This is a simple one dish meal that's been in my family for years - corn chips, vegetables, beans and cheese all piled up to make a delicious haystack! Kids love it!

Steps:
- In a medium saucepan, combine the kidney beans, salt, chili powder and pepper. Cook over medium heat until heated through.
- To assemble the haystacks put a hand full of corn chips on a plate, follow with a spoonful of heated bean mixture, lettuce, tomato, green pepper, onions, olives, carrot, and cheddar cheese. Top with salsa and sour cream.

- In a saucepan bring sugar, cocoa, milk and butter or margarine to a boil. Remove from heat.
- Stir in oats, coconut, nuts and salt. Drop quickly from teaspoon on wax paper. Let cool.

HAYSTACKS
I have made these cookies for my family for about 30 years now. My son (who is now 36 years old) gets so excited when I make these; he always enjoys them with a tall glass of milk. I find that I have to be careful when melting the butterscotch because it seems to scorch easily, so take care - this is an essential ingredient! Also, these are best enjoyed in the winter because they seem to melt and not taste as great in the warmer weather.

- Melt the butterscotch chips in a double boiler over simmering water.
- In a medium bowl, combine the melted butterscotch and peanut butter. Add noodles and peanuts and mix well. Drop the batter by the heaped tablespoon onto waxed paper and refrigerate until cool and set, about 20 minutes.

- In a skillet, cook beef with onion until the beef is browned and the onion is tender; drain. Stir in tomato soup, chili powder, oregano, cumin, garlic powder, salt and pepper; simmer until heated through., For cheese sauce, melt butter in a saucepan. Add flour; cook and stir until a smooth paste forms. Gradually add milk; cook and stir until thickened. Stir in cheese soup. Add cheese; cook only until it melts. , To serve, prepare individual corn chip "nests"; layer each with meat mixture, rice and lettuce. Top with cheese sauce, and picante sauce if desired.

When I was in high school the cafeteria employees would make these and I would buy them all the time. One day I asked one of the employees if they would mind giving me the recipe since I ate them so much and would love to save my money. :) She was kind enough to give me the recipe, and to this day my family and friends cannot get enough of them. - In a non-metallic bowl, combine 1- 12 ounce bag of Nestle' semisweet chocolate chips and 1- 12 ounce bag of Nestle' butterscotch chips.
- Stir the chips together and microwave on a medium temperature, stopping to mix the chips as they melt together.
- When completely melted and mixed, add 1 can La Choy Chinese noodles and 1 can Spanish peanuts.
- Stir together until mixed.
- Drop spoonfuls of mixture onto a foiled cookie sheet.
- Let harden.

- Cook rice as directed on package, use regular rice if wanted also.
- In a medium saucepan add cream of chicken soup and sour cream, mix well.
- Add cubed chicken and heat until bubbly, can add a dash of salt and pepper to add extra flavor.
- Portion out rice into four bowls.
- I let my family make there own after this depending on their tastes.
- Scoop chicken mixture over rice, add cheese, chow mein noodles, peas, pineapple, tomato and sprinkle with coconut.
- Mix well and enjoy!
