2 lbs small red potatoes, with skin on
1/4 cup garlic, choppped
1 teaspoon dried oregano
1 teaspoon salt
1 cup pecorino romano cheese, grated
1/2 cup butter, semisoft and cut into pieces

Steps:

  • Wash potatoes and place in large pot.
  • Cover with cold water and bring to boil.
  • Reduce heat to low and cook until potatoes are tender.
  • Drain potatoes and place in large bowl.
  • Add remaining ingredients and whip with mixer until well blended.

This is from one of the cooking classes I took..it is so good and it is great served with there garlic mashed potatoes !!! You can also serve this over pasta which is also great.

1/2 cup olive oil
1 1/2 cups red onions, sliced thin
1 tablespoon garlic, chopped
1 tablespoon capers
1 1/2 lbs beef tenderloin steaks, cubed
3/4 cup white wine
1 (28 ounce) can plum tomatoes
1 tablespoon dried oregano
salt
pepper

Steps:

  • In a large saute pan medium heat, heat the olive oil, red onion, garlic and capers.
  • Saute until the onions are translucent.
  • Add beef and cook until brown.
  • Add wine and cook until reduced by half.
  • Break up tomatoes and add to pan with the oregano,salt and pepper.
  • cook for about 20 minutes.
  • reduce heat to low and keep warm.
  • Meanwhile, make the garlic mashed potatoes.
  • Cover the bottom of a large serving platter with the potatoes.
  • Spoon the sauce over the potatoes and enjoy !

I found this recipe a while ago when searching for a basic marinara sauce for my spaghetti. this tastes amazingly close to the sauce at buca di beppo. i hope you enjoy it as much as me and my family do!

1/4 c olive oil
1 red onion, chopped
6 garlic cloves, sliced
2 can(s) crushed tomatoes (preferably san marzano)
salt
6 fresh basil leaves, sliced

Steps:

  • 1. heat the olive oil in a large saucepan.
  • 2. add onion and garlic to the saucepan. cook 8-10 minutes, or until golden brown.
  • 3. add tomatoes and salt.
  • 4. bring to a bubble, cover, lower the heat to a simmer, and cook for 30 minutes.
  • 5. remove from heat and add the fresh basil. enjoy!
