BACON FAT BASTED STEAK
The next time you're cooking bacon, whatever you do, don't toss the fat! Instead, let it cool down in the pan, then strain it through a coffee filter into an airtight container. Stash it in the refrigerator and use a few tablespoons to baste steak on the stovetop to impart richness and a subtle bacon-y flavor.

- Remove the steak from the refrigerator 30 minutes before cooking.
- Heat a large heavy-bottomed skillet over medium-high heat. Pat the steak dry and season generously with kosher salt and pepper on all sides. Stand the steak up on the strip of fat in the skillet and hold it with tongs until the fat renders and the skillet is slick, about 2 minutes.
- Place the steak flat in the skillet and sear until deep brown on one side, 4 to 5 minutes. Turn and cook the other side until starting to brown, 2 to 3 more minutes. Reduce the heat to low. Add the rosemary and garlic to the skillet and spoon the bacon fat over the steak. Continue cooking, tilting the skillet every so often and spooning the bacon fat up over the top of the steak, until a thermometer inserted sideways into the thickest part registers 120 degrees F for medium rare, about 1 minute.
- Transfer to a cutting board and let rest 10 minutes. Slice the steak against the grain. To serve, spoon the rosemary-infused bacon fat over the slices and sprinkle with flaky salt.
BUTTER-BASTED FLAT IRON STEAK WITH TOMATO BUTTER SAUCE AND PARSLEY NOODLES

- Bring a large pot of salted water to a boil.
- Heat a large cast-iron skillet over medium-high heat. When it?s hot, add the oil. Sprinkle the steaks with salt and pepper and cook 2 steaks until browned on one side, about 4 minutes. Remove the steaks from the skillet. Add the 2 remaining steaks and cook until browned on one side, about 4 minutes. Flip these steaks and return the first 2 steaks to the skillet, raw-side down. Add 2 tablespoons of the butter and the thyme. Once the butter melts, tilt the skillet slightly to pool the liquid, then constantly spoon the butter over the steaks until the meat is medium-rare, about 4 minutes more. Transfer the steaks to a rimmed plate to rest, reserving the skillet.
- Add the pasta to the boiling water and cook according to package directions. Reserve 1/4 cup of the cooking water and drain the pasta. Return the pasta to the pot and toss with 2 tablespoons of the butter and the parsley.
- Put the tomatoes in the same skillet used to cook the steaks and cook over medium heat until blackened in spots and softened, about 4 minutes. When the tomatoes are very soft, remove the thyme sprigs and carefully mash the tomatoes with a slotted spoon or potato masher. Stir in the remaining 2 tablespoons butter and the vinegar until incorporated, adding up to 1/4 cup pasta cooking water if necessary to make a smooth sauce. Season with 1/2 teaspoon salt.
- Slice the steaks thinly against the grain and add any juices that accumulate to the tomato butter sauce. Divide the sliced steak among 4 plates and spoon some tomato butter sauce over the top. Serve with the noodles.

- Set steak at room temperature and pat dry with paper towels. Sprinkle both sides with kosher salt and let sit for 15-30 minutes. When ready to cook, heat a 12-inch cast iron pan on the stove top to medium/medium-high heat. Add olive oil and tilt pan so oil covers surface. It should be hot and shimmery.
- Blot steak once again on both sides with paper towels and then sprinkle liberally with black pepper, and lightly with a little more kosher salt.
- Place steak in pan and sear for about 2 minutes, then flip and sear other side. After flipping the first time, add the butter to the pan and add in the rosemary and garlic. Reduce heat to medium, or medium low if necessary (butter should still sizzle and foam, but not burn). Use a spoon to spoon up butter and ladle over steak (carefully use a potholder or towel to handle pan, tipping if necessary to spoon butter). Continue basting in butter, flipping occasionally so you are basting both sides, until steak reaches an internal temperature of 130-135 for rare, 135-140 for medium rare. We recommend you do not cook past 150 degrees. Remove steak from pan and place on cutting board, tented with foil. Let rest 5 minutes and then serve with pan sauce spooned over the top.
