2 tablespoons unsalted butter, softened
1-1/2 cups sugar, divided
3 large eggs, room temperature
4 cups all-purpose flour
1 tablespoon baking powder
3 teaspoons ground cinnamon, divided
1/2 teaspoon salt
1/8 teaspoon ground nutmeg
3/4 cup 2% milk
Oil for deep-fat frying

Steps:

  • In a large bowl, beat butter and 1 cup sugar until crumbly, about 2 minutes. Add eggs, 1 at a time, beating well after each addition., Combine the flour, baking powder, 1 teaspoon cinnamon, salt and nutmeg; add to butter mixture alternately with milk, beating well after each addition. Cover and refrigerate for 2 hours. , Turn onto a heavily floured surface; pat dough to 1/4-in. thickness. Cut with a floured 2-1/2-in. doughnut cutter. In an electric skillet or deep fryer, heat oil to 375°., Fry doughnuts, a few at a time, until golden brown on both sides. Drain on paper towels. , Combine remaining sugar and cinnamon; roll warm doughnuts in mixture. Freeze option: Wrap doughnuts in foil and transfer to a resealable freezer container. May be frozen for up to 3 months. To use, remove foil. Thaw at room temperature. Warm if desired. Combine 1/2 cup sugar and 2 teaspoons cinnamon; roll warm doughnuts in mixture.

Steps:

  • In deep fryer or 3-quart saucepan, heat 3 to 4 inches oil to 375°F.
  • In large bowl, beat 1 1/2 cups of the flour and the remaining ingredients except Rainbow Doughnut Icing with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on medium speed 2 minutes, scraping bowl occasionally. Stir in remaining flour.
  • On generously floured surface, roll dough lightly to coat. Gently roll to 3/8-inch thickness. Cut dough with floured 2 1/2-inch doughnut cutter.
  • Fry doughnuts in oil, 2 to 3 at a time, turning as they rise to the surface. Fry 2 to 3 minutes or until golden brown on both sides. Remove from oil with slotted spoon; drain on paper towels. Cool slightly and frost with doughnut icing.

1 cup unsalted butter, softened
4 large eggs, at room temperature
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350°F. Coat a 12- to 15-cup Bundt pan with baking spray.
  • Beat granulated sugar and butter with a stand mixer fitted with a paddle attachment on medium-high speed until pale and fluffy, 2 to 3 minutes, stopping to scrape down sides of bowl as needed. Add eggs 1 at a time, beating until just combined after each addition. Add vanilla, beating until just combined.
  • Whisk together flour, baking powder, salt, nutmeg, and baking soda in a medium bowl. With mixer on low speed, gradually add flour mixture to butter mixture alternately with buttermilk, beginning and ending with flour mixture, beating until just combined after each addition. Spoon batter into prepared pan; gently tap on counter 3 to 5 times to release air bubbles.
  • Bake in preheated oven until a wooden pick inserted in center of cake comes out clean, about 50 minutes. Let cool in pan on a wire rack 15 minutes. Invert cake out of pan onto a cutting board or platter, then gently flip cake back over so rough side is facing up. Let cool on wire rack completely, about 1 hour.

Steps:

  • Make the doughnuts: Heat 4 cups/960 milliliters of oil in a large heavy bottomed pot (preferably wider than taller) over medium heat to 375 degrees.
  • In a large bowl, whisk together flour, sugar, baking powder, kosher salt and nutmeg.
  • In a medium bowl, whisk together sour cream, buttermilk, egg, egg yolk and 3 tablespoons oil. Add the wet ingredients to the dry, using a wooden spoon to gently mix just until a dough comes together (you want to keep it rather shaggy; do not overwork the dough).

The scraps of dough can be gathered and gently pressed again two more times to cut the rest of the doughnuts, continuing to flour your work surface as needed.
  • Working in batches, gently lower doughnuts into the oil (no more than 4 or 5 at a time). Fry on one side until deeply golden brown, about 2 minutes. Flip with tongs or a skimmer and continue to fry until golden brown and cooked through, another 2 minutes.

  • To make the vanilla glaze: In a medium bowl, whisk together powdered sugar, buttermilk, vanilla extract and salt until no lumps remain. Add additional buttermilk if necessary, 1 tablespoon at a time, to thin the glaze.
  • Remove paper towel from wire rack. Dip each doughnut into the glaze on one side, letting excess drip back into the bowl, and return it to the wire rack. Sprinkle immediately with sprinkles, chopped nuts or toasted coconut.
  • To make the chocolate glaze: In a medium bowl, whisk together powdered sugar, cocoa powder, buttermilk and salt until no lumps remain. Add additional buttermilk if necessary, 1 tablespoon at a time, to thin the glaze.

1 1/2 cup granulated sugar
1 cup butter; salted
4 large whole eggs; at room temperature
2 1/2 tsp. vanilla extract
3 1/2 cups all-purpose flour
2 tsp. baking powder
3/4 tsp. baking soda
1 tsp. ground nutmeg
1 cup whole buttermilk
2 cups powdered sugar
3-4 Tbsp. heavy whipping cream

Steps:

  • Preheat the oven to 350 deggress F. With a stand or hand mixer, beat sugar and butter on medium-high speed until combined and fluffy- about 3 minutes. Be sure to stop in between to scrape down the sides of the bowl.
  • Add eggs in one at a time, stiring in between each egg. Add in vanilla extract and beat until combined.
  • In a medium bowl, whisk together flour, baking powder, baking soda, and nutmeg. Gradually add 1/2 cup of flour mixture at a time to the butter mixture alternating with 1/4 cup of buttermilk at a time. Beat together on low speed until each increment is combined.
  • Grease a bundt pan liberally with butter or nonstick baking spray. Spoon the cake batter into prepared bundt pan and be sure to firmly tap the bundt pan on the counter 4-6 times to release any air bubbles.
  • Bake the cake for 50-55 minutes depending on your oven. To check to see if the cake is fully cooked, insert a toothpick in the center of the cake. If it comes out clean, the cake is fully cooked. Let the cake cool in pan on a wire rack for 10 minutes.
  • While the cake is still cooling, carefully and gently invert cake out of pan on a serving platter. Sine the cake is still warm, some of the icing will absorb into the cake.
  • Line foil pieces around the cake by gently lifing the outter perimeter of the bundt cake to insert foil underneath- the foil only needs to be touching the edge. I use about four 5-6 inch pieces of foil to go around the whole cake. This will catch any excess glaze that drips off the cake.
  • Whisk together powdered sugar and heavy cream until smooth. Add more powdered sugar if the glaze is too watery. Drizzle the glaze over the cake and let sit to set for 15-20 minutes. Remove the foil and enjoy!

3 1/2 c all-purpose flour
3/4 c granulated sugar
1/2 tsp baking soda
2 tsp baking powder

1/4 c sour cream

VANILLA GLAZE
2 c powdered sugar

CHOCOLATE GLAZE

  • 1. MAKE THE TOPPINGS: Vanilla Glaze: In a medium bowl, whisk all ingredients until smooth.
  • 2. Chocolate Glaze: Heat the cream and butter until hot. Pour over the chocolate and allow to melt 1 minute. Whisk until smooth. Keep warm.
  • 3. Cinnamon Sugar: Whisk together the sugar and cinnamon until evenly blended. You can also use powdered sugar!
  • 4. MAKE THE DOUGH: In a large bowl, whisk together the flour, sugar, baking soda, baking powder, salt, nutmeg, and cinnamon.
  • 5. In a medium bowl, whisk the eggs, buttermilk, sour cream and the melted, cooled butter until combined.
  • 6. Combine the dry ingredients into the wet, and stir well to form a sticky dough.
  • 7. Line one baking sheet with parchment paper and another baking sheet with two layers of paper towels. Turn the dough out onto a work surface (I use waxed paper) dusted with plenty of flour. Sprinkle the top of the dough with flour and pat it out until it is about ½-inch thick. Use two round cutters about 3" and 1". Dip the cutters in flour each time and cut out as many doughnuts as you can. Gently move the cut doughnuts (and holes) to the parchment lined flour-dusted baking sheet. Press the dough scraps back together and keep cutting until all dough is used.
  • 8. Heat 1 1/2-2" of oil in a large pot or deep skillet to 350. Fry a few doughnuts at a time (depending on your pan) for 3-5 minutes, flipping when golden brown on the first side. Remove to the paper towel lined baking sheet to drain while you finish frying the rest.
  • 9. Dip or roll in the topping of your choice.

  • Next, add the buttermilk, eggs and butter. Beat the mixture until it’s just combined. You don’t want to overbeat or your donuts could become tough and chewy.
  • Now that the batter is ready, fill each donut cup about 2/3 of the way full. The easiest and most efficient way to fill the cups is with a piping bag.
