Bubbly Beer Cheese Soup image

An easy, cheesy homemade beer soup. Great fall comfort food! The blending part might seem annoying, but it makes the soup velvety smooth. Serve with bread, sour cream, shredded Cheddar, and/or bacon bits.

1 quart chicken broth
3 pounds potatoes, peeled and chopped
3 cloves garlic, minced
1 quart milk
¼ cup soy sauce
1 teaspoon ground black pepper
¾ pound shredded Cheddar cheese
1 cup beer
1 pinch paprika, or to taste

Steps:

  • Combine chicken broth, potatoes, and garlic in a saucepan over medium heat; bring to a simmer and cook until potatoes are tender, about 30 minutes. Remove from heat and allow to cool for 5 minutes. Stir milk into the mixture, place over medium heat, and simmer until warm, about 5 minutes; add soy sauce and black pepper. Sprinkle Cheddar cheese into the soup in small batches while stirring, allowing each addition to melt into the soup before adding more.
  • Pour soup into a blender no more than half full. Cover and hold lid in place; pulse a few times before leaving on to blend. Puree in batches until smooth. Return blended soup to the saucepan; return to a simmer over medium heat.
  • Slowly stream beer into the soup while gently stirring. Garnish with paprika to serve.

8 tablespoons (1 stick) salted butter
1 to 1 1/2 large carrots, diced (about 3/4 cup)
3/4 cup small-diced piquillo peppers, or 1/2 large red bell pepper, diced
Fine sea salt and freshly ground black pepper
3/4 cup all-purpose flour
4 cups chicken stock, low-sodium store-bought or homemade
One 12-ounce bottle beer, preferably a mild-flavored blond or pale ale
1 1/2 cups half-and-half
12 ounces aged yellow cheddar (aged at least 2 years), grated
1/2 tablespoon Worcestershire sauce
Dash hot sauce
1/8 teaspoon grated nutmeg
2 tablespoons Dijon mustard
2 tablespoons fresh lemon juice
Mustard oil or extra-virgin olive oil, for garnish
Fresh goat cheese, for garnish
Fresh thyme leaves, for garnish

Steps:

  • In a large stockpot, melt the butter over medium heat. Add the carrots, peppers and 1/2 teaspoon salt and cook, stirring, until the vegetables are soft, about 5 minutes. Add the flour and cook, stirring, until well incorporated, about 5 minutes more.
  • Add the chicken stock, beer and half-and-half and cook, whisking often, at a very slow simmer over medium-low heat for 15 minutes.
  • Add the cheddar to the soup by the handful, whisking each batch until smooth. Add the Worcestershire, hot sauce, 1/2 teaspoon black pepper, the nutmeg, mustard and lemon juice, and stir to combine.
  • Puree the soup in batches in a blender (holding a thick towel over the lid to prevent overflow) until very smooth.
  • Just before serving, reheat the soup until steaming and taste for seasoning, adding salt as necessary. Ladle the soup into bowls and garnish each bowl with a swirl of mustard oil, a dollop of goat cheese and a sprinkle of thyme.

2 cans (10-3/4 ounces each) condensed cream of celery soup, undiluted
1 cup beer or nonalcoholic beer

1 teaspoon Worcestershire sauce
1/2 teaspoon dried parsley flakes
1/4 teaspoon paprika
3/4 pound process cheese (Velveeta), cubed

Steps:

  • In a large saucepan, saute onion in butter. Stir in the soup, beer, milk, Worcestershire sauce, parsley and paprika. Reduce heat; stir in cheese until melted. Heat through (do not boil).

This recipe is from Curly's Pub located in Lambeau Field, home of the Green Bay Packers. I love beer cheese soup. This stuff is so creamy and so easy to make with easy to find ingredients. If you have an immersion blender you can blitz this right in the pan. Otherwise you can take it to your blender. Top with some unbuttered popcorn. GO PACK GO!!! :) UPDATED: I checked the recipe and it did call for 6 cans of beer, but it cannot be right. I called Curly's Pub at the stadium and got the correction from them at 2 cans of beer. The recipe they had given out was for the larger amounts made for the restaurant. 6 Cans of beer makes a bit more sense then. LOL.

1/4 cup celery, diced
1 teaspoon garlic, minced

1/4 cup chicken base
2/3 cup heavy cream
1/4 cup cream cheese
1/4 cup sour cream
10 slices American cheese
1/3 cup cheddar cheese, shredded

Steps:

  • Sauté carrots, onion, celery and garlic in butter until tender. Whisk flour into sautéed vegetables and allow to cook for 1 minute while whisking constantly.
  • Add beer to vegetable/flour mixture and whisk until all the flour has dissolved into beer. Add water, chicken base and heavy cream. Bring to a light simmer. Turn down burner and allow to cool for 15 minutes.
  • Add cream cheese, sour cream and American cheese slices.
  • With a burr mixer, puree vegetables until there are no large pieces and the American cheese, cream cheese and sour cream are completely melted. Add remaining cheese using a whisk.
  • Season to taste with salt and pepper.
