These are like little peanut butter and chocolate balls. You basically mix it all up together. It is a perfect recipe to do at a sleepover or for parties. It is pretty simple and it really doesn't take too long. It takes about as long as chocolate chip cookies do, maybe a little longer, but if you love chocolate and peanut butter, you'll love this.

1 ½ cups creamy peanut butter
½ cup butter, softened
1 teaspoon vanilla extract
2 ½ cups semisweet chocolate chips
2 tablespoons shortening
4 cups confectioners' sugar

Steps:

  • You'll need wax paper, a double boiler, a cookie pan, and a medium bowl. In the medium size bowl, mix peanut butter, butter, vanilla, and confectioners' sugar (mixture will be stiff).
  • Shape into balls and place on a pan covered with wax paper. Place into the refrigerator.
  • In double boiler, melt chocolate and shortening. Pour into bowl and dip balls with chocolate. Refrigerate for thirty minutes until chocolate is firm.

1 pouch (17.5 oz) Betty Crocker™ double chocolate chunk cookie mix
Butter, water and egg called for on cookie mix package
1/2 cup creamy peanut butter
1/4 cup powdered sugar
1/2 teaspoon vanilla
3/4 cup semisweet chocolate chips
1/4 cup heavy whipping cream

Steps:

  • Heat oven to 375°F.
  • In large bowl, stir cookie mix, butter, water and egg until soft dough forms.
  • Drop dough by slightly rounded tablespoons 2 inches apart on ungreased cookie sheet. Bake 8 to 10 minutes or until edges are set. Cool 1 minute; remove from cookie sheet to cooling rack. Cool completely, about 20 minutes.
  • Meanwhile, in small bowl, mix peanut butter, powdered sugar and vanilla until well blended. Spread about 1 teaspoon mixture on top center of each cookie.
  • In small microwavable bowl, microwave chocolate chips and cream uncovered on High 30 to 45 seconds; stir until smooth. Spoon generous teaspoonful on each cookie; spread gently over peanut butter layer. Allow chocolate to set until firm, about 1 hour. Store covered in refrigerator.

All you need is a box of cake mix, a few common pantry ingredients, and voila-you have a tasty dessert ready for family and friends in under an hour. 2 large eggs, room temperature
1/2 cup canola oil
1 cup semisweet chocolate chips
1 cup creamy peanut butter

Steps:

  • Preheat oven to 350°. In a large bowl, combine cake mix, eggs and oil until blended. Stir in chocolate chips. Press half the dough into a 10-in. cast-iron or other ovenproof skillet. Combine peanut butter and confectioners' sugar; spread over dough in skillet. Press remaining dough between sheets of parchment into a 10-in. circle; place over filling., Bake until a toothpick inserted in center comes out with moist crumbs, 20-25 minutes.   • Make the peanut butter filling. Stir together the peanut butter and powdered sugar until smooth. Use a small cookie scoop to scoop out the filling onto a plate or cookie sheet lined with wax paper. You should be able to make about 20-22 balls. Place in freezer for about 30 minutes.
  • While the peanut butter balls are freezing, you can make the cookie dough. Cream the butter and sugars together with an electric mixer for about 2-3 minutes. Add the egg and vanilla and continue to mix for 1-2 more minutes. Add the flour, cocoa powder, baking soda and salt and continue to mix until smooth.
  • Scoop out a heaping tablespoonful of cookie dough (I used a medium cookie scoop or you can just overfill a small one) and flatten it out between your hands like a pancake. Place a frozen peanut butter ball on top and then fold up the edges of the cookie until the peanut butter ball is completely covered. If it doesn't look like a ball at this point, roll it between your palms to form a ball. (Unless you have a couple of people making these, you'll want to keep at least half of the peanut butter balls in the freezer when you first begin, and then work quickly so that the peanut butter doesn't start thawing as you are assembling the cookies- the process gets a lot messier once it starts to thaw out!)
