GARAM MASALA SPICED NUTS



Garam Masala Spiced Nuts image

Just go nuts!!! Adapted from one by Tara Mataraza Desmond, co-author of Almost Meatless. The pecans are especially good.

Number Of Ingredients 6

1 medium egg white
3 tablespoons sugar
1 1/2 teaspoons garam masala (store-bought or homemade)
1 cup roasted salted cashews
1 cup dry roasted salted peanut
1 cup toasted pecan halves

Steps:

  • Preheat oven to 300 degrees. Line a baking sheet with parchment paper or a silicone baking mat.
  • Whisk together the egg white and 1 teaspoon water until a sturdy froth forms. Stir in the sugar, garam masala and nuts. Mix everything together to coat the nuts well.
  • Spread the nuts on the baking sheet. Transfer to the oven and bake until crispy and golden, stirring occasionally, about 30 minutes.
  • Remove from the oven, let cool completely, and break apart into pieces to serve.
  • Store in an airtight container.

I have made a very similar recipe to this for Christmas one year and everyone loved them. They were so quick and easy to make. I am posting for ZWT9 Caribbean Leg.

350 g mixed nuts
1 free-range egg white
50 g caster sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
8 cardamom pods, seeds removed and crushed

Steps:

  • Preheat the oven to 200°C/fan180°C/gas 6. In a small bowl, mix the nuts with the egg white.
  • Mix together the sugar and spices, and then scatter over the nuts. Mix together well and spread out on a baking sheet. Bake for 10 minutes.
  • Set aside to cool completely, then serve in bowls.

1 egg white
2 tablespoons cold water
⅔ cup walnut halves
⅔ cup pecan halves
⅔ cup whole almonds
½ cup sugar
1 ½ teaspoons cinnamon
¼ teaspoon ginger
¼ teaspoon nutmeg

Steps:

  • Beat egg white and water until frothy. Stir nuts into mixture to coat, then drain slightly in a colander, 3-4 minutes. Mix sugar and spices in a plastic bag. Add nuts and shake to coat. Spread wet nut mixture in a single layer on a microwave-safe plate; microwave on high for 1 1/2 minutes, or until mixture is bubbly. Stir.
  • Microwave another 1 1/2 minutes. Remove; stir to separate. Cool. Store in a sealed container.

BAHARAT:
2 tablespoons whole peppercorns
2 tablespoons whole allspice
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
SPICED NUTS:
1/4 cup honey
4 cups lightly salted mixed nuts (1-1/4 pounds)
1/4 cup sugar

Steps:

  • In a spice grinder or with a mortar and pestle, combine peppercorns and allspice; grind until mixture becomes a fine powder. Add cinnamon and nutmeg; grind until blended. Store in an airtight container for up to 6 months., For spiced nuts, in a 2-qt. microwave-safe dish, microwave honey for 30-45 seconds or until bubbly. Stir in nuts. Transfer to a foil-lined 15x10x1-in. baking pan. Bake at 325° for 10 minutes, stirring once. Cool for 5 minutes., In a small bowl, combine sugar and 1 tablespoon Baharat spice mix. Sprinkle over nuts and toss to coat.
