BUBBA'S JAMBALAYA
A recipe that comes from another source that I lost a while ago. Glad that I had my handwritten notes for this one. This contains chicken, sausage, shrimp, and ham. I usually tend to just go with the chicken and shrimp and it's still really tasty. Add your favorite hot sauce to taste.

Steps:
- 1. Heat a large pot over medium-high heat. Add bacon, and cook until crisp. Remove bacon pieces with a slotted spoon, and set aside. Add celery, bell pepper, and onion to the bacon drippings, and cook until tender.
- 2. Add the ham, chicken and sausage to the pot, and pour in the tomatoes, beef broth and chicken broth. Season with thyme, hot sauce, cayenne pepper, and Cajun seasoning. Bring to a boil, and add the rice. Bring back to a boil, then turn the heat to low, cover, and simmer for about 20 minutes, until the rice is tender.
- 3. Stir in the shrimp and bacon just before serving, and heat through. If you use UNCOOKED shrimp, let it cook for about 5 minutes before serving.

Steps:
- Begin by heating an oiled Dutch oven over medium heat.
- In a large bowl, add the sausage, shrimp, and chicken pieces. Season them with the cajun seasoning. Set aside.
- In the Dutch oven, add the oil, then saute the onion, bell pepper, celery, and garlic briefly.
- Add the red pepper flakes, black pepper, salt, paprika, hot pepper sauce, and Worcestershire sauce. Continue sauteing.
- Add the seasoned chicken, shrimp, sausage, and rice into the pot. Continue sauteing until all are evenly coated.
- Add the chicken broth and crushed tomatoes. Stir to combine, cover, and bring to a boil.
- Bring down the heat to a simmer and continue simmering for roughly 25 minutes, until the rice is fully cooked through.
- Serve immediately, garnished with a lemon or lime wedge and sliced green onions.

- Combine all Poaching Liquid ingredients and then bring to a boil, then reduce to a medium simmer. Add shrimp, vegetables, corn, potatoes, and lemon wedges and cook until shrimp is completely done. Remove from poaching liquid, strain and place in stainless steel bowl. Add butter, Cajun spice, garlic and Liquid Smoke and toss together. Serve on large platter with extra lemon wedges.

BUBBA'S SHRIMP GUMBO
Steps:
- In a large heavy saucepan, over low heat, melt 1 cup of the butter. Add the flour, and cook on low heat until the roux is dark brown; about 30 to 45 minutes, stirring constantly.
- Add the onions, celery, peppers and garlic and saute until translucent.
- Mix in the okra and the remaining ingredients, including the remaining 1 tablespoon of butter, and simmer over medium-low heat until thick, about 1 hour. Before serving, remove the bay leaves. Transfer to a serving bowl and serve over white rice, if desired.
