the bread to a cooling rack.
- Store banana bread at room temperature in a covered container for up to four days. To freeze: freeze slices in a single layer on a sheet pan. Once frozen, transfer slices to a lidded container or freezer bag for up to two weeks. Sliced banana bread can go from freezer to toaster.

- Preheat the oven to 350 degrees F. Butter a 9-by-5-inch loaf pan.
- Heat the butter over medium-low heat in a small saucepan until the milk solids are deep golden brown and the butter smells toasted, 15 to 20 minutes.
- Whisk together the flour, granulated sugar, baking powder, baking soda, cinnamon and salt in a medium bowl.
- Stir the brown butter so that any milk solids that have fallen to the bottom are distributed equally throughout the butter. Reserve 4 tablespoons of the brown butter for the glaze. Whisk together the remaining brown butter, brown sugar, eggs and vanilla in a medium bowl, then fold in the mashed bananas.
- Fold the banana mixture into the flour mixture until just combined (it's OK if there are some lumps). Transfer the batter to the prepared loaf pan, and bake until the bread is golden brown and a toothpick inserted in the center comes out clean, 1 hour to 1 hour 10 minutes. Run a knife around the edges, and let cool completely in the pan on a rack.
- Once the bread has cooled, heat the reserved brown butter in a microwave-safe bowl in the microwave until melted, then whisk in the confectioners' sugar. Let the glaze sit at room temperature until it stiffens up a little but is still pourable, about 5 minutes. Pour and spread the brown butter over the bread. Let set. The bread can be stored at room temperature in an airtight container for up to 3 days.

- Place the bananas into a large plastic zipper bag, seal the bag, and smoosh the bananas with your fingers until very well mashed. Set the bananas aside. Place the brown sugar and butter into a mixing bowl, and mix on medium speed with an electric mixer until light and fluffy, 1 to 2 minutes. Cut a corner from the plastic bag, and squeeze the mashed bananas into the bowl of brown sugar mixture. With the electric mixer on medium speed, beat in the bananas, egg, cinnamon, vanilla extract, and milk until the mixture is well combined. - Melt butter in a small saucepan over medium heat; bring to a low simmer and cook, stirring frequently, until butter is browned, fragrant, and foamy, with brown bits in it, 5 to 10 minutes. - Preheat oven to 350 degrees F (175 degrees C). Generously grease a 9x5-inch loaf pan with 2 teaspoons butter. Mix 1 tablespoon of sugar with 1 teaspoon of cinnamon in a small bowl, and pour the mixture into the buttered pan. Swirl and tap the pan to distribute cinnamon-sugar all over the inside of the pan, up to the rim.
- In a bowl, whisk together flour, baking powder, salt, 1 teaspoon of cinnamon, and the nutmeg.
