Steps:
- Preheat oven to 425 degrees F.
- In a large mixing bowl, combine chicken, hot sauce, cheese, chives and ranch. Roll into golf ball-sized balls. Chill in fridge as you set up dredging station.
- Grab three shallow bowls, filling one with flour, one with the beaten eggs, and the third with panko and pepper (mixing the two ingredients to combine). Dip each buffalo chicken ball in flour, then the eggs, then the panko mixture. Set the balls about 1" apart on an aluminum foil-lined baking sheet. Spritz buffalo chicken balls with cooking spray.
- Bake 7 minutes, flip balls and respray with cooking spray. Bake 7 minutes more. Serve with ranch dressing for dipping.
BUFFALO CHICKEN BITES (BONELESS BUFFALO WINGS)
These boneless buffalo chicken bites are perfection. Lightly battered and pan-seared, they're crispy on the outside with a moist and tender interior, then tossed in my mom's signature buffalo sauce.

- Combine the cornstarch, salt, onion powder, garlic powder, pepper, and paprika in a large mixing bowl. Whisk until thoroughly combined.
- Add the chicken to the cornstarch mixture; toss until evenly coated.
- Heat a 12" non-stick skillet over medium high heat. Add 1 tbsp olive oil and heat until it shimmers. Add half the battered chicken to the skillet in a single layer. Sautee 5 minutes until the breading is lightly golden brown, flip the pieces, and sautee 5 minutes on the other side. Remove the chicken using a slotted spoon and transfer to a plate. Repeat with the remaining chicken pieces, adding additional olive oil as needed.
- Add the butter to the skillet and melt, scraping up browned bits as it cooks. Add the buffalo sauces to the melted butter and whisk until combined.
- Add the cooked chicken to the buffalo sauce. Toss to coat all pieces in sauce, then cook an addition 3-5 minutes until the chicken is cooked through and the sauce slightly thickens. Serve immediately with blue cheese or ranch dipping sauce and sliced carrots and celery.

- Heat oven to 375°F. Spray 24 mini muffin cups with cooking spray.
- In medium bowl, mix chicken, cream cheese, 1 cup of the Mexican cheese and the Buffalo wing sauce until well blended.
- Place 1 wonton skin in each muffin cup. Spoon chicken mixture evenly into cups.

- Preheat oven to 350 degrees F (175 degrees C).
- Mix cream cheese, hot sauce, ranch dressing, onion, garlic powder, and onion powder together in a bowl; fold in chicken.
- Roll crescent roll dough onto a work surface, pressing dough into a thin layer without tearing. Cut 3-inch pieces out of dough using a biscuit cutter. - Trim chicken of any fat. Cut into 1-inch, nugget sized pieces.
- In a small bowl, add hot sauce and egg. Whisk to combine. Place all the chicken pieces into the egg/hot sauce mixture and stir to make sure all is coated. This may be refrigerated for up to 24 hours in advance to make the flavoring more intense if desired.
- In a separate bowl mix together the flour, bread crumbs, Italian seasonings, salt, garlic powder, pepper, and cayenne.
- Take the chicken pieces out of the hot sauce and egg mixture. Roll chicken pieces in breadcrumb mixture until well coated.
- Heat about 2 inches of cooking oil over medium-high heat to 350 degrees Fahrenheit.
- Working in small batches, place the coated chicken into the oil and fry them for 3-5 minutes, or until they are more golden in color, with an internal temperature of 165 degrees Fahrenheit.
- Remove from oil and set on a paper towel lined baking sheet or plate.
- Once cooled a bit, enjoy!

BUFFALO CHICKEN BITES
Steps:
- Preheat oven to 325 degrees F.
- Line a medium tray with foil and lay out the 30 phyllo shells.
- In a microwave safe bowl, add buffalo chicken, cream cheese, mozzarella cheese and drained tomatoes.
- Place in the microwave for 30 seconds on high to soften the cream cheese and heat the filling. Microwave longer if needed.
- Using two small spoons, divide the filling between the 30 cups. It's fine to mound the filling in the cups.
- Bake for 15 minutes.
- Remove the pan and sprinkle on the bleu cheese over each one and serve immediately with optional celery sticks.
