1/2 cup fresh basil, chopped
1/2-1 cup olive oil
3 -4 garlic cloves, minced
4 medium tomatoes, diced
1 lb brie cheese, cut in pieces

Steps:

  • Mix all ingredients together and let stand for 2 hours. Pour over hot pasta (angel hair, linguine, etc) and toss to coat. Enjoy!

The flavour combination of Brie, mushrooms and rosemary is amazing. This dish is a wonderful appetizer for a dinner party, or just served by itself as a little something. It is from 'Canada's Wine Country Cookbook' and pairs really well with a Dry Riesling (white wine)

Number Of Ingredients 8

1 garlic clove, crushed
1/2 cup olive oil
4 slices sourdough bread, 1/2 inch thick
12 ounces brie cheese, thinly sliced
1 1/2 cups mushrooms, sliced (button, oyster and or or shiitake)
2 tablespoons butter (or olive oil)
1 tablespoon fresh rosemary, finely chopped
salt and pepper

Steps:

  • Add garlic to olive oil, mix well.
  • Toast sourdough bread; brush one side with with olive oil (no need to use all oil).
  • Lay brie slices over toast.
  • Lightly saute mushrooms in butter, add rosemary, salt and pepper to taste.
  • Grill bruschetta slices until brie is soft and begins to run.
  • Place toast on plates and smother with mushrooms.
  • Serve immediately.

1 lb bow tie pasta
1/2 cup butter, softened but not runny
1 egg yolk
1/4 cup cream
1/2 lb brie cheese, cut into small cubes
salt
freshly ground black pepper
fresh parsley, chopped

Steps:

  • Cook the Pasta.
  • Meanwhile in a large stainless steel bowl, mix the Butter, Egg yolk, and Cream.
  • Remove the lid to the pasta pot and replace it with the bowl. (Double boiler)
  • CAREFUL OF THE STEAM!
  • USE A MITT TO HOLD THE BOWL WHILE STIRRING!
  • Slowly stir in the Brie 'til it melts.
  • Salt and Pepper to taste.
  • When the Pasta is done, drain it and stir it into the Brie mixture.
  • Garnish with chopped Parsley. Serve imediatly.
  • DO NOT TELL YOUR CARDIOLAGIST THAT YOU HAVE EVEN HEARD OF THIS RECIPE!

2 ounces fresh basil leaves, minced
8 ounces brie cheese, diced
1/2 cup olive oil
salt and pepper
2 loaves Italian bread
4 garlic cloves, peeled, left whole

Steps:

  • Topping:.
  • In medium bowl, mix tomatoes, Brie cheese and olive oil.
  • Season with salt and pepper.
  • Toasts:.
  • Cut bread into 1/4" slices.
  • Place in oven at 375 degrees F for 5 minutes or until golden.
  • Gently rub garlic clove over both sides of bread.
  • Spoon topping onto toasts and serve!
