Wonderful, traditional candied yams ... my way! Not for those counting calories and enough to feed a crowd!

Steps:
- Preheat the oven to 400 degrees F (200 degrees C). Spray 2 pieces of aluminum foil with cooking spray.
- Mash drained yams in a large bowl with a fork. Add ingredients in the following order, mixing well after each addition: brown sugar, cinnamon, cloves, allspice, and heavy cream. Pour mixture into two 8-inch square baking dishes. Sprinkle 1/2 of the marshmallows over each dish and cover with aluminum foil, spray-side down.
- Bake in the preheated oven for 20 minutes. Remove foil and bake for an additional 5 minutes.

MARSHMALLOW & CORNFLAKE SWEET POTATO CASSEROLE

Steps:
- Heat oven to 350 degrees F.
- In the bowl of an electric mixer, whip the sweet potatoes with 1/4 cup butter and eggs & egg yolk until smooth and creamy. Add the pineapple, if using, then transfer mixture into a 6 cup casserole dish.
- Stir together the corn flake crumbs with the remaining 2 tablespoons butter and brown sugar, Alternating in rows, spoon the corn flake crumbs across the top of casserole at a diagonal followed by a row of marshmallows.
- Repeat until you have 5 rows of the corn flakes and 4 rows of the marshmallows.
- Bake for 30 minutes until marshmallows have turned golden brown.
CANDIED YAMS AND MARSHMALLOWS
My honey kept asking for candied yams with the OJ and marshmallows. I couldn't find a recipe, so I made one up. I must say it came out mighty fine!

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Roast whole yams in preheated oven until heated through but not quite tender, 35 to 40 minutes. Allow to cool.
- Reduce oven heat to 350 degrees F (175 degrees C).
- Melt butter in a large pot over medium heat. Stir brown sugar, orange juice, and nutmeg with the melted butter to dissolve the sugar completely; bring to a boil, reduce heat to low, and cook until the liquid thickens into a syrup, 10 to 15 minutes.
- Peel cooled yams. Cut yams into bite-size chunks; arrange in a single layer in a 13x9-inch baking dish. Drizzle syrup over the yams.
- Bake in the preheated oven, twice opening the oven to spoon syrup over the yams, until the chunks are fork-tender, about 35 minutes. Arrange marshmallows over the yams and continue baking until the marshmallows are puffy and browned, about 10 minutes more.

- Heat oven to 350°F.
- In the bowl of a mixer, combine the Bruce's Yams, egg yolks and butter.
- When blended add cream, brown sugar and spices; transfer to a 1 quart (6" x 9") glass baking dish (or a 9" pie plate). Cover top of casserole with mini marshmallows and bake for 25-30 minutes until tops of marshmallows are light golden brown.
- *For a variation: Spread an 8 oz. (well drained) can of crushed pineapple on top of casserole before covering with mini marshmallows.

- Place Yams in a shallow baking dish. Combine syrup from can, sugar and butter in saucepan, stirring to boil to thicken. Pour sauce over Yams. Bake in 350° oven for 20 to 30 minutes, basting frequently. *Vary the above recipe with these taste-tempting garnishes: Sprinkle lightly with ground cinnamon and/or nutmeg. Place a few slices from a whole orange on Yams in dish and add 3 Tbls. Orange juice to liquid before basting. Place a small sprinkling of crushed pineapple on Yams in dish and add 3 Tbls. Pineapple juice to liquid before basting.
MARSHMALLOW YAMS
This is always on our holiday table, or requested when we're invited out. Servings are hard to determine because there is so much to eat during our holiday dinners.

Steps:
- Drain yams and pineapple (save the pineapple juice).
- In a pot, add pineapple juice, sugar, and '10' marshmallows.
- Put yams in a 9x13-inch casserole dish and pour mixture over top.
- Top with pineapple chunks.
- Put into a 300°F oven for 40 minutes.
- Top with remaining marshmallows (or amount you prefer).
- Put casserole back into oven for 10 minutes to soften and slightly melt marshmallows.
- Watch closely because marshmallows puff up quickly and may burn.
SWEET POTATO (YAM) CASSEROLE WITH MARSHMALLOWS
This is a compilation of a couple of different recipes I found on the web. My husband loves sweet potatoes with LOTS of marshmallows and wanted a casserole like one of his aunts used to make. After a few trials, this was the final incarnation. It is now a Thanksgiving staple for both his and my family's dinners.

- Spray 1 quart baking dish with Pam.
- Heat oven to 350 degrees.
- Mash yams in a large bowl and add brown sugar, salt, cinnamon, egg, and melted butter.
- Mix well.
- Place 1/2 mixture in baking dish.
- Top with a layer of marshmallows, then add remaining mixture.
- Bake for 30 minutes.
- Remove from oven and top with remaining marshmallows.
- Turn oven to broil and move casserole to the upper middle rack. Broil for approximately 5 minutes or until marshmallows are lightly browned.
