- Dissolve yeast in warm water until foamy. In a large bowl, combine 1 cup buttermilk, 1/2 cup butter, egg, sugar, salt and yeast mixture, then add 3 cups flour; beat on medium speed until smooth, 1 minute. Add remaining flour, 1/4 cup at a time, to form a soft dough., Turn dough onto a lightly floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch down dough. Turn onto a lightly floured surface; divide and shape into 20 balls. Place in a greased 13x9-in. pan. Cover with a kitchen towel; let rise in a warm place until almost doubled, about 45 minutes., Preheat oven to 350°. Brush rolls lightly with remaining buttermilk and butter. Bake until golden brown, 20-25 minutes. Cool in pan 20 minutes. Remove to a wire rack; serve warm.

Steps:
- Bring sourdough starter to room temperature.
- Heat water to 120 degrees F (49 degrees C) to 130 degrees F (54 degrees C) in a saucepan. Transfer to a glass bowl; add yeast. Cover with plastic wrap; let stand about 10 minutes.
- Stir melted butter and sugar together in a bowl. Add butter mixture to yeast water; stir in starter.
- Combine 3 cups flour and salt in a large bowl. Add starter mixture slowly; mix well. Stir in 2 cups flour; turn dough out onto a lightly floured surface.
- Knead in as much remaining flour as possible to create a stiff, smooth ball, at least 10 minutes. Transfer ball to a lightly oiled bowl; cover with plastic wrap. Let rise until doubled, 45 minutes to 2 hours.
- Punch dough down; turn out onto a floured surface. Divide into 14 balls; cover and let rise for 30 minutes.
- Preheat oven to 375 degrees F (190 degrees C). Sprinkle cornmeal onto a baking sheet; place dough balls on top.
- Place baking sheet into the preheated oven. Spray the walls of the oven with water once to create steam; bake until tops are golden, for a total of 20 to 25 minutes. Cool on a wire rack.

BUTTERMILK SOURDOUGH ROLLS
I love the flavor of buttermilk and sourdough in breads and biscuits. These are yeast-risen but can be made with sourdough alone. Longer fermentation times are needed for that. Rising times are included in the preparation times.

Steps:
- Refresh the sourdough starter the night before.
- Mix the buttermilk, butter, yeast and starter until blended uniformly.
- Add flour and salt and mix thoroughly, cover and let rest for 20 minutes.
- Knead for 3 to 4 minutes and stretch and fold the dough, letter style, top to bottom and side to side.
- Place in a straight sided clear container and let rise for 15 minutes.
- Stretch and fold the dough and replace in the container to rise until double in volume.
- Divide into 16 uniform pieces weighing 55 g each and shape into balls.
- Place on parchment paper and cover with oiled plastic.
- Let rise until 1 1/2 times it's original volume (I place one roll in a small straight sided glass to judge the rise).
- Apply an egg wash (1 egg white or egg and 1 tablespoon of water well mixed) and place in a 375F oven near the top of the oven.
- Bake for 8 min and rotate pan 180 degrees. Bake 8 more minutes until internal temperature is 205°F.
SOURDOUGH CINNAMON ROLLS

Steps:
- Mix 3 cups all-purpose flour, buttermilk, sourdough starter, 2 tablespoons cubed butter, and white sugar in a glass bowl. Cover and set in a warm area until double in size, 8 to 12 hours.
- Preheat the oven to 350 degrees F (175 degrees C).
- Combine baking powder, salt, and baking soda in a small bowl. Add to flour mixture.
- Knead dough until it is soft but no longer sticky, adding flour as needed. Roll dough with floured rolling pin until it is 1/4 to 1/2-inch thick.
- Combine 6 tablespoons melted butter, brown sugar, and cinnamon until it has the consistency of a paste. Spread sugar paste evenly on rolled dough.
- Roll up dough into a cylinder shape. Cut dough into 1/2-inch pieces using dental floss or a serrated knife. Arrange rolls into a cast iron skillet.
- Bake cinnamon rolls in the preheated oven until golden brown, 20 to 30 minutes.

- Combine the flour, brown sugar, buttermilk, and starter in a large mixing bowl by mixing until a sticky dough is formed. Cover with a clean tea towel and allow to rest on the counter about 30 minutes.
- Add the salt and knead by hand, either on the counter or right in the bowl, abbout five minutes, until the salt is thoroughly incorporated and the dough begins to smooth out. It will still be relatively sticky and shaggy.
- Cover with a damp towel and allow to rise in a warm place for 4 hours, or until doubled in size. - Mix together the buttermilk, sourdough starter, butter, egg, salt and white sugar in the bowl of a stand mixer and mix until combined. If you don’t have a stand mixer, mix vigorously with a wooden spoon.
- Add in the flour slowly, 1/2 cup at a time and mix until the dough is no longer sticky. Combine each 1/2 cup with the other ingredients well before adding more flour – too much flour will make these dense.
- Once all the flour is added, let it knead with a dough hook attachment for about 10 minutes, or until the dough is soft, smooth and elastic. Alternatively, you can hand kneed it.
- Place in a butter bowl and let rise in a warm spot until about doubled – or around 12 hours. If you are in a hurry, you can use an Instant Pot (see instructions above for Instant Pot rising).
